What Shall We Bake Today?

Hubby likes pineapple upside down cake, so I thought I’d look for a version for Filly…our resident peach lover!  And I found one…Peach Upside Down Cake!

Ingredients

For the Topping:

4 tablespoons unsalted butter

1/2 cup light or dark brown sugar

1/2 teaspoon ground ginger

2 large ripe peaches, peeled, pitted, and cut into 1/2-inch slices, (or 1 1/2 cups frozen unsweetened sliced peaches, left frozen)

1 cup fresh raspberries

For the Cake:

3 tablespoons unsalted butter

1/4 cup granulated sugar

1/3 cup honey

1 large egg, at room temperature

1/2 teaspoon salt

1 3/4 teaspoons baking powder

1/8 teaspoon baking soda

1 1/2 teaspoons pure vanilla extract

2/3 cups all-purpose flour

1/4 cup plus 2 tablespoons milk

2/3 cups all-purpose flour

Instructions

Place a rack in the center of your oven and preheat the oven to 350 degrees F. Lightly grease a 9-inch round cake pan with nonstick spray.

For the topping, melt the butter over medium-low in a small saucepan. Add the sugar and ginger and stir until smooth and the butter is incorporated with the sugar, about 2 to 3 minutes. The mixture will be very thick, like melted caramel.

Remove from heat. If the butter separates from the sugar as it cools, simply stir it back together (a little separation is OK). Spoon the mixture into the prepared pan, then spread it in a thin, even layer, stretching all the way to the edges of the pan. I found it worked best to use the back of a spoon, then once the caramel was cool enough, gently press it with my fingers.

Arrange the peaches and raspberries in a single layer on top of the caramel.

To make the cake, beat the butter and sugar on medium speed in a large mixing bowl until smooth and creamy.

Add in the honey, egg, salt, baking powder, baking soda, and vanilla and stir until completely combined. Stop to scrape down the bowl as needed.

With the mixer running on medium speed, gradually mix in the first 2/3 cup of flour, then the milk, then the remaining 2/3 cup of flour, incorporating completely between additions and stopping to scrape down the bowl as needed. Once the last of the flour is added, mix very briefly, just until smooth. Do not overbeat. The batter will be very thick.

Transfer the batter to the top of the fruit in the pan, spreading it to the pan’s edges. The cake will seem thin but will rise as it bakes.

Bake for 25 to 30 minutes, until deep golden brown and a toothpick inserted into the center comes out clean. The top of the cake will spring back lightly when touched. Place the pan on a wire rack and let the cake cool in the pan for 10 minutes.

Run a sharp knife along the cake’s edge to loosen it from the pan, then invert the cake onto a serving plate. Let the pan rest upside down on the plate for 1 minute, then gently lift the pan away. Let cool on the plate for 10 additional minutes. Enjoy warm or at room temperature.

    sun was peeking out of the dark clouds, but it’s just about obscured now. hopefully this weekend i can check out the grapevines. from the window upstairs i can see several large grape leaves on the ground–from the wind and rain yesterday…i think. hopefully there are now pests munching the stems…

      Sunny so far – 62 at the moment with a slight breeze – but there are clouds on the horizon – light showers possible later this morning, w/the possibility of a thunderstorm moving thru later this evening. But, then, their predictions are never on target so…..I’ll follow my usual routine of keeping my eye on the skies, ready at the drop of a hat to run out and bring in feeders/plants/flag.

      Wheezer snuck onto the patio again while I was filling the jelly feeder late yesterday. Around then, I usually shut Jake in the BR and uncover the doggie door to give her the opportunity to check out the house, if she feels like it. Just a part of one of my many daily routines, weather permitting. When I came back onto the patio, there she was, grooming herself and waiting for food. She ate a good bit, then left and I can see that she has eaten more overnight.

          That is what worries me the most, those two being face to face with no glass between them. That would assuredly be followed by a visit to the vet, which opens up another kettle of fish since he’s had no vaccinations and her front claws would tear his ass up = $$$$.

    Yale Law Professor Has Brilliant Plan for Trump Legal Team to Overturn ‘Guilty’ Verdict Before the Election

    “Could Trump actually be put in jail? You bet he could.”

    “Each count of this 34 count indictment has a maximum penalty attached to it of four years. Well, that’s four times 34. That’s a maximum sentence, prison sentence of 136 years.”

    “Will he do that? Of course not. He won’t. But could he sentence him to some incarceration? Yes, he could. Will he? Nobody knows.”

    Yale Law Professor Jeb Rubenfield, who teaches Advanced Constitutional Law, counseled the Trump legal team on a course of action that could potentially see his ‘guilty’ verdict overturned before the 2024 election.

