DIY: Gravy Mistakes and how to Fix Them

Gravy—you slather it on turkey and pool it on top of mashed potatoes. You let its rich and meaty flavor mingle a little with sweet potato casserole and sop up what’s left over with a dinner roll. No Thanksgiving dinner is complete without a good old-fashioned gravy. To give you the best shot at success, here are six common mistakes that make gravy less than perfect and how you can fix them.

Mistake to Avoid No. 1: Your Gravy Has Lumps

Nobody likes lumpy gravy. Reasons for lumpy gravy include using a spoon to stir instead of a whisk and dumping your thickener into the gravy without making a roux first. What’s a roux? A roux is a paste made from flour and fat that thickens sauces, and it’s essential to a good gravy. You can make it with fat from the bottom of the roasting pan, butter or oil. Aim for one part fat to one part flour. Heat the fat in a saucepan or directly in the roasting pan. Add the flour and cook, stirring, until the mixture begins to bubble (the longer you cook it, the nuttier the flavor—just don’t take it too far or it will burn). Once your roux is nice and bubbly, add your liquid and whisk (don’t stir!) until the mixture bubbles and thickens. Crisis averted. Now, just in case you ignored the whole roux-making step and you have a finished gravy (with lumps), all is not lost. Pouring the gravy through a fine mesh strainer should do the trick.

Mistake to Avoid No. 2: Your Gravy Is Too Thick

So you made a delicious gravy except it’s too thick. It’s gummy, in fact, and you’re not quite sure where you went wrong or how to fix it. No problem! One mistake that can result in gravy that’s too thick is adding too much thickener (or too little liquid). Another mistake is not taking into account the fact that gravy tends to thicken as it cools. When it’s hot, gravy should be thick enough to just coat the back of a spoon, but not so thick that it sticks to the spoon like glue. If your gravy is hot and still too thick, add broth a little at a time to thin it out. Remember to check the seasoning when you’re done and adjust if needed.

Mistake to Avoid No. 3: Your Gravy Is Too Thin

Gravy’s job is to coat mashed potatoes, turkey, stuffing (or everything) on your plate with a thin layer of meaty goodness, and it can’t do its job if it pools at the bottom of your plate like water. If you started with a roux and your gravy is just too thin, there are a few things you can do to correct it. If you’ve added too much liquid, you can try cooking it longer. Reducing the volume may be enough to thicken it up. However, if your gravy is thin and the seasoning is where you want it, cooking it down may make it too salty. Here is where you’ll have to make a slurry. A slurry is much like a roux with a less attractive name and a few other minor differences. Like the roux it thickens sauces, but unlike the roux, it uses a thickener (like flour) combined with a little bit of liquid like broth or water instead of fat. Simply whisk your thickener (a couple tablespoons of flour is a good place to start) into 1/2 cup or so of liquid and then whisk that mixture into your gravy. As it heats, it will thicken.

Mistake to Avoid No. 4: Your Gravy Is Greasy

Making gravy straight from the roasting pan is always best, but you’ll need to take some steps to prevent your roasting pan gravy from tasting like an oil slick. What we’re really after from the pan are those browned bits that form at the bottom. They’re a flavor powerhouse. You’ll want them in your gravy, but not the fat that they’re often swimming in. The solution? Deglaze the hot roasting pan with broth (or wine if you want to spare some) and pour the liquid into a fat separator or glass measuring cup. This will help loosen those tasty brown bits from the pan while getting rid of the fat that has also collected at the bottom. You can use the fat that floats to the top of your separator for your roux while saving the liquid for the gravy itself. If your finished gravy is oily, let it sit and try skimming any fat that rises to the top. Whisk any fat that’s left into the gravy and serve immediately.

