Today’s recipe has a lot of steps, but it’s not too hard…Copycat Dairy Queen Ice Cream Cake!

This recipe comes from the liveloveandsugar.com website.  It’s certainly harder than just buying an ice cream cake; however, the price of a smallish ice cream cake is now around $35!

Ingredients

Chocolate Cookie Crunchies

3/4 cup Oreo crumbs (about 9 Oreos)

1 1/2 tbsp butter, melted

Ice Cream Layers

1.5 quart container vanilla ice cream

1.5 quart container chocolate ice cream

Chocolate Fudge

1 cup semi-sweet chocolate chips*

3 tbsp light corn syrup

1/2 tsp vanilla extract

1/2 cup heavy whipping cream

Whipped Cream

2 cups heavy whipping cream, cold

1 cup powdered sugar

1 1/2 tsp vanilla extract

Sprinkles

Instructions

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silicone baking mat and set aside.
Combine the Oreo crumbs and melted butter and stir until well combined. Spread the crumbs evenly onto the prepared cookie sheet.
Bake for 8-10 minutes, then allow to cool. Use your fingers to break any big clumps into smaller ones. Set aside.
Line an 8×3 inch cake pan* with clear wrap that covers the bottom and goes above the sides of the cake pan. I used two pieces.
About 20 minutes before you need it, set the chocolate ice cream out to soften. Once softened, stir it up until smooth and creamy. Add the softened chocolate ice cream to the prepared cake pan and spread into an even layer. Freeze for 30 minutes.
To make the fudge layer, add the chocolate chips, corn syrup and vanilla extract to a medium sized bowl.
Heat the heavy whipping cream just until it begins to boil, then pour it over the chocolate chips. Allow to sit for 2-3 minutes, then whisk until smooth.
Remove the cake pan with the chocolate ice cream from the freezer, then pour the chocolate fudge over the ice cream and spread into an even layer. Freeze for about 10 minutes.
Add the cookie crumbles to the top of the fudge layer, then freeze for about 2 hours, until mostly firm.
About 20 minutes before you need it, set the vanilla ice cream out to soften. Once softened, stir it up until smooth and creamy. Add the vanilla ice cream to the top of the cake, then freeze until firm, 2-3 hours.
Use the clear wrap to lift the frozen cake out of the pan, then place it on a cardboard cake circle or a serving plate. Set it back in the freezer.
To make the whipped cream, add the heavy whipping cream, powdered sugar and vanilla extract to a large mixer bowl. Whip on high speed until stiff peaks form.
Frost the cake with the whipped cream and decorate as desired. I used Ateco tip 844 for piping the borders.
Freeze the cake until ready to serve. Cake is best when stored well covered and eaten within 4-5 days.

Notes

I like using the 8×3 inch cake pan and having a taller cake, but if you don’t have one of those pans on hand and don’t want to purchase it, you could also use a 9 inch pan (including a springform pan). The cake just won’t be as tall.

Semi-sweet chocolate must be used, not milk chocolate or another, for the fudge layer to set properly

    Predicted high today here 92º – with 30% chance of rain.

    I’ve got a date to the dermatologist and plastic surgeon today to get a Basal Cell skin cancer removed from my left eye between brow and lid. My derm doesn’t close any facial surgery – they send patients to the plastic surgeon across town to patch us up. At both offices are Christians that I’ve known either in Church or prayer groups. That is comforting and lessens anxiety. Hope I don’t look like a pirate winking on one side when it’s done.

              3. Red Heads have Type I skin very fair, tending to freckles.

                Type II skin light, tends to burn, does not easily tan, is what I have – tends to get skin cancers as they age.

    it’s 60* out there this morning…warmer than it was.
    I got to meet Cooper yesterday–my daughter’s new puppy. He’s a goldador–and is he pretty!!! he sheds a lot at the moment and he just got his collar off from his surgery–no making puppies for him…lol
    he’s a love muffin though–you pet him and he sticks by your side licking your arm, your face if you get close enough…lol. being a puppy he loves to play and my granddaughter doesn’t always have time, so he will go wherever she is and nab something–anything–and run so she has to chase him…LOL
    it was wonderful to sleep in our bed though.

