What Shall We Bake Today?

Every year I attempt one new cookie.  If the family likes it, I add it to the holiday cookie list.  This year I wanted to try Rolo Turtles.  (At this point, I have not tried them yet, as hubby and I have been sick, but I am going to when I feel better.)

ROLO TURTLES

1/2 cup butter, softened to room temperature

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

6 tablespoons unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

24 Rolo chocolate candies, unwrapped

For rolling:

1 tablespoon granulated sugar

1/4 cup crushed pecans

Instructions

Preheat oven to 375ºF. Line two baking sheets with parchment paper.

In a large bowl, using a hand-held mixer or a stand mixer with paddle attachment, cream together the butter, granulated sugar, and brown sugar until combined. Beat in the egg and vanilla until smooth.

In a separate bowl, combine the flour, cocoa powder, baking soda, and salt.

Add the dry ingredients to the wet ingredients and slowly mix until combined.

Measure about 1 tablespoon of dough and wrap around a Rolo candy into a ball shape. Repeat with remaining dough and Rolo candies.

In a small bowl, combine the granulated sugar and crushed pecans. (I used coarsely chopped pecans and no added sugar.)  Roll each dough ball in the mixture until coated on all sides. Place dough balls on the prepared baking sheets.

Bake for 8-10 minutes until set and slightly cracked. Allow cookies to cool on the tray for 5 minutes, then transfer to a wire rack to cool slightly before serving.

    bad night for hubby last night. he slept for about 2 hours yesterday at lunchtime and then had difficulty sleeping last night in bed. it seems a more upright sitting position is the best for him–which is his chair–but he hates that I sleep on my chair which isn’t as large…sigh
    I still fall asleep in it all the time.

    1. This would probably surprise most people but I think her attire is entirely too revealing for that setting. IMO, it is trashy and not classy at all. That kind of cleavage is appropriate for a party but NOT the news. Again, YMMV but that just makes her look like a slut to me.

        2. If you put my 2 Mothers side by side you would have trashy vs. classy. One thing I can say about my adopted Mom – she was never, ever any less than a lady, cultured and elegant, even in a 2-piece swim suit vacuuming the pool. I always thought of her being much like Grace Kelly, just not quite as pretty – she had the family jawline and nose but she easily could have modeled.

    A source identified the room to the Daily Caller as Senate room Hart 216- The Judiciary Room. The Caller blurred out his face because his identity has not been confirmed.

    A four-month-old baby has been found alive “by the grace of God” his parents said after the child was sucked up into a tornado in Tennessee.

    The couple said a deadly tornado on Saturday tore apart their mobile home, picking up a bassinet with the baby still inside of it.

    He survived and was discovered in a fallen tree in the pouring rain.

    The baby, his one-year-old brother and parents only suffered from minor cuts and bruises.

    As the tornado approached, the mother of two, 22-year-old Sydney Moore, said the roof of their mobile home was ripped off.

    “The tip of the tornado came down and picked up the bassinet with my baby, Lord, in it,” Ms Moore told a local news station. “He was the first thing to go up.”

    Her boyfriend – and the boy’s father – lunged to protect Lord in the bassinet, but ended up getting picked up by the tornado, too.

    “He was just holding on to the bassinet the whole time, and they went into circles, he said, and then they got thrown,” Ms Moore said.

    As that was happening, Ms Moore grabbed her one-year-old son, Princeton.

    “Something in me just told me to run and jump on top of my son,” Ms Moore said. “Literally the moment I jumped on him, the walls collapsed.”

    “I was being really crushed. I couldn’t breathe,” Ms Moore recalled.

    After the tornado passed, Ms Moore was able to escape the crush of the rubble with Princeton. She and her boyfriend immediately started searching for Lord.

    After looking for their baby in the pouring rain, they found the child – alive – in what Ms Moore says “looked like a little tree cradle”.

    “I thought he was dead,” Ms Moore said. “I was pretty sure he was dead and we weren’t going to find him.”

    If the mayor signs the bill, the new law will prohibit people from wearing ski masks in parks, schools, and on public transit. Violators can be fined $250 or $2,000 if they commit a crime while wearing a mask.

    Interestingly, the bill has exceptions for religious expression and “First Amendment activities,” such as protesting.

    The city recently saw protesting that turned into rioting targeting downtown businesses. Many of those protesters covered their faces. So would they have been exempted from this new legislation? They were protesting after all.

    The problem is that too many of the left-wing protests turn into violent riots. So the city council gave an exemption to one of the leading contributors to violence perpetrated by people wearing masks.

    In a nutshell, after more than two years of litigation before federal judges in Washington, SCOTUS will review the Department of Justice’s use of 1512(c)(2), obstruction of an official proceeding, in January 6 cases.
