Purple Carrot: Nutrition & Benefits

While many people have never heard of – or eaten – a purple carrot, they are deliciously sweet additions to many different meals. The taste of the purple carrots is not the only reason to eat them because they are also packed with a good amount of nutrients and health benefits!

What is a Purple Carrot?

A purple carrot is a color variant of traditional carrots, which bear the scientific name Daucus carota subsp. sativus. While most people in the US and UK are familiar only with orange carrots, purple carrots are far more commonly found in the East, particularly in China and India. However, they were first cultivated more than 1,000 years ago in the region of Afghanistan, and they spread from there. What many people don’t realize is that purple carrots were actually the original form of these globally popular vegetables. Paler colors only originated later, once the carrots were grown in different regions. These uniquely colored carrots are high in anthocyanin, which gives them their characteristic color and a surprisingly sweet taste.

The larger the carrots, the larger the central core, where most of the nutrients are stored, which results in more sweetness. Although the exterior of these carrots may be purple, the center is often yellow or orange. Purple carrots can be used in the same ways as any other carrots – in soups, stews, salads, sandwiches, stir-frys, and as a raw snack. While they aren’t as readily available in the US and UK as they are in Asia, they can easily be found in specialty grocery stores and import stores.

Purple Carrot Nutrition

Purple carrots have a similar nutrient profile to other types of carrots, with a few important distinctions. These carrots are a rich source of dietary fiber, vitamin C, potassium, manganese, and vitamin K. There is a low level of calories – only 25 calories per cup – and only 5 grams of carbohydrates. When it comes to antioxidants, however, purple carrots have a good lutein and beta-carotene content. Purple carrots also contain more phenolic compounds, such as anthocyanins, than any other carrot variety, except for black carrots.

Purple Carrot Health Benefits

The most impressive health benefits of purple carrots include its effects on weight loss, chronic disease, cardiovascular disease, inflammatory conditions, vision, and circulation, among others.

Weight Loss

Purple carrots are particularly prized for their place in a weight-loss diet. This low-calorie, low-fat, and high-fiber vegetable is an excellent way to fill yourself up without compromising your dietary goals. Furthermore, digesting all of that fiber can help to speed up your metabolism, which can help with passive fat-burning if you’re trying to shed pounds.

Cardiovascular Disease

With high levels of dietary fiber and antioxidants that can help protect the integrity of the cardiovascular system, purple carrots are great for heart health. The fiber can help to lower overall cholesterol levels, which will lower your risk of atherosclerosis, heart attacks, and strokes, as well as cardiovascular diseases. The vitamin C in these carrots is also critical for the strength of the artery and blood vessel walls.

Reduces Inflammation

Research has shown that anthocyanins, which are found in high concentrations in purple carrots, can help relieve many different inflammatory conditions, including arthritis, gout, headaches, and even hemorrhoids.

Improves Vision

Although purple carrots contain less beta-carotene than orange and yellow varieties, there is also a significant amount of lutein and zeaxanthin in these carrots, all of which can help to improve vision. These antioxidants will reduce oxidative stress in the retina, preventing macular degeneration and lowering your risk of cataracts. ]

Improves Circulation

There is a decent amount of iron in purple carrots, which is great for boosting circulation, but the presence of vitamin C and other antioxidants will also help to prevent breakage and blockage within the circulatory system, ensuring that all your metabolic processes continue normally.

Treats Chronic Disease

The high level of anthocyanins found in these colored carrots means that they are excellent antioxidants; these compounds are able to seek out and neutralize free radicals, which are responsible for cellular mutation and other forms of chronic disease, such as heart diseases, and rheumatoid arthritis.

How to add Purple Carrots to your diet?

Adding purple carrots to your diet is very easy and healthy as well. Here are some simple ways to add them to your diet.

Purple carrot salads: You can dice some purple carrots and add to any salad of your choice

Roasted purple carrots: Slice the carrots and roast them with some olive oil, salt, and pepper

Stir-fries: You can add purple carrots to while making any stir fry along with your favorite vegetables or meats

Carrots and hummus: You can serve sliced purple carrots alongside hummus

Soups and stews: Purple carrots can be added while preparing any soup or stew

  1. Good morning, Miss Pat!

    Over the years, I’v read that fruits and vegetables with the deepest brightest colors generally have the most nutritional value – dark leafy greens, red cabbage, beets, blueberries, etc. – so I’m definitely willing to try purple carrots. Haven’t seen them in Publix, but could get the seeds and grow them if I ever get a chance to grow and tend a garden again!

