What Shall We Bake Today?

Since Easter is at the end of the month, I thought I’d post a carrot cake recipe!  It uses grated carrots instead of baby food carrots so I like this texture better.  It takes a bit more prep time, but it’s better in my opinion.

Ingredients

Ingredients For Cake Layers:
2 cups Carrots, grated
4 large Eggs
2 cups Granulated Sugar
1 cup Canola Oil
2 cups All-Purpose Flour, sifted
2 teaspoons Ground Cinnamon
3/4 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
1/4 teaspoon Ground Nutmeg

Ingredients for Cream Cheese Frosting:
1/2 cup Butter
1 8 oz package of Cream Cheese
1 teaspoon Vanilla Flavoring
3–3/4 cup Confectioners Sugar
2 to 3 Tablespoons Milk as needed
1 cup chopped Walnuts, optional


Instructions

Make the layers:
Grate the carrots, set aside.
Place eggs in a large mixing bowl. Add the sugar and the canola oil. Mix on low-medium speed with mixer.
In another large bowl, place the level cups of sifted flour. Add the cinnamon, baking soda, baking powder, salt and nutmeg. Whisk all the dry ingredients together until combined.


Gradually add the dry ingredients into the egg mixture, beating just until combined.
Fold carrots into batter with a spatula or large spoon.
Prepare your two 8-inch cake pans with cooking spray.
Divide batter between the two pans.
Bake at 350F degrees for 30-40 minutes or until done.
Remove from oven. Place on wire rack and cool for 10 minutes.
Turn the cakes out of the pans, place layers on wire racks. Let cool completely.

Prepare the frosting:
Place butter and cream cheese in mixing bowl. Cream together until smooth and fluffy. About 4-5 minutes. Add vanilla flavoring. Mix lightly. Gradually add the confectioner’s sugar. Add enough milk to reach desired spreading consistency. (Add chopped walnuts if desired.)
Spread frosting over layers and decorate as desired.
Store any leftover cake in the refrigerator
Enjoy!

    Looks like the perfect carrot cake recipe. I like the grated carrot version of carrot cake best. Down in the deep deep South, we use pecans.

      1. One of the restaurants in Athens, GA, home of UGA (GO DAWGS!) made Good Morning muffins with grated carrots, pineapple, coconut, pecans, raisins, bran and other good stuff… oh man they were good!

          1. I tasted both batches of cookies this morning (my breakfast getting ready to go back to the Village) and I liked the crispy eggless ones best. So I brought both batches, wrapped individually to put in her freezer. Sally tasted one of each and liked them both. Now she has a ‘stash’ of treats with chocolate and pecans.

        1. i found a recipe called Good Morning Sunshine muffins…here’s the list of ingredients…if this close?
          1 cup all-purpose flour
          1 cup whole-wheat flour (or substitute another cup of all-purpose flour)
          1 cup rolled oats
          2 teaspoons baking powder
          ½ teaspoon baking soda
          ½ teaspoon salt
          1/2 teaspoon ground cinnamon
          1/4 teaspoon ground ginger
          1 cup whole milk (can sub unsweetened almond milk or soy milk)
          3/4 cup applesauce
          3/4 cup packed brown sugar (use 1/2 cup if you prefer a less-sweet muffin)
          1/3 cup vegetable oil (can sub melted coconut oil)
          1 egg
          2 teaspoons pure vanilla extract
          1 1/2 cups carrot (grated (about 3 medium carrots))
          1/2 cup + 2 tablespoons sweetened flaked coconut
          1 cup fresh pineapple (cut into 1/4-inch dice or “tidbit” size -or- use canned pineapple tidbits, drained -or- 1 cup frozen pineapple tidbits)

            My next muffins will be cornmeal with fresh cut corn, cheese, onion and sweet peppers. To go with all the vegetable beef soup I made out of the frozen vegetables we used as cold packs when we thought Sally’s knees were sprained – before we knew she had broken bones. It’s good soup, but needs some cornbread. Muffins freeze well.

          2. I might use tidbits or crushed pineapple instead of applesauce. Almond flour might be ok in this. I might use 1/4 cup dk brown sugar and 1/4 cup monk fruit (erythritrol-sp?)

          3. It’s a really good muffin recipe – and depending on what I have on hand, and how much fiber we want, I would possibly try these optional variations:
            -Exchange crushed pineapple for tidbits and leave off the applesauce
            -Whole wheat flour
            -Ground flax seed
            -Wheat Germ
            -Wheat bran
            -Chopped fresh apple
            -Cranberries
            – Pecans, of course! :8->

    not sure why the picture I posted didn’t appear at first, so i changed it. I prefer 2 layers to three–but to each his own.

    it’s about 26* this morning…gonna be a busy one for me…got some cleaning and do ahead cooking to do.

    1. Good morning, Pat! Went to sleep too early last night and woke up at 2:30; finally hauled my ass out of my recliner around 5:30 and I’ve been entertaining myself watching some of Kea’s videos. It was 38 when I got up and down to 36 now; we may hit 60 today! Remind me what plans you’ve got and whether you’ll be around or with family this week-end, please?

      I’ve always loved carrot cake but it doesn’t taste right these days. My favorite used to be German chocolate layer cake – every BD when Mom asked what I wanted it was that – but carrot cake supplanted that.

        hubby just noticed that the raccoon visited last night. it avoided the sprayed area instead it dug into the ash bucket we left on the side deck! nothing in there but ashes from the wood stove. it left ashy footprints all over the side deck and furniture outside!

