Genius Cooking Hacks

Reader’s Digest had an article on genius cooking hacks—some I never heard of.  I thought I’d share!

Use an empty water bottle to separate egg whites and yolks

Crack an egg into a shallow bowl, then hold the mouth of the bottle near the yolk and gently squeeze. When you release the squeeze, the yolk will be sucked out, and you can deposit it into another bowl.

Cut corn with a Bundt pan

To remove corn from the cob quickly, stand the cob upright in the center of a Bundt pan. Holding the top of the cob steady, stroke a chef’s knife downward along the sides to remove kernels. Scrape the cob with the back of the knife to release juices. Kernels and juice collect in the Bundt pan—meaning one less mess for you to clean up.

Skip the pasta rinse

Rinsing noodles washes away flavor and natural starch, which helps yummy sauce stick. It’s why some recipes suggest saving pasta water to use in sauce. Instead, skip the wash and spread drained pasta on a pan to cool.

Don’t cry over a broken cake…

Instead, make a trifle by layering salvaged cake pieces with fresh whipped cream and fruit in a pretty glass bowl, advises Tamar Adler, chef and author of An Everlasting Meal: Cooking with Economy and Grace.

Keep counters clean with a baking sheet

Place all ingredients on an empty baking sheet prior to prepping them. (This will help you catch spills and avoid wasting time hunting for an item as you cook.)

Turn in the chopping knife: Instead, roll over herbs like parsley and cilantro with a pizza wheel for quick and safe slicing. A pizza wheel also effortlessly chops foods like pancakes and pasta for small children

Use a countertop bowl for easy garbage

As you cook, toss scraps, eggshells, and other garbage into a large bowl. This will contain messes and save time if a trash can isn’t readily accessible. Line the bowl with a plastic bag to make cleanup even easier.

For easier hard-boiled eggs, salt is your BFF

Want the shells of hard-boiled eggs to come off in big chunks instead of a million tiny pieces? Add a teaspoon of salt to the cooking water before putting in the eggs.

Clean a blender sans sponge

Fill it one-third full with warm water and a few drops of dishwashing liquid, recommends Woman’s Day. Run it for ten seconds. Rinse and dry.

Whip up gourmet bread crumbs in a pinch

Got extra burger or hot dog buns? Tear into pieces and freeze in a zipper-top bag. Ten to 20 pulses in a food processor will transform them into ready-to-use bread crumbs—no thawing necessary.

Juice a lemon with a microwave

Zap a lemon for ten seconds to break down cells and make the juice flow faster, suggests Laurent Tourondel, chef and partner at Arlington Club in New York City. This is good to remember when trying to squeeze out as much juice as possible for a vinaigrette.

For better pie crusts, use a cheese grater

A cheese grater makes quick work of piecrusts and biscuits. Instead of cutting the butter into the flour, simply grate a stick of frozen butter, and then toss the shreds with flour until a crumbly mixture forms, says Beth Moncel, creator of budgetbytes.com.

Flavor sauces and stews with leftover wine

Freeze leftover wine in ice cube trays (eight cubes = one cup) to add flavor to sauces and stews.  White and sparkling work best in creamy or clear and brothy soups (think chowder and simple vegetable), while red wine goes well with tomato or beef-based varieties (think chili). Add a few generous splashes per portion.

Flip natural varieties of peanut butter upside down

This position allows the pool of oil near the lid to move through the rest of the jar and make the peanut butter creamier (and to skip messy stirring). Just make sure the cap is screwed on tight to avoid a greasy pantry shelf.

Use your porch to refrigerate

If your fridge is full because you’re hosting a party and the temperature is 40°F or below, place hardy perishables (like fruits and vegetables) in a cooler outside near the back door. Doing so will free up a lot of extra shelf space while still keeping food cold.

Leftover Doritos? Think outside the chip bag

Smash a handful of chips, stuff into a clean pepper mill, and grind away onto everything from mac and cheese to broccoli.

Make friends with your kitchen scissors

Use them to chop cooked or tender raw vegetables (especially greens) right in the bowl or pan.

Halve cherry tomatoes fast

Save time on your next salad: Find two similarly sized storage container lids. Place cherry tomatoes on top of one, then firmly hold the other lid on top of the tomatoes. Use a very sharp knife to slice through the entire bunch at once.

Apple cutters slice potatoes

You’ll have perfectly sized pieces to bake as wedges.

Soften ice cream hard as a brick

Heat a sharp knife under warm water, then use it to make one-inch-deep cuts in a grid formation, spacing the lines about an inch apart. This increases your ice cream’s exposed surface area, speeding up the thawing process (similar to the beef trick). Run a scooper under warm water, and easily serve up each section.