Mistake to Avoid No. 5: Your Gravy Tastes Burnt

This is perhaps the worst-case scenario in the world of gravy-making. It happens when those deliciously concentrated pan drippings burn, and you decide to make gravy out of them anyway. Your choices are (A) Insist that the gravy tastes fine and everyone else must be mistaken, or (B) Have a backup plan. Let’s entertain Plan B…. If you’re fortuitous enough, you can work on Plan B even before disaster strikes, and here it is: Most turkeys come with a neck and a little packet of other pleasantries like the heart, gizzard and liver stuffed into the cavity. Hold onto these. If your pan is burnt, these will provide you with a much-needed flavor boost for your second attempt. You can sauté them in a separate pan with a bit of mirepoix (onion, carrot and celery) to create some new brown bits to work with, then simmer them in broth to add flavor.

Mistake to Avoid No. 6: Your Gravy Is a Salt Bomb

A well-seasoned gravy complements both sweet and savory elements on the plate, but a gravy that’s too salty can ruin everything it touches. As gravy cooks, it loses volume and concentrates the flavor (and hence the saltiness) of your end product. To avoid gravy that tastes like a salt lick, season it at the end of the cooking process, not the beginning. If you’ve got homemade broth or stock, use that as the body of your gravy. If you’re using broth or stock from a box, opt for a low-sodium option. If your gravy is finished and it’s just too salty, add some broth or water to tamp it down. That will also thin it out, so you may have to thicken it back up again.

  1. Good Morning, Pat and Filly – As an old biddie pushing 80 – I’ve made all of the above mistakes over my long years of cooking! And I’ve used all of those remedies. The key is to have extra broth on hand just in case.

    Mama always made a paste of cold broth, a bit of flour and water if the roux gravy was too thin. She’d stir it in – we didn’t have a whisk – but I use a whisk now.

    Another trick I had was that easy blend flour that didn’t lump – which I haven’t bought in years – don’t know if it’s still available.

    I like roux gravy best – nice and brown – hate pale gravy!

    Bless you today! I’ll be driving back to the Village arriving before 5pm for evening duty – so Sabrina the aide can go to Christmas Cantata practice this evening.

      my mom always made and taught me to use a roux as well and her gravies were awesome! hubby’s mom did not and he was brought up on jar gravies–which he prefers. Since i can do without gravy on most things, I buy jar gravy.
      One thing i refuse to buy a jar for though is roast beef. I make an awesome roast beef–sliced thin and with a wonderful gravy. hubby’s not crazy about roast beef…lol…so I make it for myself and then freeze portions for me to have on a night when he has shrimp or fish.

    It wasn’t just the obvious 2020 election fraud, censoring any mention of the fraud, creating a False Flag operation on January 6, using trained federal agitators, killing an innocent woman, beating other women, calling it an insurrection, jailing protestors without cause, defrauding voters and our election system!

    It wasn’t just the censorship of Donald Trump and the MAGA conservatives – calling them DOMESTIC TERRORISTS!

    NOPE it wasn’t just the invasion, subsidy and crimes of illegals – it was ALL OF THE ABOVE.

    1. Good morning, Pat! Temp here is 34 with very strong winds and mostly clear skies. Starting early next week, the daily highs are predicted to be in the low-to-mid 30’s, 20’s @ night. Winter is coming fast! No measurable snow in the forecast so far. Wheezer was waiting for breakfast this morning.

      I never knew how to make gravy – HB’s Dad worked as a sous chef at a couple of restaurants and taught me about making a roux. In thinking back to watching Mom make gravy – she always used the water from the boiled potatoes in the skillet after mixing some flour with the grease. I guess she was making a rudimentary roux? Then she boiled the crap out of it until it thickened – sometimes it did, sometimes it didn’t. Meh – still too much work for me! I buy Pioneer brand Country Gravy (white) in the foil packages. For Thanksgiving, I always used Turkey Gravy from a jar. I tried a few times to make flour gravy – I managed once or twice w/o lumps then said the hell with it. LOL

    2. Yesterday they predicted high 30s for a couple of days – they changed it to low 40s – and no rain in the entire forcast.

      I didn’t hear any storms last night and I woke up at 2am and finally got up at 2:45.

