It’s getting close to Easter, so let’s make a Coconut Bunny Cake!

Key Ingredients

Box cake mix: White or vanilla cake mix is my favorite to use but you can use any of your favorites such as chocolate, Funfetti, carrot cake, strawberry, or bake your own cake from scratch using your favorite recipe.

Frosting: We use canned frosting to make it easy but you can make your own from scratch. Make sure the frosting is softened at room temperature so it’s easy to spread onto the cake.

Shredded coconut: Used on the bunny’s face and green grass that surrounds the bunny.

Jelly beans: We use 2 black jelly beans for the eyes, 1 black jelly bean for the nose, 24 pink jelly beans for the bunny ears, and you can also use jelly beans to decorate the bunny’s bow-tie.

Bake according to the box cake mix using 2 8” round cake pans.  Cool.  Then freeze for about 30 minutes to make frosting easier.  Cut the 1 round cake as shown in the diagram below.  Then frost as desired!

If you’re not fond of coconut or just want a healthier version…you can use strawberries and blueberries!

        we have some sun, but lots of clouds too. Hubby says we may hit 60* today!

        I never saw the strawberry one either! Every year my daughter and her family come up for Easter and my granddaughter and i bake something for Easter. We’ve made this cake, a bunny butt cake, and Easter basket cakes and a lamb recently. Mostly i bake and she decorates and then I clean up. lol
        do you play harmonica or are you going to learn together?

        1. My grandma always used to bake the coconut Lamb cake for my father on Easter 😊 How old is your granddaughter?

          I used to play “with” a harmonica when I was a kid. I ordered 2 harmonicas. (cuz kids, spit, germs. lol) Found I really enjoyed trying to play it! GS (2yrs old) loves it, and copies me. So we’ll go with it as long as he enjoys it. 🥰

            every year we do a project…last year she painted clay flowerpots which i glued together and glued a solar light on top. like this one…

            only I have mine in a shallow terra cotta dish filled with blue glass pebbles. I put it out on the deck in the summmer.

                one year I bought a plastic butterfly mold and a small bag of colored stones. the rest of the stones we used we picked up from the driveway. Hubby mixed us some cement and we made butterfly stepping stones for around the pond. (forgot to bring them in, in the winter, and the deer stepped on them and some cracked…lol
                they are now under the deck…lol)

    2. Good morning, Pat! 55 here this morning (which, according to the forecast, is as high as it will get today), windy, and hazy skies. Calling for a high of 49 tomorrow, 65 on Saturday, and 80 on Sunday. Crazy times!!! Still no Wheezer – shacked up with his current sweetie, no doubt! Piper, Liv and I had a wonderful time. But I sure wish she would lose some weight – she’s heading down the same road as her Mom, which scares the crap out of me. Granted, she is much taller – she got that from her Dad – and he tends to the heavy side as well. Still……it worries me.

        hubby says warmer for us today and then 30* tomorrow…sick weather!
        It’s a delicate place to be–on one hand you want your relationship to stay on track so you might not say something. but on the other hand, you might be able to talk to her and explain where your advice is coming from but you still risk her taking offense.

    The “present” US President Donald Trump said Iran had given Washington was allowing several fuel tankers to pass safely through the Strait of Hormuz, The Times of Israel reported, citing a senior Arab diplomat and a US official.

    Trump said on Tuesday that Iran had given the United States a “present” worth a “tremendous amount of money,” without providing details, but described it as related to oil and gas and the strategic waterway.

    The report cited an unnamed US official as saying that when Washington began passing along messages to Iran through mediators over the weekend in order to test whether a diplomatic off-ramp to the war was possible, it asked Tehran to make a gesture of goodwill.

    In response, Iran agreed to allow a number of fuel tankers that weren’t tied to the US or Israel through the Strait of Hormuz in order to help calm global markets, the report added citing an an unnamed Arab official.

EXCERPT: “The director of the Federal Housing Finance Agency (FHFA) has again referred New York Attorney General Letitia James to the U.S. Department of Justice for criminal prosecution, proffering allegations that New York’s top cop may have falsified information on her homeowner’s insurance application. 