Defrost meat last minute

Thank high school science for this neat trick: Remember, metal conducts heat. Place meat in a plastic bag, then put it on top of an upside-down aluminum pot. Fill another pot with room-temperature water, and set it on the meat. In five to ten minutes, your meat will be defrosted.

Cut away the mold

Before you toss suspect-looking leftovers, know this: firm foods are more likely to be salvageable than soft foods. Mold generally can’t penetrate deep into hard cheeses like Asiago and cheddar, so it’s OK to cut off about an inch. The same goes for firm produce like bell peppers and carrots. However, chuck moldy-looking foods with high moisture content—yogurt, soft cheeses, cooked leftovers, and bread. Porous foods are likely to be contaminated beneath the surface.

Chop strawberries with an egg slicer

Use an egg slicer to quickly chop strawberries for fruit salads and desserts. Or cut avocados for sandwiches and uniform mozzarella slices for salads and pizza.

Twist open a mason jar for easy fried eggs

For perfectly round fried eggs (handy for breakfast sandwiches), heat a pan and spritz Mason jar rings with cooking spray. Place the rings on the pan, and slowly drop one cracked egg into each of the rings. Cook for about 5 minutes for a medium yolk. Use tongs to remove the Mason jar rings, and serve.

Whip up French toast in your microwave

Rub a pat of butter on the bottom of a mug; fill it to the top with chopped bread. In a separate cup, mix one egg, three tablespoons of milk, and a sprinkle of cinnamon. Pour the mixture into the mug, and microwave for one minute.

  1. Morning All
chilly and dark outside. I can’t tell if anything has started to eat the pumpkin we got and put out. sometimes it takes the animals a few days to find it. I was amazed that so many different animals like pumpkin. we wash it, remove the stem and leave it on its side (so it doesn’t fill with water if it rains)
they love the guts and seeds and then will eventually split it in half and eat all of it.

    1. Morning, Pat! I learned some tricks with this one, especially the pizza wheel slicer since I have to cut everything up small now – that will be much quicker than using a knife and fork!!! Still dark here – 66 when I got up an hour ago, now up to 67. Got some hotter days coming, may even reach low 90’s for a day or so. Typical before heading into fall. Haven’t seen GT now for several days – put the food out and opened the door – if it’s a no-show today, then I’m done trying.

        those cantaloupes should ripen quickly!!
we looked at our little garden yesterday–the pepper plants are loaded with flowers again–??
the tomatoes are winding down for sure.
but my marigolds and geraniums? buds galore–
        weird

        1. Personally, I doubt it will get that hot, especially up here in the north. But, yeah, mid-to-high 80’s and sun will ripen them up good! The one I’ve got in the paper bag is starting to ripen – I can smell it now but it’s still not quite ready. At least, it wasn’t yesterday – we’ll see today.

              1. It truly is frustrating – even something as silly as mashed potatoes – I have to mix in some honey BBQ sauce. Almost anything based on maple or with a lot of brown sugar, I can eat, like yams and baked beans, which I load up with dark BS; I can still eat my regular spaghetti so I grabbed 2 jars of sauce this time and 2 lbs of hamburger. Ham is good, Cheerios, Brown Sugar Cream of Wheat – stuff like that. Peach yogurt tastes good again so I grabbed some of them. Crossing my fingers at this point that the lope tastes the same still….I gobbled down mine from last year but later, I grabbed one at the store – NO flavor at all – I gave it away.

Donald Trump suing ex-MI6 spy Christopher Steele at High Court

The former US president is bringing a data protection claim against Orbis Business Intelligence and its founder Christopher Steele, who previously ran the Secret Intelligence Service’s Russia desk.

According to a court order published on Thursday, a two-day hearing in Mr Trump’s legal action is set to start on October 16, which is thought to be the first hearing in the claim.

No other details of the case have been made available, but Mr Trump is not expected to attend.

Mr Steele was the author of the so-called Steele dossier, which included allegations that Mr Trump had been “compromised” by the Russian security service, the FSB.

3 Disney workers, school athletic director among 219 arrested in Florida human trafficking sting

Three Disney employees, a school athletic director and a father who left his 1-year-old home alone to have sex were among 219 people arrested in a major human trafficking bust in Florida, authorities said Thursday.

The seven-day undercover operation earlier this month led to 44 felonies and 242 misdemeanor charges against the dozens of suspects – 35 of whom are suspected of being in the country illegally, Polk County Sheriff Grady Judd said during a news conference.

