What Are Purple Sweet Potatoes?

There are two main varieties—Okinawa (white skin) and Stokes (purple skin)—though they share the characteristic of having a deep purple flesh. The color comes from anthocyanins, the same pigment that gives cherries, strawberries, purple carrots, and other vegetables their color. These sweet potatoes are easy to prepare and cook. They’re not as easy to find as regular sweet potatoes and are more of a specialty item, so they will cost a little more.
Sweet potatoes that have brown, red-orange, or white skin with orange or white flesh are native to Colombia and southern Central America. After Columbus’ discoveries, they were brought to Asia, and varieties with white skin and speckled pale purple flesh were developed on the Japanese island of Okinawa. Today, they are widely grown in Hawaii and exported to the United States mainland where they are popular with Asian and Latinx communities.
How to Cook with Purple Sweet Potatoes

Purple sweet potato skins are edible, though some recipes recommend peeling them first. When cooking, purple sweet potatoes will take longer than regular sweet potatoes. You will need to bake them anywhere from 90 minutes to 2 hours at 350 F to make them pleasingly moist.
Purple sweet potatoes are wonderful boiled, steamed, or baked alongside regular sweet potatoes. They can be used in many of the same ways you’d use an orange or white potato, and the colorful result puts a fun spin on mashed potatoes, fries, and soups.
If you’re going to use this sweet potato in baked goods, you do need to be cautious about recipes that include baking soda. Combining the two ingredients may turn the potato’s flesh green.
What Does It Taste Like?
Purple sweet potatoes have a rich, almost winey flavor with a creamy texture. They are denser and drier than regular sweet potatoes, which is why moist cooking methods and longer times are recommended.

Purple Sweet Potato Recipes
While you may be hard-pressed to find recipes that specifically call for purple sweet potatoes, they can work in nearly any recipe that uses regular sweet potatoes. Just keep in mind the extended cooking time when using them as a substitute.
Where to Buy Purple Sweet Potatoes
Okinawan sweet potatoes enjoy a year-round season while the Stokes Purple variety is typically available from September through June. Like other sweet potatoes, the peak season for the purple varieties is during the fall and winter months. They may not be available in every grocery store, depending on where you live. You’ll have the best luck at specialty markets, including those that cater to Asian foods. Like other potatoes, they are sold by the pound, either loose or weighed out in bags (3 pounds is common). You can also buy them in larger bulk quantities at some stores or online. You can grow purple sweet potatoes at home, though the availability of the slips or shoots for planting is limited and not always easy to find. The Okinawan variety needs a similar climate to Okinawa, such as Hawaii, while Stokes Purple is a better choice for home gardens on the U.S. mainland.
Look for purple sweet potatoes that are firm. Avoid any with soft or brown spots, sprouts, or wrinkled skin.
Storage
Sweet potatoes, in general, do not store as well as regular potatoes. Avoid bruising these potatoes as the slightest damage can cause the entire sweet potato to go bad. You can keep them at room temperature for about a week. For longer storage, keep them in a dry, dark, and cool place with good ventilation and use within a few weeks. Storing any sweet potato in the refrigerator can throw off the flavor and lead to a very hard center.
Cooked sweet potatoes can be stored in an airtight container for a week. Like other sweet potatoes, you can also freeze them after cooking, whether whole and baked or as a casserole.

Good morning! The predicted blizzard has arrived but it’s really a mini-blizzard here. I got up around 5:30 to pee when it wasn’t snowing at all and went back to sleep. Now we’ve got 2-3 inches and it’s supposed to continue into the afternoon. Windy, sure, but not the 30-40 MPH winds they suggested were possible. Temp is 29 so not bitterly cold either. I expect other parts of the state are getting it worse.
I’ve never even seen purple sweet spuds much less tried them. I’ll stick to regular yams, which I do love. I eat a lot of it with chunks of ham these days.

