What Shall We Bake Today?

October is the perfect time for ginger cookies.  I like the big, soft cookies!

Ginger Cookies

Ingredients

3/4 cup butter, softened

1 cup sugar

1 large egg, room temperature

1/4 cup molasses

2-1/4 cups all-purpose flour

2 teaspoons ground ginger

1 teaspoon baking soda

3/4 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon salt

Additional sugar

Directions

In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to the creamed mixture and mix well.

Roll into 1-1/2-in. balls, then roll in sugar. Place 2 in. apart on ungreased baking sheets. Bake at 350° until puffy and lightly browned, 10-12 minutes. Remove to wire racks to cool.

Dark molasses is commonly used when making ginger cookies because it gives them their dark golden-brown color, chewiness and rich flavor. If you don’t have dark molasses, use light molasses instead!

How can I make these cookies crisp?

To make ginger cookies crisp, leave out the baking soda. The main difference between soft and crispy ginger cookies has to do with this leavening agent. (For less mess while measuring baking soda, coat your measuring cups in cooking spray before portioning it out.)

How can I keep these cookies chewy?

To keep the cookies soft and chewy, store them on the counter in an airtight container with a slice of bread.

Why are my ginger cookies flat?

There are plenty of reasons why cookies turn out flat. To avoid flat cookies, make sure to cream your butter and sugar until it is light yellow and fluffy. This usually takes 5 minutes on medium speed. Doing so adds air and structure to the dough. If your cookies are still turning out flat while baking, refrigerate the unbaked dough balls for 10-15 minutes before baking to prevent excessive spreading.

  1. That sounds similar to a recipe I grew up with for Molasses Cookies. They turned out flatter than the picture you have. Also, after rolling in sugar you pressed a finger or thumb into the middle of the dough & dropped in a small amount of jam or jelly. I loved those cookies raw or cooked!

      i make a button or thumbprint cookie that you press an indentation into and fill with jam or a cherry half. it’s more of a butter cookie dough though.

Up to 69 this morning – up and down weather into the week-end, some rain today w/high wind but the most severe weather supposedly tomorrow, followed by a hard freeze – gotta cover up the 7 new lopes! Doors are open, food out on patio – no sign of GT yet. I’m seeing format changes on other sites now such as Uncover DC w/Tracy Beanz. Something in the basic configuration of, and access to, the internet as a whole is changing, IMO.

      1. i notice when i write a reply now i do not see paragraph spacing. I have to “make” the spacing, but in the reply box, it all appears as one paragraph. like the comment i copied from tcth. It looked like one long paragraph but when it posted, it had the proper spacing.

        1. Hmmm….I always have to “make” the spacing to end a paragraph and start a new one – just an extra CR (old fashioned terminology – “enter” now) at the end of the sentence. But when you go back up to edit that comment, even before posting it, the minute you hit a key the entire comment drops so that all you can see is the line you are typing on. You can’t tell w/o scrolling down if you need to add another blank line. Man, I HATE that!!! What a royal PITA!!!

    1. It is that “word parsing” writ large – change the language or the understanding of that language and you fool the people. And, of course, it’s not just dems! I seem to recall even Trump calling the US a “democracy.” You know I’ve always been a PITA about that! A Republic is a democratic form of governance….the only way to get a start on changing that is to correct everyone and anyone you hear using that term EVERY SINGLE TIME – inform them that they are mistaken and explain how. Re-educate people…clearly, it is up to US to do it since the schools aren’t!!!

And, as in your case, most women haven’t a clue how to fish and are just getting into it and learning to enjoy the competition. Men with all their past experience would wipe them out and they wouldn’t have a chance. And why, FFS?     According to the Swedish website Fria Tider, on March 26, an abandoned taxi belonging to a Middle Eastern taxi driver was found in the parking lot of the Hjälstaviken nature reserve near Stockholm. On April 1, the body of the missing taxi driver was found hanging in the nature reserve.

    This story is already disturbing enough, but police quickly discovered that it may have been a form of vigilantism — spearheaded by a 15-year-old girl, her boyfriend, and her brothers.

    The murdered taxi driver was alleged to have raped the then-14-year-old girl in February, and the girl and the four boys are now alleged to have killed the taxi driver in revenge.

    According to the indictment, the girl lured the taxi driver into the woods where he was then set upon by the boys, who had brought rope, and they strangled and hanged him.

    His unethical conduct compelled his boss, Justice Schoenfeld, to recuse himself from the case on July 1, 2002 after he became aware of Engoron’s affair with the law secretary of a plaintiff’s counsel while the trial was taking place.

    Judge Engoron has a history of engaging in unethical behavior, and his actions of illegally communicating with parties involved in a case without public disclosure has damaged the credibility of the New York Supreme Court.

    In 2002, counsel for the opposing party in the case recommended the NY Supreme Court conduct a criminal investigation into Arthur Engoron’s behavior.

    Arthur Engoron can’t be trusted to oversee a trial ethically. His previous behavior proves this.

Well, I’ve taken down the hanging planters and the feeders in prep for the high winds later – 30+MPH and gusts in some places potentially up to 50MPH – slight tornado possibility but it isn’t warm and humid so I doubt that. At this point, I’m glad the leaves have already come off of the cottonwood tree – that is the one tree I worry about coming down on my house since it’s in the latter stages of dying – it would level the west end of my house where I spend most of my time. I’ll leave the spinner until the wind starts picking up since it’s close at hand and easy to get to.

      2. I think part of whether they go to pending or not is in the settings – I think M has set hers to let them post automatically since so many people are having issues. I expect the default setting on sites is not to post them and to put them in pending, which I think is a good thing under normal circumstances.

    1. Do you have to sign in to access the link to his e-mail? Does he even have that e-mail link posted any more? I haven’t been there for so long, with all the changes, IDK how things work there now.
