What Shall We Bake Today?

Georgia and I were discussing muffins a little while ago and I thought I’d post this recipe for Good Morning Sunshine Muffins!

Good Morning Sunshine Muffins

Ingredients

1 cup all-purpose flour

1 cup whole-wheat flour (or substitute another cup of all-purpose flour)

1 cup rolled oats

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1 cup whole milk (can sub unsweetened almond milk or soy milk)

3/4 cup applesauce

3/4 cup packed brown sugar (use 1/2 cup if you prefer a less-sweet muffin)

1/3 cup vegetable oil (can sub melted coconut oil)

1 egg

2 teaspoons pure vanilla extract

1 1/2 cups carrot (grated (about 3 medium carrots))

1/2 cup + 2 tablespoons sweetened flaked coconut

1 cup fresh pineapple (cut into 1/4-inch dice or “tidbit” size -or- use canned pineapple tidbits, drained -or- 1 cup frozen pineapple tidbits)

Instructions

Preheat oven to 375 degrees Fahrenheit. Grease or place cupcake wrappers in a standard-size, 12-cup muffin pan.

In a large bowl, whisk together the flours, oats, baking powder, baking soda, salt, cinnamon, and ginger.

In a medium bowl, whisk together the milk, applesauce, brown sugar, vegetable oil, egg, and vanilla extract.

Pour the wet ingredients over the dry and whisk just until all ingredients are incorporated. Gently stir in the carrots, 1/2 cup coconut, and pineapple.

Use a cookie scoop to divide the mixture between the muffin cups. Cups should be filled to the top.

Sprinkle tops evenly with remaining 2 tablespoons coconut.

Bake for 20 – 25 minutes or until muffin tops spring back when poked and a toothpick inserted into the center comes out clean.

Allow to cool for 5 – 10 minutes before removing from the muffin tin. Serve plain or with butter, if desired.

Store in an airtight container at room temperature for 2 – 3 days, or freeze.

    only about 42* here this morning but the sun is trying to break through some clouds. a male and female oriole were on the deck railing when i came down singing for breakfast…lol. While i was tying the feeder tot he railing they were scolding me for sleeping so long…LOL

    the hummers immediately came to their feeders when i put them out too

    1. Good morning, Pat! We’ve got 45 and partly cloudy, w/storm clouds building to the SW. Could get up to another inch of rain but it should be out of here by tonight! The entire state is now officially out of the drought; there is a flooding threat in some places. I noticed a LOT of fields with standing water that haven’t been planted yet – they’re a muddy mess. But next week is supposed to be gorgeous, in the high 60’s, low-to-mid 70’s w/mostly sun. I will be getting the cantaloupe planted next week – it will be a while before they are big enough to need the trellis so that gives me time to get it up. First I have to rake it and pull out the clumps of grass.

      I do love spring and getting my hands in the dirt again! I had so much fun planting flowers in my various pots last night. But, man, was my back hurting by the time I got finished. Well, I’m not “finished,” per se, but I’m 3/4 there!

      I noticed a bright green flag stuck in the ground between my driveway and the evergreens on the east when I got back yesterday but didn’t investigate. I then saw the tilled bed and thought maybe Chad had left it to give me a heads up that he’d been there. Turns out, it was Jason and his wife who put the flag there to highlight a nest of baby bunnies in the ground so I wouldn’t drive over it! LOL

      I called Chad to thank him – he didn’t even know I wasn’t home, but he did say he was kind of surprised that I didn’t come outside when I heard the tractor. Turns out, he is a gunsmith but not the one my brother visited – he didn’t know him. I asked him about payment and he said just get a check to him whenever. He does live in the house with the shotgun shell mailbox so I’ll just walk it down to him. He seems to be a VERY busy man! When he answered and I told him my name, he didn’t even remember me until I mentioned tilling! LOL – his front yard has a lot of decorative displays every year.

        1. Oh, yeah! A couple of years ago you might recall I told the story about mowing my back yard and going over what looked like a bare spot about 10″ long and 5″ wide. Right after I went over it, the thought crossed my mind that it might be a nest and I looked back – sure enough, there was a baby bunny hopping away towards the fence line. I figured there were probably more and started pulling all the leaves and grass out of the hole – sure enough, there were 3 more bunnies. I pulled them out and sent them off after their compatriot thru the fence – I expect/hope they ended up underneath the evergreen, where a lot of rabbits nest.