      The time change has me getting sleepy at 7pm and waking up in the wee hours.

      I may take a Benadryl tonight to get my biological clock back in sync with the new time clock. One night sleeping 8 hours would be great!!!

    Texas offers Starr County ranch to Trump for mass deportation plans

    The Texas General Land Office is offering President-elect Donald Trump a 1,400-acre Starr County ranch as a site to build detention centers for his promised mass deportations of undocumented immigrants, according to a letter the office sent him Tuesday.

    Land Commissioner Dawn Buckingham said in the Tuesday letter that her office is “fully prepared” to enter an agreement with any federal agencies involved in deporting individuals from the country “to allow a facility to be built for the processing, detention, and coordination of the largest deportation of violent criminals in the nation’s history.”

    The state recently bought the land along the U.S.-Mexico border in the Rio Grande Valley and announced plans to build a border wall on it. The previous owner had not let the state construct a wall there and had “actively blocked law enforcement from accessing the property,” according to the letter the GLO sent Trump…

    In an interview with Fox News posted Tuesday, Buckingham said she was “100% on board with the Trump administration’s pledge to get these criminals out of our country.”

    Buckingham had previously said she approved an easement within 24 hours of acquiring the Starr County land to let the Texas Facilities Commission, which is overseeing the state’s border wall construction, to begin building a wall. In the Fox interview, she said that move was followed by “brainstorming” with her team.

    “We figured, hey, the Trump administration probably needs some deportation facilities because we’ve got a lot of these violent criminals that we need to round up and get the heck out of our country,” Buckingham said. She noted the land is mostly flat, “easy to build on,” accessible to international airports and near the Rio Grande.

    “We’re happy to make this offer and hope they take us up on it,” she added…

    After Trump left office in 2021, Gov. Greg Abbott launched an unprecedented border enforcement operation that included building a military base in Eagle Pass and the deployment of thousands of Department of Public Safety troopers and state National Guard troops to the border.

    CNN reported Saturday that Texas’ “border czar” — Michael Banks, who serves as a special adviser to Abbott — has been a part of behind-the-scenes discussions with Trump’s team about immigration initiatives.

The Uniform Code of Military Justice is a codified Congressional statute and operates under Federal law…. not Stalinist show trials.”

    McCaffrey, who is a retired U.S. Army general turned media personality, could not be more wrong about this. The idea that morale would be harmed by finally holding these partisan flag officers accountable is utter nonsense. On the contrary, I would suggest that nothing would make the rank-and-file of the U.S. military happier than seeing the rules applied evenly for a change. The fact that no military leaders were ever punished for the failures of the Afghanistan withdrawal remains a stain on America’s history.

    Like the civilian bureaucracy, the upper levels of the Pentagon see themselves as untouchable and above being subject to the voting public. That attitude is why the once-great U.S. military hasn’t managed to win a war in decades. Members of the general class are just as political as any politician, and they will sell their fellow servicemembers down the river if it means cozying up to a Democrat president. There is no better example of that than Gen. Mark Milley, who most are no doubt familiar with at this point. 

    Still, the press is doing its level best to turn all this into a scandal. Aside from recalling and court-martialing generals like Milley, Trump is also planning to wipe out the general class currently in place. Meet the Press called that a “politically-motivated purge.”

Matt Gaetz (R-FL) to be confirmed as Attorney General for Donald Trump’s second administration without a knock-down, drag-out fight, and the shenanigans in the effort to derail the nomination are ramping up. The New York Times reported Tuesday morning that 24 files with “damaging testimony” about Gaetz were obtained by a “hacker,” but that so far the hacker has not publicly released any of the information.

    The files are all exhibits to a motion filed in a defamation case in Florida related to the sex trafficking allegations levied against Gaetz – allegations the US Department of Justice investigated for 18 months before declining to pursue charges because, sources told the Washington Post, the two main witnesses weren’t credible. Some of the exhibits, including deposition testimony from a woman who claims she had sex with Gaetz when she was 17, have been sealed by the judge presiding over that case…..”

