What Shall We Bake Today?

As promised, since this is the beginning of Christman cookie season, I am bringing some of my favorite cookie recipes this month. First up? Pecan Tassies.

Ingredients

1/2 cup butter, softened

3 ounces cream cheese, softened

1 cup all-purpose flour

FILLING:

1 large egg, room temperature

3/4 cup packed brown sugar

1 tablespoon butter, softened

1 teaspoon vanilla extract

Dash salt

2/3 cup finely chopped pecans, divided

Directions

In a small bowl, beat butter and cream cheese until smooth; gradually beat in flour. Refrigerate, covered, 1 hour or until firm enough to roll. *

Preheat oven to 375°. Shape dough into 1-in. balls; press evenly onto bottoms and up sides of 24 greased mini tart pans or mini muffin cups.

For filling, in a small bowl, mix egg, brown sugar, butter, vanilla and salt until blended. Stir in 1/3 cup pecans; spoon into cups. Sprinkle with remaining 1/3 cup pecans.

Bake 15-20 minutes or until edges are golden and filling is puffed. Cool in pans 2 minutes. Remove to wire racks to cool.

  • Pat’s note: At this point, I roll out the dough and use a flower shaped cookie cutter to cut out shapes.  These I then ease into the mini muffin pans.  It gives the tassies a nicer scalloped edge.

    when we drove out yesterday to get the mail, we noticed the vacant house (where Bob our old neighbor used to live) had 5 trucks parked in the driveway–we have hunters coming out of the woodwork! and my bil is up–he brought his camper up the day after Thanksgiving. sigh. we hadn’t seen a deer in days, but yesterday afternoon, the doe were running down the mountain. too early for most of these guys to take a doe…lol. they’re looking for the big bucks…but i’m guessing those boys are no fools. they’re laying low around our house. we might see them today.

      1. my grandmother made it all the time. leftover mashed potatoes, powdered sugar, a little flour makes the white “dough”. you spread that out with your floured hands and then spread peanut butter over it. roll it up like a jelly roll and cut it into pieces.

Just The News: “With just weeks before federal judges in Delaware and California are set to sentence Hunter Biden, his legal team is publicly launching a defense of the president’s son as the clock ticks down on President Joe Biden’s opportunity to pardon him, though he previously ruled that out. 

    On Saturday Hunter’s legal team released a 52-page paper titled, “The political prosecutions of Hunter Biden,” reported The Washington Post. In it they criticize the basis of the investigations into their client and argue that he was prosecuted for crimes that people who weren’t the son of a president would not have been charged for. 

    The document, in parts, seems aimed directly at President Biden, according to The Post. The two have been together in Nantucket for Thanksgiving over the past several days. 

    “With the election now decided, the threat against Hunter is real,” they argue, suggesting ironically that Donald Trump is a threat to go after his political foes, something that has been a hallmark of the Biden administration, most notably, their pursuit of Donald Trump. 

    “This is a seven-year saga propelled by an unrelenting political desire to use a son to hurt his father,” said Abbe Lowell, one of Hunter’s leading attorneys.

    “It is a wild and terrifying story that serves as a stark warning of what is to come as some of the same Republicans who targeted Hunter prepare to resume power and have stated their intention to use the government’s vast power to pursue their perceived enemies,” Lowell claimed.

    Hunter surprisingly pleaded guilty in September to nine counts of tax evasion for a total of $1.4 million, on the day that the jury was to be selected for his trial. The judge in that case said Hunter could face up to 17 years in prison and $1.3 million in fines, according to the New York Post

    In June, a jury found Hunter guilty of three counts related to possession of a firearm while addicted to illegal drugs. He faces sentencing for the gun case Dec. 12 and for the tax case Dec. 16.”

    1. i think he purposefully plead guilty SO his father could pardon him. if there was a jury and a trial, he may not be found guilty before his father left the WH and there’s no way PDJT pardons him.

    If you wanted Trump to come and go as 47th President and leave elections alone it would have been wise to grab up what you could in the first 18 hours of vote counting and let him take office with how the chips fell. Instead, you dumbasses counted through Thanksgiving, shaved God knows how many House and Senate seats, and ran the nonsense “mandate” narrative as your utopias belched our ballots found in the mail for weeks. Speaking of “mandates” – you will not enjoy the reform you have brought upon yourselves that will bring this house of corruption burning to the ground because you got too greedy. I intend to help light the match.
