What Shall We Bake Today?

Today’s offering is a recipe I came across that I wrote down from somewhere. (IF this is your recipe GA, please let me know so I can give you credit!!)

Candied Pecans

Ingredients

1/2 cup granulated sugar

1/4 cup light brown sugar

1 1/2 tsp. ground cinnamon

1/2 tsp. kosher salt

1 large egg white

1 tsp. vanilla extract

1 lb. pecan halves (about 4 cups)

Directions

Preheat the oven to 300°F. Line a baking sheet with parchment paper or a silicone baking mat. 

In a small bowl, whisk together the sugars, cinnamon and salt. 

In a large bowl, whisk the egg white and vanilla extract until very foamy, about 1 minute. Add the pecans and stir until well coated. Sprinkle the sugar mixture over the pecans and toss until fully coated. Spread pecans into an even layer on the prepared baking sheet. 

Bake for 20 minutes. Stir and spread out evenly again. Bake for another 20 minutes or until the nuts are very fragrant and are starting to darken in color. Let the pecans fully cool in the pan on a wire rack (the sugar will harden as it cools). Break into individual pieces. Store in an airtight container in the pantry for up to 2 weeks.

    1. Down in these parts – Gulf Coast States from New Orleans to Tallahassee, on through S GA to Jacksonville, we would leave off the cinnamon and call them Praline Pecans as opposed to Pralines, the famous New Orleans candy.

      Pralines my favorite candy. They are a bit tricky to make – but they are good even when you mess up – you can serve the ones that don’t harden as a caramel sauce over ice cream! You can fold the ones that get too crumbly into drop cookie dough! It’s a win-win situation.

      I would go with half buttermilk, half cream and no molasses.

      1. Morning, GA! Hope things are going well with you and you are taking time out for yourself now and then. You must rejuvenate once and a while, lady – running on empty only works for so long! Butter pecan used to be my favorite ice cream for many years until I discovered peach ice cream, plus I can’t eat the nuts any more w/no teeth. I’ve solved my issue with not being able to find the larger bags of Butter Finger unwrapped mini’s – I ordered a case of 12 bags via Amazon – that will hold me for a good long while and I won’t have to be running up to Family $ once a week! Due to be delivered on Monday! Yes, I finally caved and signed up for an Amazon account. No way around it, it seems!

          1. I tried and tried to find somewhere other than Amazon but between Amazon and Ebay…I’ll go with Amazon as being a little bit safer and only with my CC, never my debit card. Much easier to file a claim that way, if necessary.

      1. Oh man. It’s been tough. Several trips to ER and doctor. She’s having more and more frequent spells of Atrial Fibrillation. We – her doctors – the electrocardiologist, her Dad and Vro in law – rying different medicine doses. We may be at the 24/7 care needs stage. And she’s mean as a snake. Can’t be any uglier, constantly derisive, dismissive, disdainful, demeaning, insulting, cussing and glaring, sneering… imperious, demanding….

        As Chonda Pierce would say, “This Ain’t Prettyville.”

  1. Unpleasant surprise this morning: snow on the ground! Yuck! Thankfully, it’s not much – will post a pic when it gets light enough – and will melt quickly but it is a reminder to me to remove my downspouts for the winter. I was going to have Jason do it when they cleaned the gutters, then decided I’ll just do it, since I’ve got that routine down pat – I store them and the screws the same place every year so I don’t have to scramble to find them in the spring.

    No sign of Wheezer yet and I didn’t see any signs of him last night before I went to sleep either. Maybe hunkering down in his hidey-hole, wherever that might be. When I brought the food in around 7 pm, his water had already frozen. Ah-ha! Just as I was getting ready to post, he showed up for breakfast.

  2. Morning All!
    seems like being in house with 2 sick people and tending to them while cooking large meals and dealing with dogs tend to make one susceptible to getting sick themselves!
    I just can’t stop coughing. no fever or other distress…
    going to be gargling my brains out today and taking it easy i guess.

    hubby isn’t feeling all that great either.

    ENTIRE ARTICLE: “A headline crossed my desk today that chapped my khakis. The article was written by Duke over at Red State and read, “Kari Lake Is Running for Senate in Arizona While Still Protesting Her Loss as Governor—and I’m Confused.”

    I symbolically cracked my knuckles, put the article on one screen and prepared to rebuke the article on the other screen. But upon reading it, I realized it was written from a proper perspective. It wasn’t bashing Kari Lake out of spite. It didn’t claim the 2022 Arizona gubernatorial election was fair and square. It didn’t call on Lake to get out of politics and let a non-MAGA RINO run.

    As it turned out, the article was spot on other than one major point. And even though that point is major it’s not blatantly obvious, so I uncracked my knuckles and prepared to move on, leaving my ire on the table to direct at someone else who actually deserved it. But as the day continued the article nagged at me. I’m not big on writing about slight disagreements since there are plenty of UniParty Swampsters to go after passionately.

    In lieu of a rebuke, I’ll add a bit of context that should clear things up. According to Duke, Lake should not be running for U.S. Senate because she should be putting all of her efforts and fundraising prowess to work in a focused effort to expose the massive, widespread voter fraud that stole the 2022 (and 2020) elections in Arizona. It’s an understandable and even noble premise for his article, but the flaw is this: She’s already done that and lost multiple times.

