What Shall We Make Today?

Today’s summer dessert is No-Bake Turtle Cheesecake.  (Disclaimer: the cheesecake is no bake; the brownie bottom is baked.)

No-Bake Brownie Bottom Turtle Cheesecake

Ingredients:

Brownie Layer

Box of your favorite brownie mix, plus ingredients needed per the box.

Jar of Caramel Sauce

Caramel Cheesecake

16 oz cream cheese, softened

1/2 cup granulated sugar

1/2 cup brown sugar

3/4 cup caramel sauce

1/2 tsp cinnamon

pinch nutmeg

4 oz cool whip

Toppings:

chopped pecans

caramel sauce

hot fudge sauce

Instructions:

Grease a 9″ spring form pan. Combine all brownie ingredients until smooth, pour into prepared pan and bake according to manufacturer’s instructions on box or recipe you are using.

Once brownie is done, remove outer ring of pan and allow brownie to cool completely.

In a large bowl, combine cream cheese and both sugars until smooth. Stir in the 3/4 cup of caramel sauce and spices until combined. Fold in cool whip and mix until everything is incorporated and distributed completely. Place the outer ring to the spring form pan back on. Top the baked brownie with the cheesecake mixture and spread into an even layer. Chill in refrigerator for 3-4 hours.

Before serving, garnish cheesecake with (leftover) caramel sauce, hot fudge sauce and chopped pecans.

This No-Bake Caramel Turtle Cheesecake will stay creamy and fresh for up to 6 days stored in an airtight container in the refrigerator.

  1. Oh my, Miss Pat! That looks irresistible! I could gain weight just looking at it! Oh man!!!

    I’m back at the Village and things are going pretty well. Sally Q’s new short hair cut looks really cute. The beautician who comes to the nursing home did a good job. It turns under in a nice page boy bob without any blow drying, etc. She’s been in a much better mood since getting on the new medicine. Celexa aka citalopram has been tested with patients with her disease and had some good effect on the ataxia symptoms as well as moods. The cerebellum degeneration causes ataxia patients to have emotional lability aka short fuses and anger hostility issues, obsessive compulsive issues, and to be illogical and unreasonable, and excessive startle reflex. We have dealt with all this for years. I’d say she is 30% better on all this (at least yesterday).

    Gonna have high heat/humidity index all weekend with afternoon thunderstorms. Typical Summer in the Deep South.

      the dessert does look good. I got all the stuff to make one later this week. hubby loves cheesecake–any kind!
      that’s great news about the new med. I swear, sometimes, the side effects can be worse than the disease.

  2. boys will be boys after all…after walz put pad and tampon dispensers in the boys rooms, they got …creative.

    It’s pretty wretched, actually. The boys looked at those tampon and maxipad machines and decided there were better things they could do with them than wait for their periods to come, too.

    They pulled the maxipads out, found that they had sticky backings, and with their creative juices going, decided to stick them all over the walls of the school, sometimes spelling out words and no doubt feeling very proud of themselves.

    Despite her tony upbringing, she didn’t have much academic record to go on, so instead of going to Stanford where pop taught, went to Howard University in Washington, D.C. where she claims she worked at McDonald’s. Her pals said she walked around campus carrying a briefcase, and belonged to an ambitious sorority, which I guess a lot of McDonald’s workers do.

    That didn’t last long. By the time she got out of college and moved to San Francisco, she was hobnobbing with the Pacific Heights set and going to their billionaire parties, where she hooked up with powerbroker Willie Brown, the top Democrat machine pol in the state and at the time Speaker of the Assembly in Sacramento. Willie was 60 and married, but liked having some arm candy on the side to strut around with for the papparazzi and Kamala, then 29, was all in.

  4. just got done cleaning and scrubbing the adirondak 3 seat bench hubby and i made years ago. i was thoroughly pissing off the hummers out front. i was doing it on the deck and i was wearing my purple sweatshirt cuz i knew i’d get wet and dirty. they kept trying to scare me off–i was maybe a foot from the feeder 6 of them are fighting over. 3 other full, perfectly good feeders, but they want THIS one…LOL

      1. i was holding the feeder again and a female landed on my hand to drink. then she flew up the side of my face and wanted to land on my glasses-the arm? hubby was laughing because i had this look on my face. he asked what i was thinking…

        i said, i was thinking please don’t crap on my face!

  5. i went out to the garden to see what, if any, damage came from the heavy rains. a lot of tomato vines were hanging over, but not broken. after i picked the ripe ones I was able to tie the rest back into place.

    i picked a huge zucchini hidden under the enormous leaves and discovered 3 other little ones–with bites taken out of them!

    my watermelons are still growing–except one little ball has disappeared…i imagine the thief who’s biting the zucchinis are trying everything in the garden…lol

    hubby’s pepper plants are gorgeous this year–there’s at least 12 more out there still growing.

    Democrats will have their convention later this month. Conventions are to determine the party’s nominee, yet that has already occurred… or has it? Democrats held a “virtual roll call” and claim this is how they determined their nominee. If that is true, that they have determined their nominee, then why have a convention? Is the “virtual roll call” legally binding? Or is the convention necessary for a legally binding nomination?

    If a convention is required then their Ohio problem still exists and Harris’ seizing of Biden’s campaign funds is even more sketchy. If a convention is not required then why have it?

        1. PF and Filly, I was reading a January, 2024 issue of the NYT over lunch a little while ago. There is an article about the Super PAC that is collecting advertising money for Biden’s campaig. The NYT said the Dims were ahead of the Pubs in PAC funding. I wondered what the PACs will do now that Biden has dropped out.

          1. the cackler is using biden’s id number in her presidential filings. which the FEC has said is suspect if not illegal but she had to to claim his war chest. perhaps she intends to take them too

    1. the oriole never came back that i saw…but i haven’t been watching. the gentleman (and his wife) that we get firewood from, just delivered the first load–oak–good stuff. but it needs to dry. so we’re gonna stack it and let it sit till next year hopefully.
      they brought their dogs–Willow and Jackson. Willow is a female boxer and Jackson is a male daschund. they bought laid under hubby’s truck while they dumped the load…smart dogs–it’s cool under there

  7. Just The News: “GOP presidential nominee Donald Trump’s campaign confirmed on Saturday that some of its internal communications were hacked. 

    The campaign cited that “foreign sources hostile to the United States,” were to blame, referencing a Microsoft report that claimed hackers from Iran “sent a spear phishing email in June to a high-ranking official on a presidential campaign.”

    Politico reported Saturday that it began receiving emails from anonymous accounts with documents related to the 45th president. The outlet says that it has not independently found the identity of the hacker. 

    “These documents were obtained illegally from foreign sources hostile to the United States, intended to interfere with the 2024 election and sow chaos throughout our Democratic process,” Trump campaign spokesperson Steven Cheung said in a statement.

    “On Friday, a new report from Microsoft found that Iranian hackers broke into the account of a ‘high ranking official’ on the U.S. presidential campaign in June 2024, which coincides with the close timing of President Trump’s selection of a vice presidential nominee,” the statement continued.”

    we thought we’d take a drive and see what the damage was from the storm that blew thru here. it’s immense! the towns to the west of us suffered greatly. there are corn fields with bent over stalks when the overflowing “creek” went thru. bean fields covered with mud. 2 power companies are working on removing downed trees from the power lines and everywhere you see mud and debris all over both towns. doors opened trying to air out wet houses. people trying to salvage what they can.

    two amazing bright spots: there was a greenhouse and a produce stand along the route and BOTH had signs out: FREE FOR THOSE IN NEED…baskets filled with veggies and fruits.