    “….CNN reported that the woman said in her deposition testimony that she had sex with Gaetz on an air hockey table at a party in 2017 and that her friend and Dorworth watched. Her friend said she also had sex with Gaetz at the same party. Dorworth had a different story, saying he didn’t know the woman and wasn’t even at his house during the 2017 party. In his deposition, Dorworth said:

    “The thing I didn’t really contemplate when this whole thing started was the idea that people would lie themselves into these stories because of Matt’s political celebrity. I truly believe that is what happened.”

    On Tuesday, Dorworth said on X that he passed 3 polygraph tests related to his testimony in the case and that “Matt Gaetz did not do this.”

    “….The other witness in the case the DOJ deemed not credible is disgraced Florida politician Joel Greenberg, who first levied the allegations against Gaetz. He told federal authorities that Dorworth hosted parties at which Greenberg, Gaetz, and others “took drugs and openly had sex,” leading to Dorworth’s defamation suit. In 2021 Greenberg was indicted for dozens of crimes, including sex trafficking a minor, stalking, identity theft, fraud of federal taxpayers, and ripping off local taxpayers in a cryptocurrency scheme, eventually pleading guilty to just six out of the 33 charges for which he was indicted. He is currently serving 11 years in federal prison.

    1. i think i read in an article this morning that when Gaetz found out the woman in question was 17 and not of legal age, he stopped having sex with her. so she lied about her age–when he found out–he stopped. how can he be held responsible?
      let’s face it–he wasn’t married at the time (I believe) so he was a man having sex with a woman who claimed to be of legal age. NO LAW AGAINST THAT.

  10. Margot Cleveland, The Federalist: “Before marrying in 2021, former Rep. Matt Gaetz, R-Fla., was known to be a braggadocious libertine. No conservative wants to defend such behavior, and so many on the Right are remaining silent as Gaetz is accused of also engaging in criminal conduct, paying prostitutes, and having sex with a minor. The claims against Gaetz are but another information operation, however, mirroring the ones that previously targeted Donald Trump and Brett Kavanaugh. And this pattern will continue unabated unless Americans unflinchingly condemn the tactic — no matter the target.

    We should have learned this lesson from Donald Trump’s first presidential run and time in office. From Crossfire Hurricane, to the pee-tape dossier, to Special Counsel Robert Mueller’s investigation, unsupported and unbelievable accusations leaked to the public hampered Trump’s ability to advance his agenda. Time and again the charges proved unfounded, and yet in advance of the 2024 election, the lawfare continued. The country, however, had wised up by then and recognized the various criminal and civil charges leveled against Trump for what they were: an effort to interfere in the election.

    Why then is anyone giving credence to the accusations against Gaetz, especially given the FBI — after thoroughly investigating the matter for two years — decided not to charge Gaetz? Rather, career prosecutors for the Department of Justice concluded there were credibility problems with “the two central witnesses” to the case.

    Earlier this week, The Federalist’s editor-in-chief, Mollie Hemingway, detailed not just the DOJ’s conclusion that the women’s stories would be unconvincing to a jury, but the many additional problems with the entire hoax. Take, for instance, the fact that a jail-house informant revealed that his cellmate, Joel Greenberg, was behind the woman’s claims that she had sex with Gaetz when she was 17. And Greenberg himself had admitted to “fabricating allegations against a schoolteacher who was running against him to be a tax collector,” with Greenberg sending “letters to the school falsely claiming the teacher had an inappropriate sexual relationship with a student.”  

    Yet now that Trump has nominated Gaetz to serve as his attorney general, opponents to the former Florida representative are dusting off the sex trafficking claims. On Friday, ABC News ran an interview with the lawyer who represents two women who testified before the House Ethics Committee about Gaetz’s supposed misconduct. According to ABC News, those two witnesses had previously testified as part of the DOJ investigation. So, the very same witnesses the FBI — which holds no love lost for Gaetz — concluded lack credibility are the impetus for the House Ethics Committee investigation.