    Nobody has fought voter fraud following a stolen election harder than Kari Lake’s team. Not Donald Trump. Not Doug Mastriano. Not Dr. Mehmet Oz. Not Blake Masters. I like all of them other than Dr. Oz, but combined they didn’t fight their stolen elections as hard as Lake’s team.

    Considering the efforts that have thus far yielded zero fruit, it make sense for her team to assume that the truth isn’t going to prevail. They’ve presented mountains of evidence that demonstrate unambiguously how ballot fraud at a massive scale took place in Maricopa County, but the UniParty Swamp system has them completely blocked off. They can’t get a judge that isn’t corrupt. They can’t get media coverage even from conservative news outlets who are scared of being labeled “election deniers.” They can’t catch a break.

    But here’s the thing. They ARE continuing to fight against all odds because it’s the right thing to do. Lake’s direct participation at this stage is not needed. She raised enough funds to make the case and it still wasn’t enough. Could she raise more funds? Sure, but that’s not the problem. They need more evidence that’s beyond the bombshells they already dropped.

    Instead of fighting a single-front war, she decided to run for U.S. Senate while allowing her team to continue the uphill battle of exposing the fraudulent 2022 election. At this stage, they don’t need much from her. They can continue to fight on that front while she tries to get to Capitol Hill.

    Duke’s assessment was accurate. I have no qualms about his perspectives. I simply agree with Lake’s decision that her efforts are better spent attacking the UniParty Swamp directly rather than continuing to participate in the ongoing 2022 election litigation. She and her teams (legal and campaign) can walk and chew gum at the same time.”

    The U.S. and German governments now believe the Ukrainian military is incapable of retaking territory lost to Russia in the course of the latter’s invasion. According to the German news outlet BILD, the two governments hope Ukrainian President Volodymyr Zelensky will come to realize the need for negotiations with Russia. A German government source told the outlet, “Zelensky should come to the realization that things cannot go on like this.”

    The failure of Ukraine’s counter-offensive has left U.S. and German officials concluding additional weapons shipments to the country should only be in quantities needed to hold the war front and prevent further Russian territorial gains. “He should address his nation of his own free will and explain that negotiations need to be carried out,” the government source said.

    Earlier this month The National Pulse reported General Valery Zaluzhny, Commander-in-Chief of the Armed Forces of Ukraine (AFU), conceded Ukraine’s long-anticipated counter-offensive has “most likely” failed, with his men having advanced only a little over ten miles in months. Zaluzhny said an “attritional trench war” could “wear down the Ukrainian state,” and aides to President Volodymyr Zelensky have already expressed concern over the average age of a Ukrainian soldier having risen to 43 – especially as these middle-aged fighters “aren’t that healthy.”

    Zelensky has continued to push Western governments for more lethal aid in his country’s conflict with Russia. In early November, Zelensky extended an invitation to former President Donald Trump — the 2024 U.S. presidential front runner — to visit Ukraine for a briefing on why the war must continue.”

    ENTIRE ARTICLE: “Total carjackings in Washington D.C. have now passed the 900 mark, with two incidents over Thanksgiving taking the count for 2023 to 901. Ninety-two of these carjackings took place over just the last 30 days, with carjackings for the year up by 108 percent on 2022. Carjackings involving a firearm account for the lion’s share of incidents, at 695, and are up by even more than carjackings overall.

    Several high-profile incidents have taken place recently, including one in which House Democrat Enrique ‘Henry’ Cuellar was carjacked outside a building housing many Congressmen, and a possible attempted carjacking involving Joe Biden’s granddaughter Naomi.

    On its Carjacking Dashboard, the Metropolitan Police Department acknowledges carjackings “can be particularly scary” – but it insists that “[s]tatistically speaking… your chances of being a victim of carjacking are very slim.” Preliminary data accurate to November 22nd indicates total crime in D.C. is up by 27 percent on 2022. Violent crime is up by an even higher 40 percent, including a 35 percent increase in homicide.

    The D.C. government is entirely dominated by Democrats, with Mayor Muriel Bowser and every member of the City Council being members or former members of the leftist party.”

    1. well think about it…you’re new in town, just a happy illegal wanting to see the country–you need wheels! your friends tell you about the places where the cops are paid to look the other way. maybe you wanna see CA where you can steal under a $1,000 a day with no jail time–you gotta get there!

  6. Got a crockpot full of chili cookin’ – smells yummy! Still snowing lightly off-and-on, bigger flakes now. Wheezer returned a couple of times to eat, then sleep it off in his chair. The 2nd time, when he was done eating, he sat and watched me so I went out to give him some lovin’. He wanted to come inside again, climbing up on the table to look inside. I put my fleece hoody on the chair and he’s not sure what to think of that yet. Now he’s off gallivanting in the snow.

  7. first day of buck season (and because of the zone we’re in) you can also hunt bear and doe–i thought there would be a free for all out there today. but we heard one gunshot early this morning and that’s it.
