What Shall We Make Today?

Since it’s November, today’s offering is my recipe for the perfect turkey breast.  (Although, these tips work just as well for a whole turkey.)

We love white meat, so I rarely make an entire turkey for our get togethers.  However, as is our custom, I will make the entire turkey dinner 2 days in a row because we seldom have many leftovers and I love the way the turkey dinner makes the house smell.  I begin with about a 7 or 8 pound turkey breast.  Butterball was always my first choice, but one year out of necessity I had to purchase a different brand—Honeysuckle White—and it was just as delicious!

Clean the breast and pat dry.  Rub the entire breast with unsalted butter and season.  I use salt, coarse ground black pepper and onion powder.  The breasts available here are “restaurant style” turkey breasts which means they have the rib portion and stand upright in the roasting pan.  This makes them easier to carve in my opinion.

Place in a roasting pan—I do not use a rack since hubby prefers gravy like his mom made—from a jar—so I do not need to collect the juices.  I roast my turkey breast uncovered in a 350* oven until the internal temperature reaches 160*.  I will check the turkey roughly an hour after putting it in the oven.  If the skin is sufficiently brown and crisp, I will remove the pan from the oven and cover the turkey with reynold’s wrap to finish the roasting.  My turkey breasts usually roast to 160* in an hour and a half to 2 hours. But a meat thermometer is invaluable! I got mine from Pampered Chef ages ago.

It’s important to remove the bird when it hits 160* because the turkey should stand—COVERED—for at least 15 minutes before you attempt to carve it—allowing the bird’s juices to settle.  During this time, the internal temperature will continue to rise to the desired 170*.  My turkey breasts are always moist and tender.  Can’t wait till Thanksgiving!  Bon Appetit!

  1. For a small family – we also do Turkey breast. One year, I salted and peppered it, buttered or oiled it, then placed it upside down in a nest of foil, filled the cavity with garlic, onion quarters, carrot, celery chunks, savory herbs and… white wine! Roasted it as usual on a roasting pan with a rack using a roasting thermometer to tell me when it got to the done temp.

    Oh man it was good! I had read about doing that and wanted to try it. The skin was still good and brown and the meat was juicy. We straineded the white wine/herb/onion/garlic juice from the middle of the turkey breast into a pan with a roux for brownness…and the gravy was good too!

        1. We had quite a day yesterday! Got Frank out of the hospital, we thought his wallet was lost because he forgot he had left his wallet with other daughter. Sally Q had a heart rhythm crisis and had to go to the ER, so we met her and caregiver at the ER on the way home.
          Both Sally Q and her Dad are doing well today. I slept 8 full hours last night because I was so tired! Have the wheelchair guy coming today return a chair he repaired and to repair one that got broken here and to fix Frank’s walker – which was once Sally’s and to talk about ordering equipment for his new apartment in Sally’s building. Oh man!

      sounds good–I love homemade gravy–cuz my mom made it so well!! but hubby’s mom always used jar gravy so that’s what he like…
      i give in on chicken/turkey but when i make a roast beef, i make homemade gravy ad he loves it. but old habits…lol
      we love white meat, so i rarely make a whole turkey. my mom is the only one in the family that likes dark meat.

        1. thanks. we are having our “family” Christmas with her and my kids the following weekend–my son works night shifts some times, so we always schedule it around his schedule and that’s the only weekend he’s off in December. I’m going to offer to bring all the fixings and make a turkey dinner for that evening to make up for my idiot brother.

I heard a cat yowling outside and had been tossing and turning for a while anyway so I got up to see who was making all the noise – it was some other cat in the neighborhood because Wheezer was sitting patiently by the door waiting for his breakfast. Besides, he doesn’t yowl – always very quiet mews and purrs. Of course, some lovin’ was necessary first – up on my lap, rolling and purring, for almost 15 minutes today! Again he tried to follow me inside.

    I’m waiting for it to get light outside to get all the stuff out for Jason to put up the screening on my east patio window. Yeah!!! Since a big freeze is coming, maybe tonight, I won’t have to worry much about flies but it will keep the birds from getting in and beating themselves to pieces trying to find a way out.

    1. I’m not big on turkey at any time of the year, tbh. It’s one of those where it’s ok but I much prefer the dark meat. I always take a leg/thigh. I enjoy the trimmings more than anything! LOL – Tucker dropped a new interview with Candace Owens – she is preggers again – 40 weeks!!! I’ll say again: I want to see her run for President some day!