    Now, the media and some senators are pressuring the House Ethics Committee to release their report on the investigation into Gaetz. Whether that happens or not, though, there will surely be leaks designed to doom Gaetz’s nomination as attorney general. 

    While some on the Right may prefer not to defend the former playboy, the only way to end the growing use of salacious lies as a political weapon is to condemn the information operation, prosecute those responsible, and ostracize the members of the media responsible for advancing the hoax. Like it or not, that’s precisely what conservatives must do in response to the attacks on Gaetz.

    Had Republicans adopted this approach when the Left came for the blemishless Brett Kavanaugh, it wouldn’t need to defend Gaetz against the false accusations now. But whether Gaetz’s bachelorhood looked vastly different than Kavanaugh is of no moment: What matters is that the enemies of both men used lies to manipulate politics. And our Republic cannot allow that tactic to stand.”

    The prospect of having to invite newly elected trans members of the legislature to the time-honored coke orgy gatherings reportedly raised serious concerns from various long-time politicians.

    “We feel the presence of a biological man pretending to be a woman might make our cocaine-fueled sex parties a little uncomfortable,” Senator Mitch McConnell told reporters. “This beloved tradition is a mainstay of the Republican Party and we don’t want our hallowed customs ruined by any supposed ‘women.’ What on earth does that word even mean, anyway? ‘Woman.’ Sounds made up.”

    Congressional Republicans decried the election of Sarah McBride from Delaware, a man who says he’s a woman, and said they don’t believe such a person should be allowed to hold office. They also asked for more federal funding for their weekend team-building activities, which include attending baseball games, working in local soup kitchens, and holding massive cocaine orgies at the homes of prominent Republican donors.

    “I know we aren’t supposed to talk about these parties because some people might take issue with them but I think we should embrace our proud heritage,” Senator Lindsey Graham told the press. “These parties are mostly wholesome with a little coke and orgies on the side.     BERLIN — Newly uncovered footage appears to show Adolf Hitler doing the famous Trump dance.

    “The similarities between Trump and Hitler run much deeper than we thought,” said CNN’s Jake Tapper as he unveiled the footage. “They even danced the same. We in the media tried to warn the country, but no one listened.”

    The footage, recovered by German officials while cataloging their archives and converting hard copy files to digital, shows Adolf Hitler dancing at one of his many rallies. He is seen pumping his arms, feet planted firmly in place, while his body sways gently back and forth in time to the anthem “Horst-Wessel-Lied.”

    “Look at the way they both gyrate their hips and pump their fists awkwardly, never fully extending their arms, a classic Nazi dog whistle,” said Body Language Expert Dina Landau. “They hold their arms up at the elbow as if fending off attacks from freedom, rhythmically punching back with fascism.”

    “It’s horrifying. Normal people don’t dance like that.”

    In the days following the discovery, historians have uncovered even more photographic evidence such as the one seen below, of Hitler joyfully dancing in the exact same style as Trump.

    “We only wish we could’ve discovered this sooner, to warn the world about Trump’s imminent Nazi takeover,” lamented Landau.

    At publishing time, historians had uncovered more footage depicting Hitler eating what appeared to be a Big Mac and fries.

  14. I called Mark to get an update on the truck – he’s replaced a couple of things, one of which was an electronic unit in the 4WD and fixed the fan. Did a regular tune-up and he is going to check on getting some new tires at a decent price. So far, so good, sounds like. Still don’t know how much this is all going to cost but it appears that it won’t be as bad as I had envisioned. But, then, I’m a worrier so….I always think/plan for worst-case scenario.

    EXCERPT: “In June, the Supreme Court handed J6 defendants a long-awaited victory by effectively gutting the 1512 obstruction of justice statute.  Leading up to that decision, the DOJ had been using the statute in a context totally unrelated to its original intent and purpose. The statute was enacted shortly after the Enron scandal of the early 2000s to provide oversight into fraud and corruption within the accounting industry. 