Freddy Escalona, 30, and Maria Guzman 36, were charged most severely with human trafficking due to “Operation Traffic Stop 2” that started Sept. 19.

At least 21 possible human trafficking victims were identified out of the 119 alleged prostitutes who were taken into custody, the sheriff’s office said.

  6. not at all unexpected. they are cutting meals for seniors, library and day care programs, and inmate rehabilitation, so they can spend $300 PER NIGHT for a hotel for illegals.

    FTA
Ahead of the 2024 elections, voters throughout the country need to know that Democrat-run New York City is now taking money away from senior citizen meal programs, day care, and inmate rehabilitation to squander it on $300 hotel rooms for migrants. As reported by Bloomberg News in June, the (projected) cost of housing migrants is $4.3 billion between April 2022 and July 2024. From the article:

To manage those expenses, Adams says the city is planning to trim services such as library hours, meals for senior citizens, re-entry programming for Rikers Island prisoners, and free, full-day care for three-year-olds.

Here is the program NYC is cutting in favor of migrants:

If you are 60 years of age or older and have difficulty preparing meals, you may be able to receive nutritionally balanced home-delivered meals….

    1. I haven’t seen anything new about that yet. OK – finally got the following pics to load! I had put GT’s food out on the patio, with the door open, but when I stepped out to snap these pics, there (s)he was, curled up next to the planter, as usual. Refuses to come onto the patio now. So be it – I just put the food outside and closed the door. We’ll see how that works out this winter, if (s)he hasn’t disappeared by then.

            1. It’s just so frustrating because the pics never come out as intensely as IRL – I suppose a super-duper fancy camera would rectify that but I’ll just make do with what I’ve got. It’s not really something I would want to do on a full-time basis. But Michael and I were talking yesterday about some rides he’s taken recently on his m/c. One of these days, we’re going to get together, with our cameras, and go for a ride. Another thing we have in common….

The order of U.S. Presidential succession is outlined in the Constitution of the United States, and further refined in the Presidential Succession Act of 1947. The Act outlines both the order of succession and the requirement for one to qualify to be either the president or acting president of the US. To be eligible, one must be a natural-born citizen of the US, 35 years or older, and must have lived within the US for the last 14 years. The first in line for succession is the vice president followed by the House of Representatives’ Speaker, then the President Pro Tempore of the US Senate, and finally the Cabinet officers in the order of the department’s creation.

  11. “Republicans Squabble Through Messy 2nd Debate in California”
By Susan Crabtree & Carl M. Cannon, September 28, 2023

EXCERPT: “SIMI VALLEY, Calif. — Ron DeSantis needed a big night to revive his stalled presidential campaign and come within shouting distance of former President Donald Trump. It was a heavy lift, and probably too much to ask.

Florida’s governor certainly had his moments during the second Republican debate of the 2024 presidential season, sounding more poised and natural than he has been on the campaign trail or in the first debate last month. But DeSantis and the other six hopefuls were compromised by the format, fussy debate moderators, and their own propensity to bicker and interrupt one another.

Although the setting was the Ronald Reagan Presidential Library & Museum, the “11th commandment” popularized by Reagan (“Thou shalt not speak ill of any fellow Republican”) was in short supply here Wednesday night. Part of the problem was the palpable desperation on the part of a field that hasn’t dented Trump’s huge lead in the polls, either nationally or in the early primary states.

This intense desire to break out of the pack – to emerge as the clear alternative to Trump – led to frequent cross-talk that made it difficult for the television audience to hear, and to constant interrupting and pointed insults by the seven candidates, some of which were directed at the man who wasn’t here…..”

    1. “Donald Trump is missing in action,” DeSantis said. “He should be on this stage tonight.” The most colorful criticism came from former New Jersey Gov. Chris Christie, whose campaign is predicated on bashing Trump. In a premeditated stunt, Christie turned to the camera and said, “Donald, I know you’re watching, you can’t help yourself. You’re not here tonight, not because of polls, and not because of your indictments. You’re not here tonight because you’re afraid of being on the stage and defending your record. You’re ducking these things … You keep doing that, and no one up here is going to call you Donald Trump anymore. We’re going to call you Donald Duck.”

Actually, Trump at that moment was working a crowd in Michigan where he went to troll President Biden, who broke with historical precedent to take a stint on the picket line with striking United Auto Workers. Trump’s aim was wooing blue-collar voters in the swing state of Michigan while blaming the Democrats’ fixation on green energy for the autoworkers’ woes. Attempt to drive a wedge between union workers and environmental activists, Trump accused Democrats of leading a “hit job” on Detroit.”