    “Now, when is sentencing scheduled for? Well, Judge Merchan has set it for July 11th.”

    “Will something happen between then and now? Yes. Trump’s team will ask for a judgment notwithstanding the verdict.”

    “They’ll ask for Judge Merchan to throw out the jury’s verdict and find Trump innocent despite the verdict, and Judge Merchan will turn that down.”

    “Then there will be arguments about what the sentence should be briefing on both sides, possibly even a hearing. Then on July 11th, sentencing will be announced. And at that point, that triggers the Trump team’s right to appeal.”

    “To what court would they appeal? Well, they would appeal to New York’s appellate level court… And after the appellate court rules, then the case could go up to New York’s highest court, which is actually called the Court of Appeals… And after that, the case could go up to the Supreme Court.”

    “And ultimately it might well go to the Supreme Court where finally we will have a definitive, conclusive ruling on whether the conviction was constitutional or not.”

    Professor Rubenfield identified a massive, glaring problem with this legal appeals process.

    “Of course that would take years, and that’s a problem here. Why is it a problem? It’s a problem because the election will have taken place and if this conviction is unlawful and unconstitutional, it could have an effect on that election.”

    “There are surveys, many polls in which a substantial number of American voters say they will not vote for Trump if he is convicted of a felony. Many independents say that, many Republicans even say that. If that’s true, an unlawful conviction in this case could interfere with and in fact decide the outcome of the next election of the next President of the United States”

    “Even if the conviction were reversed on appeal years later, that effect could not be undone in legal terms. That’s called IRREPARABLE HARM. The irreparable harm, once again, is that a ‘convicted felon’ could affect the election, could decide the election.”

    “And if so, then District Attorney Bragg and Judge Merchan will have UNLAWFULLY INTERFERED with the election and decided the outcome of the next election through unconstitutional means. And no years long appeal could have any effect on that.”

    This is the critical point that Professor Rubenfield makes: There is another way.

    “Well, is that where we are? So are we stuck with that possibility? Well, believe it or not, there is one other avenue that the Trump lawyers could pursue. They could sue in federal court and ask for an emergency temporary restraining order.”

    “Restraining order of what? Well, let me tell you something that you might not know. You’ve probably been reading in the press if you’ve been reading about this case. The Trump is already a “convicted felon.” The jury has convicted him. He’s a “convicted felon.”

    “Well, guess what? THAT’S NOT TRUE.”

    “You’re not a convicted felon because of a jury verdict. You’re not convicted unless the judge enters a judgment of guilt against you. The judge still has the power, as I told you before, to throw out that verdict and enter a judgment of acquittal. You are not convicted until the judge enters that judgment of guilt.”

    “Now in New York, it’s very likely that Judge Merchan will enter that judgment of guilt against Trump on the same day that he issued sentencing. That’d be July 11th.”

    “So what would this federal case be about in this federal action? Trump would sue District Attorney Bragg and other state actors and ask the judge, the federal judge, for an emergency temporary restraining order halting Judge Merchan from entering that judgment of guilt until the federal courts have had an opportunity to review and rule on the serious constitutional arguments that exist here.”

    “Let me tell you why I think that might be a very important thing to happen. Because going after, criminally, a former president of the United States and somebody who is running for president now, that’s a VERY BAD LOOK for this country.”

    “It’s an especially bad look when the folks bring in the case and the judge deciding it are members of the opposing political party. And it’s an even worse look when the crime is so unclear that the state is hiding the ball about what the actual charges are right up through the trial and indeed into the trial.”

    “And even now, we don’t know exactly what the jury found Trump guilty of. If you’re going to go after a former president and somebody who’s running for president now the poll leading candidate, if you’re a member of the other party and you’re going to do that, YOU BETTER HAVE THE GOODS. You better not be pursuing some novel legal theory where you have to hide the ball. It’s not even clear what the charges are.”

    “That could be a very dangerous precedent for this country. A very bad and dangerous precedent.”

    “That’s why it’s so important for a federal court to review the constitutionality of this prosecution and decide, was it constitutional, was it not?”

    “The only way to achieve that before the election takes place is for the Trump team to file an action in federal court and ask the federal court to temporarily hold off the entry of the judgment of guilt until the federal courts and maybe the Supreme Court itself can on an emergency basis adjudicate the likelihood of success of these constitutional arguments.”

    “If that doesn’t happen, then that IRREPARABLE HARM danger that I mentioned before, well that’s where we are.”

    “But if it does happen, the nation could get a ruling from the federal courts, even the Supreme Court of the United States, before the election takes place.”