    1. Morning Pat! Ah – can’t get much better than a cross of a Labrador and a Golden! I expect that shedding will continue. It’s very humid again, altho not as bad as yesterday; already 73, supposed to hit the high 90’s today, possibly break 100 in some places in western NE. Another couple of days in the 90’s, then it cools off on Thursday – I’ll be putting off my monthly shopping trip until then, that’s for sure!

        he is this gorgeous copper color! he isn’t a small dog–and his paws are big so he will get somewhat bigger. but he is still pretty much a puppy despite his size and he acts like one…lol
        not sure what our temps are going to be.
        we stopped at the little market in town on our way home for bananas and milk yesterday. their dairy case was almost empty–they only had almond milk…yuck. and the bananas were mushy…sigh

          1. he has an inch by maybe a quarter inch black smudge on his face–not centered–but on his nose. my daughter says everyone tries to wipe the smudge off his face but it’s in his coloring. he also has a little bit of white on his chest.

    we went home to visit my mom over the weekend. We live in upper central PA, she lives more south and east PA. One the way down, thru “mid” PA there were loads of farms and we saw many FARMERS FOR TRUMP signs in fields–not a single Harris sign. We also saw a few Take Back America bumper stickers. (None of this is surprising tbh)

    When we got closer to Mom’s house, i expected to see the one street lined with Harris signs–they were lined with maggot signs 4 years ago. Not a one. now there weren’t any Trump signs either. I finally spotted one sign that simply read Harris for president. It was an “official” sign–not made by the homeowner or anything. what i found interesting was it wasn’t Harris/Walz…just Harris.

    i did see a Harris bumper sticker on the way home, but the car was covered with lesbians for this…lesbians for that…so I wasn’t surprised.

    One other cool thing i saw: in one of those farmer’s field, we saw a drone spraying the crops. on the road there was a white van and 2 guys standing on top of the van controlling the drone. first time i ever saw anything like that!

      “So it adds to their forage when the corn comes off,” Miller said. But he said to plant the mixture of turnip, clover and grass seed now you would need a helicopter or crop duster. But not with today’s technology. Miller is using drones that can carry up to 80 pounds.

      They hovered over the field accurately dropping seed falling into between the rows without damaging the corn. “With propellers, that pushes it down so you get more of more of a contact and it’s more accurate,” Miller said. Miller contracted with Volitant, a drone business out of Dunbar [NE]….”

      “This drone industry is exploding,” said Volitant owner Kevin Knorr. He said the drones fly in a programmed pattern.       University of Nebraska Lincoln Journalism Drone Lab founder Matt Waite said there has been some movement to loosen some rules. “The law moves very slow and technology moves very fast and you are always going to find frustration there,” Waite said. He said the rule that limits flight to the only line of site operations is something the Federal Aviation Administration is looking at.

      “Fields are large and our eyes don’t see far when we’re talking about thousands of acres so true operation in large-scale agriculture is difficult because of that line of sight limit,” Waite said. “Until those rules are in place that’s going to limit some of these far-reaching ideas,” Waite said.

      Miller already used drones to spray crops this year. He believes the future is here. “With the hover, you can see the mist going straight down and there’s not much of a drift going sideways,” Miller said. Miller said using a drone costs about the same as hiring a helicopter or plane.

      However, they do save on the amount of seed and chemicals they need. Knorr said the cost could come down as drones can carry heavier loads.”

  14. Well, alrighty then – thick fog moved in while I wasn’t looking and I even heard some thunder in the distance! But at least there is a nice breeze out there! I texted Marica to make sure everything is ok there – no reply yet. She wasn’t on the board at all yesterday but she did put up the morning post for today so that’s a good sign, at least.

      1. No – I talked to her and she just posted – busy, busy, busy w/real estate deals and now they’ve completely changed all the paperwork. They’re going to visit their NY son and new grandbaby on Thursday so she asked me to do some opens for Friday, Saturday and Monday, when they will return.