    The law’s originators never conceived of its use in a presidential certification process, much less against peaceful demonstrators who simply exercised their First Amendment rights to protest a contested election. Nevertheless, radical lawyers within the DOJ, abetted by outside lawfare groups, took it upon themselves to completely pervert the statute’s meaning.  Rather than fighting accounting fraud, it was now being weaponized by vindictive, bad-faith actors within the DOJ to deny J6 political prisoners of fundamental rights, and in many cases, imprison them with cruel and unusually long sentences. 

    The statute’s vague wording that was the focus of much of the Supreme Court’s decision in Fischer had previously given the DOJ convenient cover to stretch its construction to absurd lengths.  This is how a statute enacted to limit the tampering of evidence to protect whistleblowers in a proceeding for accounting fraud became twisted and applied in a completely foreign area – namely, the context of punishing J6 defendants. 

    Much of the oral argument centered on this glaring problem: how a statute that was designed very clearly in one area was being weaponized to crackdown on political dissidents. Justice Thomas asked this question point blank to Biden’s Solicitor General: “Has the Government applied this provision to other protests in the past and has this been the Government’s position throughout the lifespan of the statute?” The obvious answer, of course, is no – which the SG did finally admit after waffling back and forth with the Justice. 

    However, that minor oversight not stop the DOJ from marching forward with its prosecution – which it did with shameless abandonment against hundreds of political demonstrators. This included many who never touched a police officer nor even broke a window, a group that includes President Trump. In fact, the government’s arguments for using the statute against J6ers were so ridiculous that even Justice Ketanji Brown Jackson, Biden’s only Supreme Court nominee, found it problematic and sided with the 6-3 majority. 

    Jackson is no moderate: she is a true believer in the Progressive cause. She admitted as much in her decision, maintaining that the January 6th protest constituted a political insurrection, even though there was no realistic chance that any of those protesters had the intent, much less means, to overthrow the government. The whole thing was a lie made up by mainstream media outlets like the NY Times, Washington Post, and MSNBC. That even Justice Jackson could, to her credit, readily identify the deep errors in the Government’s argument demonstrates just how ridiculous the Government’s whole cockamamie scheme was. 

    The Court’s majority likewise sided with the District Court in ruling that 1512’s original intent was stretched far beyond the boundaries of its intent and defies logic and common sense, effectively overturning the Circuit Court’s decision below. That, for all intents and purposes, should have been the end of the story. The Supreme Court is the final arbiter of statutory interpretation. 

    The Court held, very clearly, that 1512 is a narrow statute, to be applied strictly to cases in which evidence tampering was an overriding concern. Typically, that would include only those cases envisioned by the statute’s framers – cases like accounting fraud, and proceedings arising therefrom. Not presidential certification proceedings, which are largely political and ceremonial in nature, and not the sort of proceeding especially suitable for litigation. Certainly not in the overwhelming majority, if any at all, of J6 cases…..”

    Prosecutors said during the trial that the defendant, Jose Ibarra, 26, who is linked to the Tren de Aragua gang, was out “hunting for females” on Feb. 22 when he targeted Riley, 22, while she was jogging. 

    Ibarra faces life in jail without the possibility of parole. He was convicted on three counts of felony murder, one count of malice murder, one count of kidnapping with bodily injury, one count of aggravated assault with intent to rape and one “peeping Tom” count.”

    Putin has been extremely clear about his stance on the Biden regime. Putin is very much aware of the Deep State, or as he calls them, the “Golden Billion” or “Western oligarchs.”

    Putin has been vocal about the corruption that has claimed the Western world, and he recognizes that Trump is not “one of them.” Putin knows there can be no negotiating with the current administration, because the current administration are the ones who want this conflict and brought war to Russia’s doorstep. They are the ones who brought NATO armies and missiles to Putin’s western front, after promising they would not.

    Putin knows the only way this gets resolved, is through Trump.”