      I tried putting carrots in our garden once. being a novice gardener I didn’t put them in deep enough and i could hear the birds in the trees…lol..just waiting for me to go inside.
      sure enough, they dug up the seeds. i got a few tiny carrots, but i have been finding carrots growing everywhere now…lol. the actual carrots are tiny –almost nonexistent –but the signature tops?? i see them all around the outside of the garden.

    TX NG and rank-and-file BP agents work together and respect each other’s jobs. Period. If TX NG members have LAWFUL orders, then they have to carry out those orders.

    TX NG members realize that rank-and-file BP agents have their orders as well. Lawful orders, no matter how unpopular or distasteful amongst rank-and-file agents, must be followed. Unlawful orders (as determined by competent legal counsel and not what some outhouse lawyer behind a keyboard says) will not be followed.

    Rank-and-file BP agents appreciate and respect what TX has been doing to defend their state in the midst of this catastrophe that the Biden Admin has unleashed on America.

    We want to be perfectly clear, there is no fight between rank-and-file BP agents and the TX NG, Gov. Abott, or TX DPS. It may make flashy headlines, but it simply isn’t true.

    hubby said we’re taking the truck (which is still loaded with firewood) and i asked why.
    he anticipates the stream will be roaring–if the water coming down off the mountain is any indication and the heaviness will help get us thru the rising stream.

    1. Smart man! Weight in the back is ALWAYS a good thing in the winter months, IMO. Used to do that every winter with my Ranger and rarely had any issues. ‘Course, that was in VA, not here! But it always helps, regardless of the location.

The authorities said the suspect, Donovan Scott Sheppard, 39, was involved in a bar fight on January 13 before being picked up by the mother. He was staying with the mother and daughter when the incident occurred. Sheppard had coached youth baseball in the area for several years.

    The 12-year-old girl told investigators that “[h]e raped me” after her mother made the horrifying discovery. The minor was asleep when her mother and Sheppard returned home on the night of the bar fight. After the mother went to sleep, Sheppard reportedly entered the girl’s room. The mother awoke at some point during the night and discovered Sheppard raping her daughter.

    The authorities were soon contacted, and when they arrived they discovered the mother holding Sheppard at gunpoint, per reports. Sheppard previously served as a youth baseball coach for a team called the Oklahoma Aftermath. During questioning, he admitted to the police that he was HIV-positive and that he had not worn a condom during the sexual assault, according to the Kansas City Star.

    The minor said that this was not the first time Sheppard had raped her. She claimed he had raped her six times since she was 11 years old. One of the attacks happened on her 12th birthday, according to the authorities.

    Sheppard was arrested and taken into custody following the incident. He is currently being held on $500,000 bond at the Cleveland County Jail. Fox News Digital reported that he was charged with “lewd or indecent proposals or acts to a child; engaging in a pattern of criminal offenses; exposing others to AIDS; rape, first degree; and rape by instrumentation.”

    According to the National Center for Victims of Crime, approximately 1 in 5 girls are the victims of child sex abuse, whereas 1 in 20 boys are the victims of child sex abuse. The report mentioned that during a one-year period in the U.S., 16% of those between the ages of 14 and 17 had been sexually abused. And throughout an entire lifetime, 28% of U.S. youth between 14 and 17 have been sexually abused.”

    Only proof of life I have seen is one video of him speaking into the camera from a seated position. Waist up. No shot of him in a group meeting.

    even that video was not clearly dated or overlapped with any other footage. if i recall, he did not even thank the person by name who introduced him. it was a carefully scripted readout of very general talking points he could have said months ago.

    until i see more, i think the dead in kiev theory still holds water and becomes more likely with each day.

            1. i bought celery last week for soup and snacking. it was beautifully green but it was all LIMP. i know the trick about soaking it in ice water to stiffen it up, but dang it–they shouldn’t be selling it imo

    Dixie and the Historical Implications of DeSantis’ Latest Move into Texas

    Florida’s Governor Ron DeSantis is sending the newly re-created Florida State Guard to Texas. This is a much bigger deal then many may realize. To begin, the Florida State Guard is unlike any other State Guard. It is primarily staffed with senior leaders from the DIA – most of whom served directly under General Michael Flynn. It is also the only State Guard with an independent weapons and armaments procurement team. Finally, unlike the National Guard that can be federalized, the State Guard answers only to the Governor of Florida and the citizens of the state. Biden (i.e., Obama) cannot take command of the Florida State Guard.