    1. I’ve been watching parts of that expose on ID. I have always put a lot of blame on the parents but I saw one interview with a Father – IDR which young Nickelodeon male star it was – who told his son over and over again to avoid a certain person but caved to allowing him to take the reins with his son’s career at the steadfast insistence of his son. I think he was 14 or 15 at the time. Poor man was in tears.

        1. Oh, yeah, we’ve known that for years with women; but I have to wonder if kids were treated like that way back in the ’50’s and 60’s? I seriously doubt it. I’m sure it happened but it wasn’t as rampant as it is now. ‘Course, EVERYTHING has been sexualized now for nefarious reasons.

            1. I think it’s mostly about trying to belong, to be accepted in the group, to be successful. With no strong influence by their side, they are very susceptible to that pressure – “Ah, c’mon, man – everybody does it! What’s wrong with you?” What young ego can withstand that on it’s own?

    Our Take: “We talk a lot about narratives, and the role of the media in creating the false reality. That’s the communication part of the communists’ public-facing strategy. The change management part is to redefine the underlying infrastructure – the people, their beliefs, and the rules, norms, and metrics associated with the desired change outcomes.

    Just The News: “The Republican-led Kentucky Senate on Thursday approved legislation that would mandate a special election to fill a vacant Senate seat and strip the governor of the power to appoint a temporarily replacement to finish a term.

    The Senate approved the measure 34-3, sending it to Democratic Gov. Andy Beshear’s desk, the Associated Press reported. The state previously approved a plan restricting the governor’s choice of replacement to three candidates selected by leaders of the same party as the senator who held the vacant seat. Both chambers passed the law with veto-proof majorities, Politico noted.

    The measure comes after Senate Minority Leader Mitch McConnell, R-Ky., announced in February that he would step down as party conference leader following the November elections. He does, however, plan to complete his Senate term, which is set to expire in 2027.

Personally, I think he’ll vote for Trump, not RFKJ, especially with that lunatic VP he chose – he only put it out now so he can register in the states that require both names in order to accept a non-affiliated candidate on their ballots.

  11. Well, bye-bye sunshine….I was hoping it would stay sunny longer but, oh, well. Rain doesn’t bother me. I had thought about going to Norfolk late so I could take my camera and take the backroad home for some sunset pics but there won’t be any decent pics with clouds. And I don’t take that road when it rains – all the trucks turn it in a slippery mess!

      1. I’m back – my road was ok when I left and I took the main road, which is all cement. But as I was turning into my road coming home, he was in the process of grading the road, which uncovered all the moisture. It is a little muddy but not bad and I had no issues.

    A federal court struck down a Biden administration rule Wednesday night requiring states and cities to set climate targets for transportation.

    Judge James Hendrix, a former President Trump appointee, agreed with the Republican-led states that sued over the rule that the Biden administration did not have the authority to require them to set the targets.

    Hendrix argued that the administration was not authorized under law to include environmental benchmarks in states’ assessment of highway “performance.”

    He wrote that the law referring to the “performance of the Interstate/National Highway Systems” refers to “the infrastructure’s effectiveness in facilitating travel, commerce, and national defense—not environmental outputs of vehicles using the systems.”

    The rule, from the Federal Highway Administration, required state and local transit authorities to set targets for decreasing planet-warming emissions and report on its progress. It also set up a national framework for measuring and reporting transportation-related emissions.

    A spokesperson for the highway administration, which is part of the Transportation Department, said the agency was reviewing the decision and figuring out next steps. The spokesperson stressed the administration’s commitment to combatting climate change.

    Meanwhile, congressional Republicans cheered the court’s action.

    “This was a clear case of blatant overreach by the Biden Administration from the beginning, and we commend the Court for its ruling,” Reps. Sam Graves (R-Mo.) and Rick Crawford (R-Ark.) said a joint statement.

    They described the rule as an “unlawful attempt to circumvent Congress and force this one-size-fits-all burden upon every state and community across the country.”

    Now, there’s a report that a Chinese illegal alien was arrested by the Border Patrol after he breached a military base in the El Centro sector of California. He was there without authorization and refused to leave. His purpose & intent behind his actions are still being investigated.

    If he refused to leave, I think we can assume that there was something wrong here. How did he even get on the base to begin with? Someone’s going to have to answer up for that as well. And once they found him there, they just ordered him to leave, and only arrested him after he wouldn’t? Were they just going to let him go without wondering or investigating what he was doing there?

    We don’t know what this man’s specific aim was.

    But we know that there’s a problem of Chinese nationals being found at military bases. The House Oversight Committee raised the alarm in October 2023 about Chinese nationals accessing military bases.

    “According to a recent report, Chinese nationals, sometimes posing as tourists, have repeatedly accessed, or attempted to access, U.S. military bases and other sensitive government facilities as often as one hundred times in recent years. These efforts to access U.S. military bases and facilities raise concerns about what these Chinese nationals are seeking to access and for what purpose,” wrote the lawmakers. [….]

    “These reports of Chinese espionage activities on U.S. soil underscore the Committee’s deepening concerns. It is imperative that our government is fully apprised of the breadth and depth of these activities, which pose significant threats to our national security, and our military personnel,” continued the lawmakers.