    “Maybe that’s what the nation needs and maybe that’s what the law requires here. So if I were Trump’s lawyer, that’s probably what I would do.”

        they are not looking to better themselves. my Dad had to quit school at 14 because both his parents came down with influenza and he had to get work in a factory to support the family. he never had a chance to finish to school, but he took whatever job was available to support his family. after he married my mom, he was a milkman till the dairy closed, then a general laborer. one day after coming back from the labor hall finding no jobs available, he saw a crew putting in curbing. he stopped and asked the boss there if they needed any extra help. they said sure, signed him on and dad had work again.
        he was grateful to be working and providing. But these people are LEECHES. they come for the free stuff–and feel ENTITLED to everything.
        they disgust me.

        1. My Dad worked 2 jobs and my Mom was a teacher. When he first started as a clerk at the PO, he also worked at night unloading trucks – my aunt’s family owned a trucking company in Norfolk. I often worked extra jobs as well as a single Mom. You do what you gotta do to support your family and yourself!

          1. exactly! before I had any desire to go to college, i worked at the factory during the day and nights and weekends at Roy Rogers–just to keep busy and put money aside–for what i had no clue–but I’m glad i did.
            then after my son was born and we were alone, i worked days, went to college in the evenings. and on the weekends? I STUDIED and spent time with my child. kids today are pampered…but illegals are totally unrealistic in their demands.

    It is with great sadness and anger that we observe the death of the judicial system in America. Steve Bannon sought judicial review of the illegal demands of a runaway congressional committee, unlike any ever comprised. It was literally a matter of first impression. And they’re sending him to prison – not just to torture him but to torture us. He didn’t even get a real trial. His defenses were stripped by a judge who hates him. The ramifications of these actions will reverberate in a very dark way for a long time. I’ve begged House leaders to advance legislation to expunge these contempt proceedings on Bannon/Navarro/Scavino/Meadows. They’ve refused. Likely because we don’t have the votes. We need stronger leaders. November can’t come soon enough.

  9. Just The News: “A102-year-old U.S. World War II veteran died while traveling to France for a ceremony commemorating the 80th anniversary of the D-Day invasion. 

    Robert Persichitti, of Fairport, NY, flew into Germany with a group from the National World War II Museum, and was on a ship traveling down the coast of Europe when he suffered a medical emergency and had to be airlifted to Germany, according to an NBC affiliate based in Rochester, N.Y. He passed away on Friday morning.

    Persichitti served in the Pacific Theater and witnessed the raising of the U.S. flag by Marines on Iwo Jima on Feb. 19. 1945, the Stars and Stripes reported. 

    After the war, Persichitti taught carpentry in the Rochester school system. He remained active in education while in retirement, as he would regularly visit New York school children to teach about World War II. 

    Al DeCarlo, Persichitti’s friend who traveled to Europe with him for the D-Day ceremony, said the doctor played the veteran’s favorite singer, Frank Sinatra, as he passed away. DeCarlo said he believed Persichitti would have “no regrets” about the trip. 

    “He taught us how to live every day to the fullest and he left his tank empty,” DeCarlo said.”

    Our Take: This narrative deployment is backfiring so spectacularly that I actually popped some popcorn to watch Kaitlyn Collins and Andy McCabe panic on air about facing accountability. ‘I will be your retribution,’ they recalled Trump saying with furrowed brows and super serious faces. McCabe wants all of us to be terrified of 45 reforming the DOJ and FBI.

    The problem they have is that at least 68% of Americans — of all stripes — are most concerned about government corruption as the greatest threat to democracy. And that was in October 2022. It’s definitely more now. Retribution for corrupted institutions is exactly what Americans want. As a result, the social backlash is enjoyable to watch. Trump is absolutely correct: He has every right to hold people accountable. It’s a campaign promise, and the people will hold him to it.

    1. wow. my son had to jump thru several hoops and interviews just to adopt a shelter kitten. (the kitten had one eye and testicle issues) and they called me (!) to ask if i would take care of the kitten if something happened to my son.

        1. went they bought the first dog, they had to have a recommendation and a report from their vet vouching that they treated the cat well. (this was a breeder who wanted to make sure before they sold the dog) when they bought the second, they brought the first with them so the breeder could see how well she was doing.

When I sold my red Aussie, Jax, to an older couple who lived on a small farm in southern VA, I told them it was contingent on my visit to see him in 10-days to 2 weeks to see for myself that it was a good home for him. I set the price high ($200) to ensure that they really wanted him and didn’t cash their check until after I saw how happy and relaxed he was – nowhere near as hyper as he was with me.

            I was working 8 hr. days so he was home alone far too much and he needed much more exercise and running time than I could give him. Since they were retired, he would be with someone all day and actually doing things – he had a job and Aussies need a job. The man walked his fence lines every day and Jax always accompanied him and thoroughly enjoyed the grandkids when they visited. They had a couple of horses and a donkey, IIRC, and he loved “herding” them.