            1. No, they were just scared and they were so tiny, not more than a few weeks I would guess. Even if they did bite, they couldn’t do much damage.

        my son’s first cat (the one eyed one) was SOOOOO sweet. he would cuddle in your lap and if you started petting him and then stopped, he would gently tap your hand to continue

    1. Oh, those dastardly dandelions! Now I’m waiting on Matt to do the spraying to take care of those, Texas stickers and thistles, and fertilize the grass. I’m guessing that will happen next week. I pulled some huge ones last night in the bed around the cottonwood tree. Big honkers!!! I always try to get as much of the root as possible.

    Using grand jury subpoenas and gag orders to companies like Google, they deployed a broad dragnet to covertly collect detailed logs of their overseers’ patterns of communications.

    They did not flag the important constitutional, privilege, and #whistleblower confidentiality issues implicated by this dragnet.

    Rather, they simply sent a list of our phone numbers and email addresses—w/o mentioning we were attorneys advising committees doing oversight of DOJ.

    DOJ convinced the court to order service providers like Google to simply comply and shut up about it.

    What did @TheJusticeDept tell court? The whole truth, a series of misleading half-truths, or something else?

    Who knows. It’s all still sealed more than half a decade later.

    Well, this is America.

    It’s supposed to be a free country, where court records are open to the public and the First Amendment guarantees our right to know what our government claims in court—so we and our elected leaders can figure out if its BS.

    Due process: notice and an opportunity to be heard.

    Is that too much to ask?

    Transparency = accountability.

    There is no legitimate reason to keep the government’s ex parte claims in support of these gag orders secret after all these years.

    Breaking News: Trump’s Defense is tying Cohen to an extortion attempt on Trump.

    1) Stormy’s former attorney testified that they never made a deal with Trump. The deal was made with Cohen.

    2) The banker testified that it was Cohen that asked him to open two accounts quickly, not Trump.

    3) It was a low level accountant that listed the attorney fee under attorney fee in Trump’s bank register not Trump.

    The amount paid on that transaction to Cohen was $420,000 for attorney fees in which Cohen is claiming that $130,000 was for a deal made with Stormy that Trump said he knew nothing about. The check from shows that it was cashed in 2017.

    So far in the Trump hush money trial, it was Cohen who did all of the actions they’re accusing Trump of doing.

    An orangutan named Rakus hit a rough patch in the summer of 2022. 

    Researchers heard a fight between male orangutans in the treetops of a rainforest in Sumatra, Indonesia; a day later, they spotted Rakus sporting a pink wound below his right eyelid. 

    A chunk of flesh about the size and shape of a puzzle piece was missing. When Rakus, who is most likely in his 30s, belted out a long call, the researchers noticed another wound inside his mouth. 

    Over the next several days, researchers followed Rakus at a distance — and saw something so surprising they wound up reporting it in great detail in the journal Scientific Reports. 

    According to their study, published Thursday, Rakus was observed repeatedly chewing on the leaves of a particular liana plant over several days. The climbing vine is not a typical food for orangutans, but it is known to humans as a pain reliever. 

    On at least one occasion, Rakus made a paste from the chewed leaves and applied it to his face. It’s the first time an animal has been seen applying medicine to a skin wound.

  7. Plantings this year: In the hanging baskets, white Petunias this year. I put red Salvia in my big urn near the 3 red Begonia plants that I managed to over-winter from last year. Bright yellow French Marigolds (full sun all day) for the metal decorative wheelbarrow – always yellow or orange, to complement the Trumpet vine nearby on the trellis.

    I bought some dark purple Petunias (from WalMart – the others I got at Menards) for the pot in the chair near my Uncle Sam statue (in really sad condition – I’m going to have to toss it soon – I’m just not up to repairing it again and repainting it) and ladder with the purple Clematis on it. I had a white Petunia in it last year and I’m waiting to see if it comes back – sometimes they’ll surprise you!