“But if Haley’s antipathy for Ramaswamy seems visceral, the fight she picked with Sen. Tim Scott was discordant. The two South Carolinians had been longtime allies – as governor, she appointed Scott to the U.S. Senate – and when Perino pointedly asked Scott why he’d make a better president than Haley, Scott refused to engage. Instead, he simply made his own case, but not at the expense of Haley or anyone else.

When Haley got her turn at the microphone, she did not return the favor, attacking Scott on the dubious grounds that the federal budget had increased while he’s been in Washington. Later, when Scott did punch back, Haley smiled and said, “Bring it, Tim!”

  14. “Republican Group Running Anti-Trump Ads Finds Little Is Working”

EXCERPT: “A well-funded group of anti-Trump conservatives has sent its donors a remarkably candid memo that reveals how resilient former President Donald J. Trump has been against millions of dollars of negative ads the group deployed against him in two early-voting states. The political action committee, called Win It Back, has close ties to the influential fiscally conservative group Club for Growth. It has already spent more than $4 million trying to lower Mr. Trump’s support among Republican voters in Iowa and nearly $2 million more trying to damage him in South Carolina.

But in the memo — dated Thursday and obtained by The New York Times — the head of Win It Back PAC, David McIntosh, acknowledges to donors that after extensive testing of more than 40 anti-Trump television ads, “all attempts to undermine his conservative credentials on specific issues were ineffective.”

The memo will provide little reassurance to the rest of the field of Mr. Trump’s Republican rivals that there is any elusive message out there that can work to deflate his support. — The New York Times
(You need an account to read it: https://www.nytimes.com/2023/09/28/us/politics/anti-trump-ads-memo.html)

Our Take: “I wonder what this effort cost? They admit to $6M in this piece, so the real number must be embarrassing. Imagine — just imagine — if the GOP actually listened to Republican voters, aligned around our chosen candidate, and used party resources to fight for a free and fair election in 2024. Instead, they are spending millions of dollars to try and convince Trump supporters to jump ship.

This is why Republicans lose. The establishment controls the power, but America First controls the hearts and minds of the people. This conflict is resulting in wasted resources — donor resources. They’ve taken those donor dollars, formed them into an effigy of Trump, and set them on fire.

Worse, the elitists are destroying the (little) remaining brand equity of the GOP nationally. Good. Take back the party locally, and listen to the people. America First or Communism. That’s the choice in 2024.” — Ashe in America

Most likely, altho, to be 100% fair, it’s possible some may have tried…I wonder if she hadn’t actually died already when they announced she had been put under receivership…or whatever they call that. I was looking for the correct term and found this – it provides additional background on what may happen now. This is from May:

“By her side since she’s been back has been a new figure with a familiar family connection: Nancy Corinne Prowda, the eldest daughter of former House Speaker Nancy Pelosi. Pelosi’s support for her longtime friend quieted calls for Feinstein to resign in recent weeks, and now her daughter is helping Feinstein do her job with minimal disruption or embarrassment.

Pelosi’s support, while no doubt stemming from genuine affection for her fellow San Francisco political icon, is also wrapped up in the emerging race to succeed Feinstein in the Senate in next year’s elections. If her seat were to become vacant before then, it would be filled by Gov. Gavin Newsom, who has vowed to appoint a Black woman to the job, while Pelosi has endorsed a white man, Rep. Adam Schiff.”

  17. “Only Mexico surpasses Sweden as non-warring nation with most bombings — Sweden is the bombing capital of Europe, a leading criminologist has claimed”
    September 29, 2023
editor: REMIX NEWS author: THOMAS BROOKE

ENTIRE ARTICLE: “Sweden is second only to Mexico as the top country in the world not currently at war to experience the most bombings on its territory, according to a leading criminologist. Ardavan Khoshnood, a guest lecturer at Malmö University and senior fellow at Lund University, warned that the Scandinavian country has become the bombing capital of Europe.

“Sweden stands out completely,” he told the Svenska Dagbladet newspaper. “When my colleagues in Stockholm looked at this, they saw that Mexico is the only country in the world not at war that has more explosions than Sweden,” he added. Sweden has been gripped by a surge in criminal gang warfare in multiple cities across the country, and authorities are facing an uphill battle to restore law and order. It is a battle they are currently losing comprehensively, with 130 bombings recorded in the country so far this year, just three shy of the previous record year.

“With three months left in the year, the number of explosions is already at the same level as the record year 2019, when 133 detonations took place around Sweden. Comparable countries in our vicinity do not exist,” Khoshnood said. He warned that those responsible for the explosions are becoming more sophisticated in their approach. “We have moved toward more powerful explosive charges. Initially, it was about throwing hand grenades, now we see that they have moved on to explosives and more advanced detonations,” the leading criminologist explained.