            It was funny how that worked out. I had placed an ad at an on-line pet finder site; within minutes of the ad going on-line, I got a phone call from a woman who said their red Aussie had died of old age and they wanted another one but she wanted to surprise her hubby. Unbeknownst to her, he also saw the ad and not an hour later, I got a call from him. It was quite clear that they REALLY wanted him and it turned out to be the perfect fit.

        1. i do not generally like cats, but i would have taken Jack in a heartbeat. he was the sweetest, cuddliest cat i ever met. once you sat down and he sniffed you, he jumped into your lap and snuggled under your chin.
          his new cat has to contend with the 2 dogs who want to play but Walter is not interested…lol

    I worked for a company that hired mystery shoppers for restaurants/bars, no license needed. It was my job to type up their reports in the proper format and correcting typos, grammatical errors, etc., etc. Most of the time I worked from home with a fax program on my computer to send the docs to the office. I only had to go into the office once a week. I was taking care of my 9 mo. old grandson at the time so it was a good job to have at that time. I would take him with me to the office; most of the typists brought their kids with them.

          i make it a point if a clerk or a server is helpful and polite and just good at their job–be it walmart, texas roadhouse or just a long john silver–I find a manager or go on line to their websites and talk them up.

  13. just saw another mom with her fawn…but this doe still looks pregnant. the other does after having their babies look sleeker i guess. she is still quite round and if i just saw her without the fawn, i would say she’s pregnant–maybe with twins–that’s how big she is. never saw any like this before.

    1. Hmmm….I was wondering if she could still have another one in utero but it is very rare for them to be born more than 20 minutes or so apart. It is instinctual to get the birth over as quickly as possible because of the predators.

          1. seems odd. we usually see twins but not this year. and we were feeding them the corn/apples blocks this winter when food was scarce.
            there are 2 sets of twins that still hang out together–now that the deer have separated (during spring birthing time). one set are timid females and the other are young bucks.
            just seems weird. i hope we get to see this mother closer soon

    I’m surprised that the press isn’t commenting on Biden’s speech yesterday where he confessed to being a Soviet spy. He said he has known Putin for 40 years. Putin was unknown to the western world before 1999 because he was an undercover agent for Soviet intelligence.

    Since we are told constantly Biden doesn’t lie, he could only have known Putin as a fellow agent.

    /sarc but the point is: he’s a soviet spy or a liar.

Laura Ingalls Wilder had an older sister who went blind and attended that school – she had scarlet fever, which was believed to be the cause. It was a world-renowned school for the blind located in Vinton, IA.

    Those complaints filed since May 16 “appear to be part of an orchestrated campaign,” according to Pryor, whose appellate court reviews cases arising from federal district courts in Florida, Georgia and Alabama.

    This is more fifth-gen warfare. Good chance this is also part of a wrap-up smear. Will future articles in the Washington post and Wiki soon be writing that Judge Cannon had thousands of complaints lodged against her? Will these all somehow end up being on the top of the Googlenet search results? Time will tell.

    More than 1,000 complaints were made against Cannon by liberals seeking to have her removed from the case for supposedly ruling in Trump’s favor throughout the proceedings, CNBC reported. The Eleventh Circuit’s judicial council ordered the court clerk to not accept additional complaints against Cannon if they are similar to the four Pryor dismissed. Cannon’s orders in the classified-documents case are subject to the normal appeals process.

    Former federal prosecutor Glenn Kirschner kickstarted the campaign to remove Cannon, urging listeners of his podcast to file complaints against her. To accompany his episode explaining why he believes she should be removed, he posted a YouTube video instructing fans how to file a complaint against Cannon.

    “A lot of people took advantage of that step-by-step video, and they submitted those judicial complaint forms,” Kirschner said on his podcast.

    Democrat judges protect their own people:

    FBI Lawyer Clinesmith assigned to the Mueller/Weissman investigation of President Trump falsified evidence to obtain a search warrant on President Trump and pleaded guilty to a federal felony. As luck would have it Clinesmith’s case was randomly assigned to (drumroll) …JUDGE BOASBERG! Clinesmith knew that the Russian Collusion Dossier was a hoax because the guy who wrote it told him!

    Judge Boasberg is the “Go To” judge that handles all of the Bolshevik clean-up in Washington DC. Judge Boasberg not only doesn’t sentence Clinesmith to federal prison for 20 minutes but gives him probation and lets him keep his law license!

    Doesn’t the Trump appointed judge that gave Bannon and Navarro four months in prison for nothing see any moral equivalency in these disparate punishments?