    Originally reactivated after nearly 80 years, the Florida State Guard was a response to Joe Biden (Obama) choosing to ignore requests for assistance after 20+ deadly tornadoes struck simultaneously in Southwestern Florida. The dispute occured when DeSantis made it illegal to impose the Covid vaccine on employees. Biden (Obama) tried to do an end run around that law by weaponizing OSHA. DeSantis subsequently withdrew the State of Florida from the OSHA Labor Safety System – creating our own version of a Florida OSHA. Within four weeks of that decision, more than twenty tornaodes hit an area of Florida largely known for housing high profile Republican donors. (In contrast to Southeastern Florida, which is largely Jewish and Hispanic, Southwestern Florida is primarily high wealth White and Christian – and rarely experiences tornadoes above an EF-2 without a hurricane nearby)

    After Florida asked for emergency assistance and was denied by the Biden (Obama) Administration, DeSantis and the Florida Legislature reactivated the Florida State Guard as a form of divorce from the federal government’s disaster relief system. Oddly, however, the choice of command team were all combat veterans with significant Defense Intelligence Agency (DIA) experience. The Guard itself was initially built to source its own materials with its own defense contracts for the sake of “natural disaster response.”

    Fast Forward – the Florida State Guard hired primarily members of Special Forces and the Special Operations Community to train future Guardians on “natural disaster response” (164 trainers to be exact).These Guardians just began training in the swamps of Florida last year. Whereas we do not have the full details, we are aware of significant weapons and advanced medical training – such as treating a sucking chest wound – for the sake of combating natural disasters, like hurricanes.

    These Guardians will now be deployed to Texas to assist in combating the invasion of the South. More importantly, the Florida National Guard has already been on the ground in Texas providing aerial recon and intelligence gathering. The State of Florida allows members of the Florida National Guard to join the State Guard without penalty. In effect, DeSantis can offer a National Guard soldier the opportunity to switch to the State Guard, provided the National Guardsman is not yet federalized. This was all written into law primarily by Ron DeSantis himself with help from Florida’s most rightwing members of the Legislature.

    Historically, this is incredibly symbolic on many fronts. First, Florida and Texas have a great deal of shared history. They were both Spanish colonies. They were both members of the original seven Confederate States of America. Texas was the last holdout of the Confederacy (excepting the Cherokee Nation), and its primary commander was Florida’s General Kirby Smith. These are two Southern states with a lot more in common than most realize.

    Florida is the number one “bred-2-beef” state – meaning cattle are born in Florida. They are raised in Texas. The climates of East Texas and Florida are very similar. The legal structure are similar. Combined, the two states dominate the Gulf of Mexico. They are both zero income tax states. Finally, as of a few years ago, Houston to Tampa container vessel traffic helped bridge the two states wth the largest economies in the South. Combined, they would rank the 5th largest economy in the world – ahead of Great Britain, France, and Russia. If the two states created their own monetary unit, it would be the only Triple-A credit and Zero Debt monetary system in the developed world today.

    Where will all this go? Who knows. Does Abbott have the stomach to take this fight all the way? Unlikely. But Florida has been quietly preparing for this moment for years and it sounds like there are plenty of Texans who would love nothing more than to tell the US Governemnt to go to Hell.

It was initially supposed to occur in 2021, but a series of delays — in part due to the same logistical and regulatory issues threatening shutdowns today — postponed the auction to Thursday.

    In an emailed statement, a spokesperson from the U.S. Interior Department said the sale would not constrict helium supply. “Sale of the reserve to a private party, as Congressionally mandated by law, is not expected to meaningfully change the availability of helium,” the spokesperson wrote.

    Other sources of helium — There’s a finite amount of helium on Earth. The largest reserves are in massive underground pockets in parts of Algeria, Qatar, Russia and the U.S. While the Texas stockpile is the largest source of helium in the U.S., it’s not the only one. There are a number of smaller, privately owned facilities — some of which are in Colorado and Wyoming — according to Gottwald.

    Sourcing helium inside the U.S. or from Canada is the easiest and cheapest option. Transit time is an important factor: If the shipment takes longer than 35 to 48 days, the liquid helium will evaporate….”