The situation in Sweden has deteriorated drastically in this month alone, with 11 fatal shootings reported and 11 detonated explosions across the country. The latest bombing occurred on Thursday at a residential apartment in Uppsala, about an hour’s drive north of Stockholm. A 25-year-old woman with no gang affiliation died in the blast. Police believe the attack was targeting one of the victim’s neighbors who is understood to be an associate of 37-year-old Rawa Majid. Nicknamed the Kurdish Fox, Majid is engrossed in a power struggle for control of the notorious Foxtrot criminal gang operating in the country.

The practice of gang members using detonated explosions is a relatively recent phenomenon in Sweden and was virtually non-existent before the turn of the century. However, the rise of gang warfare in the country, coupled undeniably with large waves of mass immigration, saw reports of bombings sharply increase in the 2010s, leading the Crime Prevention Council to start recording statistics on the explosions in 2018.

Since that time, the number of explosions annually in the country has fluctuated between 79 and 133, according to the Svenska Dagbladet newspaper. The latest wave of violence to shake the country resulted in Prime Minister Ulf Kristersson addressing the nation on Thursday evening during which he blamed “political naivety” and “unsuccessful integration” as the main reasons for the ongoing crisis.

He lamented the rise in “gang crime and child soldiers” on Swedish streets and announced emergency talks with the head of the national police, Anders Thornberg, and Supreme Commander of the Swedish Armed Forces Micael Bydén on Friday morning to discuss how the military could step in to assist the overpowered police force.

“Now, more and more children and completely innocent people are affected by the gross violence. I cannot emphasize enough how serious the situation is. Sweden has never seen anything like this before. No other country in Europe has seen anything like this,” the Swedish prime minister told the nation.”

  18. flouting the rules…AZ dems employed a foreign national’s firm in election violating FEC rules
    FTA
A Democratic congressman and major Democratic campaign committee together paid a firm run by a foreign national more than $700,000 for campaign work, a blatant violation of federal election law, according to a watchdog complaint.

Both Rep. Ruben Gallego (D-AZ) and the Democratic Senatorial Campaign Committee have paid for the services of La Machine, an Arizona-based firm run by Antonio Valdovinos, who regularly touts his status as a foreign national living in the United States thanks to the Deferred Action for Childhood Arrivals (DACA) program. But despite laws in place forbidding foreign nationals from working on U.S. political campaigns or even contributing money to them, Valdovinos has done both, according to a complaint from the Foundation for Accountability and Civic Trust (FACT).

“Foreign nationals are barred from contributing in any substantive way, both financially or strategically, and given the facts here this is precisely what appears to have happened — repeatedly,” said Kendra Arnold, the watchdog group’s executive director. “The monetary political donations made by Mr. Valdovinos would be egregious violations in and of themselves, and the fact he literally created a political consulting firm with a significant client list and billings is truly beyond the pale.”

The complaint to the Federal Election Commission (FEC), obtained exclusively by The Daily Wire, lays out massive payments to Valdovinos’ firm, as well as several political donations from Valdovinos to federal candidates.

  19. OK, I have reached the state of Nirvana! Chowing down on THE best cantaloupe ever!!! O.M.G. – it is sooooo good! I told you this happens often overnight – one had come loose and was splitting on one end – overly ripe but it still tastes scrumptious! Another one had come loose but isn’t quite ripe yet so it’s in the paper bag now and I took the other one to Lois and Oran.

    BioClandestine!!
    Why is anyone honoring Feinstein?

She was one of the most corrupt politicians in America. She employed a Chinese spy for 20+ years. She served as Senator for 31 years, and what did she accomplish?

Thank her for her service? She served no one but herself and her donors.

Her net worth is $220 million. That she stole. From you. Via insider trading and money laundering. All the while she allowed California, and her District of San Francisco, to turn into a drug-infested 2SLGBTQIA+ homeless zombie apocalypse.

When we talk about “establishment politicians”, she’s at the top of the damn list. She’s been a Senator for 31 years, and under her watch, America has turned into a shithole. Not only did she let it happen, but her Left-wing policies made it a possibility. She played a significant role in destroying California and this nation with open border policies and woke insanity.

So spare me with all the “Rest in Peace”. She was one of the main reasons we are in the position we are in today. She destroyed America and I wish her no blessings in whatever afterlife she faces.

And before anyone says this is partisan, I feel the same way about McCain, and any other Deep State traitorous rat who bites the dust.

Some of y’all don’t hate establishment politicians enough, and it shows.
