Today’s offering is Hummingbird Cake!

Ingredients

For the Cake

2 cups all-purpose flour

1 1/3 cups granulated sugar

1 tsp. ground cinnamon

3/4 tsp. salt

3/4 tsp. baking soda

1/4 tsp. baking powder

1 cup canola oil

2 large eggs, beaten

1 1/2 tsp. vanilla extract

2 8-oz. cans crushed pineapple in juice, undrained

2 ripe bananas, chopped

1 cup chopped pecans

Nonstick baking spray with flour

For the Frosting

3/4 cup unsalted butter, softened

8 oz. cream cheese, softened

4 cups powdered sugar

1 tsp. vanilla extract

Pinch of salt 

For Decorating

1 cup toasted pecan halves

Directions

For the cake: Preheat the oven to 350°. 

Whisk together the flour, sugar, cinnamon, salt, baking soda, and baking powder in a large bowl. Stir in the oil, eggs, vanilla, and pineapple until evenly combined. Mash the bananas then add to the bowl with the pecans. Stir to combine. 

Spray 2 (8-inch) round baking pans with nonstick baking spray (or, butter and flour the pans). Divide the batter evenly between the prepared pans. Bake in the preheated oven until a wooden pick inserted in the center comes out with just a few small crumbs, 33 to 37 minutes. Cool the cakes in the pans on a wire rack for 10 minutes. Invert the cakes onto the wire rack and cool completely, about 1 hour.

For the frosting: Beat the butter and cream cheese in a stand mixer fitted with the paddle attachment on medium until smooth and creamy, 2 to 3 minutes. Add the powdered sugar then mix at low speed just until combined. Scrape the sides and bottom of the bowl. Add the vanilla and salt. Beat frosting on medium-high speed until light and fluffy, about 2 minutes.

Place one of the cake layers on a serving plate and top with about 1 cup of the frosting, spreading evenly to the edge. Top with the second cake layer. Spread the remaining frosting on the top and sides of the cake. 

To decorate the cake: Press the pecan halves along the base of the cake and around the top of the cake to create a ring. Slice and serve.

    EXCERPT: “Less than 14 hours after 6-month-old Blessings Myrical Jean Simmons was given six vaccines during a six-month wellness visit, she died. The baby received the vaccines at roughly 3 p.m. on Jan. 13 at a clinic in Louisiana, according to the baby’s mother, Brishe McKinley.

    At roughly 8:30 a.m. the next morning, the parents found Blessings dead in her bassinet. “We miss her so much,” McKinley told The Defender. When asked what she most wanted to tell the public, McKinley said, “Don’t let you, your loved one, or your children become a statistic of Pharma.”

    McKinley and her partner, Elijah Simmons, shared the story of their daughter Blessings’ death in an interview with CHD.TV Program Director Polly Tommey. McKinley told Tommey, “We just want justice for her, and we want to bring awareness.”

    Blessings was in ‘perfect health’ when she went in for routine visit

    The day Blessings went to the pediatrician’s office for her six-month visit, she was in “perfect health,” McKinley said. It was five days before she turned 6 months old. “She was cooing, babbling. She was her normal self,” McKinley said.

    According to Blessings’ vaccination record, shared with CHD.TV, she was given six vaccines recommended for 6-month-olds on the Centers for Disease Control and Prevention’s (CDC) immunization schedule.

    They included a second dose of DTaP (diphtheria, tetanus and pertussis), inactivated poliovirus, Hib (short for Haemophilus influenzae type b), rotavirus and pneumococcal, and a third dose of hepatitis B or Hep B.

    She received two shots in each leg. The other two vaccines were given orally, McKinley said. “I thought that we were doing what we needed to do to keep her healthy and safe.” After receiving the vaccines, Blessings was “cranky” and “crying more than what she normally would,” McKinley said. “We assumed that it was because she was in pain from the injection sites.”

    Her parents gave her Tylenol, as the pediatrician had recommended. “We just tried to soothe her,” McKinley said. “Her dad rocked her to sleep.” Roughly an hour later, the parents went to bed. “When we woke up that next morning, that’s when we found her, lifeless,” McKinley said. “When we touched her body, it was cold.”……

    “Dietary guidelines that are set to be issued by the federal government later this year will recommend Americans eat “whole food,” Health Secretary Robert F. Kennedy Jr. said on May 14. The U.S. Department of Health and Human Services and the U.S. Department of Agriculture are working on a new set of guidelines that will be in place through 2030.

    “We are about to reissue the dietary guidelines, and we’re going to do it very quickly. We have until January, but … I think we’ll have it done even before August,” Kennedy said in Washington while testifying to a House of Representatives committee.

    The current dietary guidelines, published in December 2020, run 164 pages. They say that people should eat a healthy diet and limit sugary foods and drinks. Health and agriculture officials in late 2024 received a draft of updated guidelines from an advisory committee that spans 421 pages and proposed instructing Americans to eat less meat, avoid full-fat dairy products, and ingest more plant-based proteins such as lentils.

    Kennedy said on Wednesday that the 2024 update was “clearly written by industry” and driven by the “kind of carnal impulses that put Froot Loops at the top of the food pyramid.” In the past, some members of the advisory committee have been found to have links to corporations, including Kellogg.”

Just The News: “The Senate on Tuesday unanimously approved legislation that eliminates federal taxes on tips, fulfilling one of President Donald Trump’s campaign promises with bipartisan support. Trump first proposed eliminating taxes on tips last June, which was later echoed by his opponent, former Vice President Kamala Harris, during her own presidential campaign in August. Both made the commitments during campaign stops in Nevada.

    Nevada Democratic Sen. Jacky Rosen introduced the bill on the Senate floor, despite expecting it to be blocked by Texas Republican Sen. Ted Cruz. The legislation was first introduced by Cruz and Rosen in January, along with senators from Nebraska and North Dakota.

    “I just want to say: This is great news for Nevada,” Rosen said after the vote, per The Hill. “This bill is not the be-all, end-all, but it’s going to offer immediate financial relief while the Senate continues to work to lower costs and find other avenues of relief for hard-working families.”

    Rosen emphasized the needs of her constituents to pass the legislation, because a lot of Nevadan service and hospitality workers rely on tips to pay their bills. 

    The legislation will now go to the House, where it is expected to pass as either part of a large reconciliation package or as a separate stand-alone bill. 

    “Here’s the good news: With what we just saw now, the certainty that we will see no tax on tips become the law of the land, I think, is very close to 100 percent,” Cruz said. “One way or another, no tax on tips is going to become law.”