    If it does come back, I’ll put the purple Petunias in hanging pots on the exterior of my patio – I’m going to use 4 of my metal beer buckets this year. The big pot in my wood burning stove out front contains Lobelia this year – pale purple. I’m still waiting to see if the Vinca I planted in front of my front porch come back, as well as the ones in my converted seed feeder.

    I’ve ordered 2 bare root bright yellow Milkweed plants for my tire tower in the back yard – full sun all day, attracts the bees, butterflies and hummers. They are perennials but, since the tire tower is raised above the ground and subject to freezing, I’m going to cover it this fall with a black contractor trash bag before the freeze sets in – hopefully, that will provide warmth from the sun thru the winter. Another experiment!

    As for the 2 huge round planters next to my garage doors – still TBD. I’ve also got the dark red Clematis that I’ve been tending and babying along for 2 years to plant on the other side of the glider under the Willow – not sure it will get enough sun but they are tough plants and usually find a way. Hard to kill off Clematis!

    I’m really hoping my new yellow Lilac bush gets big enough to bloom this year – can’t wait to see that! I do love spring when everything is coming back and growing. All of my perennials are popping, too.

      i planted a clematis the first year we were here…we brought the railing from our daughter’s crib with us in the move (goodness knows why) and i thought it would make a nice climbing basis for the plant. the deer munched it to the ground and if it comes back up, they eat it. sigh

Foreign countries should not be allowed to donate to US schools, period! And if they want their citizens to attend, they must pay FULL price, if not more, depending on their needs, such as translators, etc.

  14. Still mostly sunny w/a steady wind, up to 63; just planted the French Marigold plants in the wheelbarrow pot. I brought it in and sat down on the patio to do it; while I was in the process, Wheezer stuck his head thru the doggie door. When he saw me there, he backed out, then looked in a couple more times before finally entering, skirting me and going to the food dish. When I got up to bring the pot inside, he moved away until I went inside. He’s been eating quickly and moving on but returning more frequently during the day.

        plus there’s all sort of new positions–more teacher’s aides, more counselors for traumatic events…all kinds of extra UNION staff positions.

            But that is of no concern to the CTU, based on its list of demands. The union intends to require every school to have at least one sex-neutral restroom and for every counselor and social worker to undergo training on “LGBTQ+ issues” each year. It also specifies that no union member may be compelled to tell a student’s parents when the student rejects his or her sex. Since when does a labor union get to decide what parents are allowed to know about their own children?

            This isn’t the only way the contract veers into social issues and away from academics. CTU wants taxpayers to pay for unused school facilities to be turned into migrant housing and to pay $2,000 in “support” to each unaccompanied minor. Ever-hungry for more members, the union also insists each school must have a “newcomer liaison.”

            The union is also pushing for policies that will make its youth violence problem worse. The contract put forward by CTU calls for “police-free schools,” security guards (presumably members of the union), and the creation of school safety committees at each school chaired by — who else? — the union delegate or the delegate’s appointee.

Henry Cuellar and his wife were indicted Friday on conspiracy and bribery charges, reportedly in connection with a Justice Department probe into ties between U.S. business leaders and the former Soviet republic of Azerbaijan. The possibility of an indictment has been known for years.

    From 2014 to 2021, Cuellar and his wife accepted nearly $600,000 in bribes from an Azerbaijan-controlled energy company and a bank in Mexico, according to the Associated Press. Disturbing surveillance footage shows the teen, who was 17 at the time, pushing the teaching aide “to the ground before kneeling and punching her in the head and back” over a dozen times.

    In the suit, Depa’s lawyers claim that Matanzas High School employees knew of his “disabilities, triggers, and problem behaviors,” along with his history of wrongdoings, including spitting, shoving an aide, intimidating school staff, and shouting at his teachers. It also highlights that because Depa is “a large black male student, he is subjected to misperceptions and racism.”

    The lawsuit noted that “the school and staff working with him and the district knew that the electronics, specifically the Nintendo and its use on a school campus, was a trigger for escalating behaviors,” reads the filing, which describes the teen as a “ticking time bomb whose needs, despite concerns and warnings, were completed disregarded by the district.”

    Continuing, Depa’s lawyers argued that the brutal attack on Naydich, who suffered from multiple broken ribs and a concussion, was due to the school district’s “failure to address his needs or have staff around him” with the proper training….