Hi Pat & gang, I’m copying a “good news” comment I shared at the Q-Tree. I’d Really Appreciate prayers for a safe delivery for grand baby #3 who is now “over due”. Love & Blessings! <3
Hey all, my amazing hubby spearheaded a gathering chez nous yesterday of our family in celebration of our son Brandon’s completion of his trial fire fighting period. So he has “gotten his badge” officially though has yet to receive the actual badge in his hand. At some point a chief will drop by the firehouse to hand it to him personally.
Last week he was also honored by a local hospital, Detroit’s Henry Ford Hospital, for saving the life of a 30-something man who had had his leg amputated in some type of accident in his front yard. B said the ER doctor was telling the other hospital staff when they brought the patient in that the tourniquet that Brandon had a applied was “textbook” & was the reason the man was still alive. B didn’t know if they were able to reattach the leg or not since the man was in the hospital in the window where it was possible but once they pass a patient to hospital staff they don’t usually find out about outcomes unless it comes up conversationally later.
So he has a nice Commendation Certificate for saving a life to start out his official Detroit Fire-Fighting career!
Michael cooked up a Mexican themed feast w/ beef, chicken, shrimp, refried beans, grilled onions & peppers, homemade guacamole, fresh squeezed lemonade, & moar. Our daughter Clarissa made a special “cake” of gingerbread assembled like a fire engine that she put 5-10 hours into between research & execution. She’s becoming our go-to specialty cake maker to add a unique touch to family events! Michael got a couple pics of it 🙂 Hopefully there will still be some of that “fire truck” to share with his station on Brandon’s next regular shift later this week!
Brandon had finished his 24 hour shift at 8 am yesterday & ended up sleeping through church & arriving later than everyone else as he was so whipped & didn’t get good sleep since he was “on the box” I believe, assigned to answer the phone, that rang numerous times (atypically for that station) during the night. He was wearing a “rack hat” that he got from doing a half marathon a while back that ran between Detroit & Windsor, Ontario so it is also a nice, apropos acquisition given his Canadian girlfriend (likely to soon be his fiancée, having obtained the Blessing on a recent trip to Toronto).
Oh & yesterday was the due date for grandbaby #3 who didn’t make “her” grand entrance just yet so old oldest son, DIL, & oldest granddaughter were thankfully able to attend our celebration. We are thankful with hearts overflowing & anticipating that new arrival sometime this week. God is good! <3

TY so much Pat! So far B hasn’t even really dealt w/ a serious fire in Detroit, just a garage fire…in Six Months of being in a firehouse! Detroit’s arson problem has been significantly reduced w/ the removal of many vacant properties in recent years.

when we put out a corn/apple block…the does will all allow group feeding–as many as five at a time I’ve seen. but there is a buck (i can still see the bumps where his horns were and will be again) that does not allow anyone else to feed while he’s there–and he will eat for half an hour if you let him.
obviously I will not allow a deer to be a hog…lol
he has a distinctive white “V” that runs along his eyes down to his nose. i have chased him so many times, the mere sound of the turning of the lock on the door alerts him and he scoots.
to be fair…when i first started chasing him, he ran off a bit and returned immediately when i went inside. one day i came charging down the ramp and he stood his ground. i didn’t retreat…instead i kept charging and chasing him…much to the amusement of hubby inside. I ran him off another time before he got that i was a threat–took the broom the next time…LOL

I think there were several reasons why the Court of Appeals did this.
Although the Court may be Dem-heavy, it does care about the overall credibility of the NY court system. It does not want to be known as a kangaroo court.
The Court of Appeals may have some genuine concern for the way Letitia twisted a consumer fraud statute to use in a case in which there was no fraud. They may see a need to clarify how this law should be used or even to strike it down as unconstitutionally vague.
The third reason is that the Court saw the possible devastating effects this case could have on real estate investment in NY, and on the NY economy in general, despite Gov. Hochul’s assurance to potential investors that Trump was a unique case and they needn’t be worried. There may have been some discreet calls from business leaders to acquaintances on the Court of Appeals that they didn’t want NYC to go into a real estate doom loop like San Francisco.

Didn’t that happen some time ago? I remember posting something, with the same statement from Barnes, about him now being allowed to sell raw milk out of state, but not in state. Did that change?