Still…..that’s exactly WHY these assholes do that! To FORCE you to accommodate them – and that’s beyond low, IMO, especially from a family member of all things!!!     ENTIRE ARTICLE: “The House Foreign Affairs investigation into the disastrous Afghanistan withdrawal is facing new scrutiny after it was revealed that the committee’s chairman sought to protect the generals involved.

    According to the Washington Examiner’s Jerry Dunleavy, who recently resigned as the committee’s senior investigator looking into the matter, Rep. Michael McCaul (R-TX) spoke with General Mark Milley and General Frank McKenzie before their House testimonies. During that conversation, the congressman indicated he wanted to “protect” them and even went so far as to give them the questions they would be asked.

    McCaul’s deliberate decision to deflect from the failures of U.S. military commanders is perhaps best illustrated by a phone call McCaul had with Milley and McKenzie just ahead of the Committee’s public hearing with them.

    “I’m trying to protect you a little bit,” McCaul told McKenzie on that call (as I openly took notes), alluding to the righteous indignation of the Gold Star families at the military’s lack of candor.

    McCaul told the generals at the start of the call, conducted on speakerphone in his private office, that he had told other members of Congress that he would “use the gavel” if any of the congressional questions did not “show proper respect” to Milley and McKenzie.

    The Chairman also previewed to the generals all the questions he planned on asking them — telling them he was doing so “so there are no surprises.”

    McCaul also provided the generals with talking points regarding some of the more contentious questions surrounding the withdrawal. Further, he pointedly said that the responsibility for the massive failure does not rest on the shoulders of McKenzie and Milley.

    McCaul said he would be asking McKenzie about his decision to turn down the Taliban’s offer in Doha on August 15, 2021, which would have kept Taliban forces out of Kabul and allowed the U.S. to secure the city — a baffling decision by McKenzie, which, in my view, greenlit the Taliban’s final conquest of the Afghan capital. McCaul immediately began supplying McKenzie with excuses the general could use during the hearing, telling him, “I know you had a lot of constraints on troop forces. … My understanding is the restraints you had from the orders that you were given to follow that you just didn’t have the troop presence to even fulfill that even if it was a serious offer.”

    And McCaul made it abundantly clear to the two generals that he would be letting them skate from accountability: “As I’ve talked to you before, General Milley, you know, that’s where the facts are leading us, that this is not so much a DOD failure — it was a State Department and White House failure.” At the end of the call, McCaul told Milley and McKenzie that “I know that what happened in Afghanistan does not rest on your shoulders but rather on others in the administration.”

    Both McKenzie and Milley have long been derided by Republicans, with Milley’s behavior during the 2020 presidential transition being especially egregious. Specifically, the general called his Chinese counterpoint pledging to alert the adversarial nation if Donald Trump ordered any kind of attack. 

    Why McCaul wanted to absolve Milley and McKenzie of any blame for the Afghanistan withdrawal wasn’t immediately apparent after Dunleavy’s report was published. While the White House did and does hold the ultimate responsibility, many operational failures on the ground also demanded accountability, and both generals were at the forefront of that. McCaul should be expected to explain his behavior.”

    Special counsel Jack Smith on Monday asked a federal appeals court to reinstate former President Donald Trump’s classified documents case, after it was dismissed last month. 

    U.S. District Judge Aileen Cannon dismissed the case in July, claiming Smith’s appointment violated the Appointments clause of the Constitution, and that Smith had no authority to prosecute the case.

    The appeal was filed in the 11th U.S. Circuit Court of Appeals, where prosecutors claimed the ruling was “at odds with widespread and longstanding appointment practices in the Department of Justice and across the government,” according to the Associated Press.

    It is not clear how long it will take for the appeals court to make its decision, but even if it does reauthorize the case, the trial would not place before the November general election.

    The case includes allegations that Trump mishandled classified documents at the end of his presidency, which he kept at his Mar-a-Lago resort in Palm Beach, Florida. He was charged with dozens of felony charges related to the documents, including charges that he obstructed law enforcement and that he illegally retained the documents. 

    Trump pleaded not guilty.

    If the appeals court declines to reinstate the case, it could still go to the Supreme Court.