    The FHFA Director William Pulte, who oversees Freddie Mac, Fannie Mae, and the Federal Home Loan Banks, asked U.S. Attorneys in Florida and Illinois on Wednesday to “authenticate and investigate” the information, according to two letters reviewed by Just the News

    Pulte cites a series of social media posts by attorney and President of The Article III Project, Mike Davis, who explained how he believes the evidence laid out in previously published court documents demonstrate that James misled her home insurer when applying for coverage.

    James allegedly classified a home in Norfolk, Virginia as her principal residence 

    This is the second time Pulte has turned over criminal referrals to the Justice Department targeting James for alleged wrongdoing related to her homeownership. The New York Attorney General’s office did not respond to a request for comment from Just the News

    Last April, Pulte sent a similar letter to Attorney General Pam Bondi and her deputy Todd Blanche alleging James “falsified bank documents and property records to acquire government-backed assistance and loans and more favorable loan terms.” Among the allegations, Pulte said James classified a home in Norfolk, Virginia as a principal residence even though, as a New York State officer, she was required to maintain residency in the state. 

    Later that year, a federal grand jury in the Eastern District of Virginia indicted James, charging her with bank fraud and false statements to a financial institution. However, the charges were later dismissed after a judge ruled that the prosecutor, Lindsay Halligan, was not lawfully appointed, and the merits of the case were not reached. The grand jury declined to issue a new indictment after the disqualification, Just the News previously reported. 

    In response to those earlier allegations, James accused President Trump and his administration of “weaponizing the justice system” and called the charges “baseless.”

    These probes have resulted in dozens of indictments and convictions in the Feeding Our Future case, multiple charges in autism-related schemes (including guilty pleas like that of Asha Farhan Hassan for wire fraud in a $14 million autism scam), and more than 300 Medicaid fraud convictions secured by Minnesota’s Attorney General since 2019; this prompted actions like the Trump administration withholding $259.5 million in Medicaid funds from Minnesota earlier this year.

  11. At JFK Airport, as travelers waited in hours-long lines, an infant became unresponsive and stopped breathing. The panic of the child’s family and nearby passengers were heard by an ICE agent stationed at a checkpoint.

    This heroic officer immediately sprang into action—rushing toward the cries, taking the child, and performing a Heimlich maneuver that restored the infant’s breathing after nearly two minutes.

    The more NATO/EU hypocrisy creates friction with President Trump; the less U.S. support exists for Ukraine. That’s the dynamic Zelenskyy is trying desperately to navigate with his EU allies.
    During a lengthy interview with Reuters, Zelenskyy says he has been directly told the only way for Ukraine to get security guarantees from USA participation is if he concedes the contested Donbas region to Russia and ends the conflict.

    Assuming what Zelenskyy says is accurate, at this point in the ongoing stalemate, this seems like the pragmatic optimal solution. Concede Donbas to Russia, and the U.S. will mediate terms that emphasize an American willingness to protect Ukraine from further encroachment.
    That said, when Zelenskyy once again starts asking who is going to pay for the needs of his country, the U.S. taxpayer eyeroll commences.

    An ischemic stroke, which can be fatal, happens when a blood clot blocks blood flow to the brain, according to the Cleveland Clinic. Meanwhile, in 2022 and 2023, federal health officials continued to promote the COVID-19 vaccines as safe and effective.

    “As safety signals for ischemic stroke appeared, Biden HHS officials continued to urge people to get vaccinated, jeopardizing the health of millions of Americans,” Johnson said.

    Documents show over 200 stroke cases in less than a year

    The newly released documents are just a fraction of what Johnson has received since January 2025, when he subpoenaed HHS for COVID-19 vaccine safety records and communications about the COVID-19 pandemic.

    “I am sharing my preliminary findings to provide HHS and the public with even more evidence of the Biden administration’s unsupported and unyielding devotion to a harmful vaccine at the expense of the public’s health,” Johnson wrote in a March 23 letter to HHS Secretary Robert F. Kennedy Jr.
