What Shall We Bake Today?

October is PUMPKIN month!  Let’s start off with my favorite Pumpkin Bread!

Ingredients

2/3 cup shortening

2 2/3 cups sugar

4 eggs

1 can (1 pound) pumpkin

2/3 cup water

3 1/3 cups all-purpose flour

2 teaspoons baking soda

3/4 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon ground cloves

2/3 cup chopped walnuts

2/3 cup raisins

Directions

Preheat oven to 350°. In a large bowl, cream shortening and sugar until fluffy. Stir in the eggs and pumpkin and water. Blend in flour, soda, powder, salt, cinnamon, and cloves. Stir in the nuts and plumped * raisins.

Pour into 2 greased 9×5-in. loaf pans or 3 8×4 loaf pans. Bake until a toothpick inserted in center comes out clean, 65-70 minutes. Cool in pans 10 minutes before removing to a wire rack to cool completely.

  • To plump raisins to make them soft measure raisins in a bowl and cover with very hot water.  Allow to sit for 10 minutes.  Squeeze excess water from them before adding to mixture.

    Yum – I love pumpkin bread.

    I’ll probably make something with pumpkin for Sally Q – she loves the pumpkin season. Even loves pumpkin butter. I might make this recipe into muffins, so I can freeze them in portions and substitute a little of the flour and sugar with almond flour and Monk’s fruit sweetener.

    Here’s my all time favorite pumpkin recipe:

    PUMPKIN MOUSSE WITH BRANDY MACADAMIA SAUCE

    1979 Florida Times Union – Jacksonville, FL – Grand Prize Winner !

    Serves 6-8

    Mousse Ingredients 

    1 16 oz can pumpkin, mashed – or 2 cups pureed pumpkin

    3/4 cup water

    2 envelopes unflavored gelatin

    1/4 cup light brown sugar, packed

    1-1/4 superfine sugar

    1-1/2 teaspoon pumpkin pie spice

    1 tsp brandy extract

    1 tbsp lemon juice

    1/4 tsp salt

    1 cup heavy cream

    2 egg whites

    1/8 tsp cream of tartar

    Mousse Directions

    Combine pumpkin and 1/2 cup water in blender jar.  Blend at low speed for 2 minutes.  

    Soften gelatin in remaining 1/4 cup water.  

    Combine pumpkin mixture, softened gelatin, brown sugar and 1 cup of the superfine sugar in a sauce pan.   

    Heat, stirring until gelatin is completely dissolved.

    Remove from heat, let cool for 5 minutes, stirring occasionally.

    Add Pumpkin Pie spice, brandy extract, lemon juice and salt.  Mix well.

    Cool to room temperature.

    Beat cream with 2 tbsp superfine sugar until very thick.   

    Fold cream into pumpkin mixture.

    Beat egg whites with cream of tartar until frothy.  

    Add remaining superfine sugar, a little at a time, beating until egg whites stand in stiff peaks.

    Fold egg whites into pumpkin mixture.

    Spoon into a 1-1/2 quart mold.

    Chill 3-5 hours before serving.

    Remove from Mold onto platter.

    Serve with Brandy Macadamia Nut Sauce.   

    BRANDY MACADAMIA NUT SAUCE 

    Sauce Ingredients

    1/2 cup light brown sugar – packed

    2-1/2 teaspoon arrowroot (or flour or cornstarch to thicken)

    1/2 teaspoon pumpkin pie spice

    2/3 cup boiling water

    2 tablespoons butter

    1 tsp vanilla

    4 Tbsp brandy

    1/2 cup chopped macadamia nuts

    Sauce Directions 

    In saucepan, combine sugar, arrowroot and pumpkin pie spice.  Gradually stir in water.  Bring mixture to a boil, cook stirring constantly, 5 minutes until thickened.  

    Stir in remaining ingredients.

      what is “superfine” sugar?
      i never think to make my breads into muffins–but that’s an excellent idea for mom. I usually take her a bunch of baked goods for her freezer when we visit. But, like my zucchini bread, she has to take the whole thing out and thaw to slice it. muffins can be wrapped individually and taken out one at a time!

      1. I just double bag muffins baked in papers in used bread bags, but could individually wrap in foil so she could open slightly and pop in oven – or put in muffin papers and thaw/warm in microwave. Which ever she prefers.

    1. Morning, Pat! I got up at 5:45 (47 this morning) and no Wheezer. I turned the light on and put his tuna out, called for him and 15 minutes later, he put in an appearance. Jake was registering his disapproval as he watched him eat it. Still no word from Piper whether she’s coming today or not – whatever….I’m not playing their games. Either she shows up or she doesn’t. C’est la vie!

  7. NF: I’ve never even seen, much less visited an Aldi’s but I’ve heard it mentioned by some of you before.

    If ya do, be on the lookout for this coffee – it is insanely fuckin’ awesome, especially with a shot or two of some Sambuca. I gotta tell ya – I’ve shopped at ALDI stores in in five different countries and I’ve been impressed with every single one of the stores. The guys who own the company are brothers, and one of the brothers – IDK which – also owns Trader Joe’s.

Voting for her is indefensible. Americans are in desperate need of help THAT WE HAVE ALREADY PAID FOR. Withholding it is diabolical.

    I have had the above meme in my folder of things that I have yet to post for a long time. I think it first came my way during the height of the COVIDcrisis – but I always felt like the message was an exaggeration – until today.

    But after watching the government’s response in Western North Carolina, somehow, the idea that there is some entity out to get us feels more fitting than ever…

              1. Hey, I’ve never had the patience to really train any of my cats! Just keep a spray bottle of water close at hand! That’s THE best thing to use with cats! Getting squirted every time they do something will eventually take care of the problem.

    Ohio court declines to issue arrest warrants for Trump, Vance over comments on Haitian migrants

    After a nonprofit filed a criminal complaint against former President Donald Trump and his running mate, JD Vance, for their remarks about Haitian migrants eating pets in Springfield, Ohio, an Ohio judicial panel determined there was no reason to issue arrest warrants for either of them.

    IMO the nonprofit people should be charged or fined or whatever is legally allowed for bringing false charges and wasting the Court’s time and taxpayers’ money.

    The budget analysis arm of Congress said the increased costs are due to the government subsidizing many seniors’ premiums by sending money to insurance firms, and it would cost at least $5 billion extra in 2025 alone and add to the deficit.

    “The higher costs are attributable to the increases in subsidies for premiums and risk corridors,” the CBO told key lawmakers this week.

    House Ways and Means  Chairman Jason Smith, R-Mo., House Budget Committee Chairman Jodey Arrington, R-Texas, and Senate Budget Committee Ranking Member Chuck Grassley, R-Iowa, sent a letter to CBO Director Phillip Swagel seeking the analysis of the Biden plan 

    CBO responded that federal spending would increase between $10 billion and $20 billion in 2025 compared to earlier projections.

    Lawmakers blasted the Biden/Harris administration for imposing such new cost on taxpayers. “As predicted, the Biden-Harris Inflation Reduction Act not only quelled investment for new cures, but caused Medicare prescription drug plan premiums to skyrocket, and Democrats are scrambling to cover it up before the election,” Arrington said.

    “In July, the Biden-Harris CMS scrambled to create a new federal program that will send billions of tax dollars to large health insurance companies to cover up a massive flaw in their so-called Inflation Reduction Act.”

    The new average plan bid for a standard Part D coverage increases by 179% for 2025 partly due to an underestimation of federal coverage of the Part D changes, CBO said.”