    He said CPAC staffers were suddenly forced to sign non-disclosure agreements (NDAs) on pain of losing pay, and board members were warned they “serve[d] at the pleasure of [Schlapp].” Earlier this year, The National Pulse reported on Schlapp’s own ‘DO NOT INVITE’ list for the CPAC conference, which included America First Members of Congress, Trump family members, and even some of his own board members.”

    Special counsel Robert Hur is not expected to charge anyone in connection with the mishandling of classified documents at two locations connected to President Joe Biden, two sources close to the investigation told CNN.

    Hur and his team are compiling a detailed report on their year-long probe that is expected to be critical of Biden and his staff for the way they handled sensitive materials. The report is expected to go into significant detail about what the special counsel’s office found in its investigation.

    Investigators on Hur’s team have told other Justice Department officials that they hope to have the report completed by the end of the year, but that timeline could slide.

    Ian Sams, a spokesperson for the White House Counsel’s Office, declined to comment.

    Hur was appointed in January to investigate after classified documents from Biden’s time as vice president were found at his former office at the Penn Biden Center in Washington, DC, and at his Wilmington, Delaware, home. A spokesperson for Hur declined to comment.

    The Wall Street Journal first reported Hur isn’t likely to bring a criminal case. CNN previously reported charges appeared unlikely, according to sources familiar with investigators’ line of questioning, and that there has been no discernible grand jury activity.

    A decision to not pursue charges is likely to draw criticism from Donald Trump and his allies. They have long drawn parallels between Hur’s investigation with that of special counsel Jack Smith, who earlier this year brought charges against the former president related to his own handling of classified documents after he left the White House.

    But key differences between the two probes abound, including the fact that the National Archives repeatedly tried and failed to get back documents in Trump’s possession. At one point, the FBI secured a search warrant to search his Florida estate.

    Biden’s attorneys, on the other hand, quickly notified the National Archives of the materials found in his possession.

    NEW YORK (WABC) — A New York appeals court on Thursday temporarily lifted a limited gag order imposed on former President Donald Trump.

    Judge David Friedman of the appellate division’s first department ruled from the bench after a brief oral argument.

    The judge stayed the gag order citing constitutional concerns over Trump’s free speech rights.

    The gag order was imposed by the judge presiding over Trump’s civil trial, Arthur Engoron, after Trump posted disparaging things on social media about his law clerk.

    Trump and his lawyers have repeatedly put the law clerk, Allison Greenfield, under a microscope during the trial. They contend that the former Democratic judicial candidate is a partisan voice in Engoron’s ear – though he also is a Democrat – and that she is playing too big a role in the case involving the former Republican president.

    Engoron has responded by defending her role in the courtroom, ordering participants in the trial not to comment on court staffers and fining Trump a total of $15,000 for what the judge deemed violations. Engoron went on last week to prohibit attorneys in the case from commenting on “confidential communications” between him and his staff.

    Trump’s lawyers – who, separately, sought a mistrial Wednesday – contend that Engoron’s orders are unconstitutionally suppressing free speech, and not just any free speech.

    “This constitutional protection is at its apogee where the speech in question is core political speech, made by the frontrunner for the 2024 Republican presidential nomination, regarding perceived partisanship and bias at a trial where he is subject to hundreds of millions of dollars in penalties and the threatened prohibition of his lawful business activities in the state,” they wrote in a legal filing.

            If I didn’t get her an EKG on the 27th then they said they were backed up until Feb.

              1. And they kept saying she needs surgery. Well then don’t drag this out. The doctors office does not have an EKG that would have helped. And they her knee doc was like well she’s on a blood thinner maybe she should switch. Ummm your for knee not her primary.
                Her primary is ok with her meds.

                Anything medical SUCKS!!!!

                my mom, who doesn’t drive, has a podiatrist who comes to her house every 3 months. (he’d been coming to the house for my Dad when he was alive, so he just started with mom and came to see them both.
                a few times when he was at her house, he trimmed her toenails so short, one bled. soon after he “declared” her to be diabetic! Her own regular doctor has issued no such proclamation. the podiatrist just came 2 weeks ago and the first thing he asked her was, what’s your blood sugar number? her family doc said nothing to her. she has no blood sugar meters or test strips or anything like that!
                so she’s upset–I said talk to your family doc.
                but the podiatrist should concern himself with her feet and leave diagnosing major diseases to the family doc!
