
Today’s offering is a comfort food dish for those who do not want to make time consuming perogies—Pierogi Casserole!

Ingredients
1 large onion, diced (about 1 1/2 cup)
3 tablespoon butter
1 1/2 teaspoon kosher salt, divided
9 lasagna noodles
1 1/2 cup Small Curd 4% Cottage Cheese
3 cup prepared mashed potatoes
1 egg
1 teaspoon ground black pepper
1 teaspoon onion powder
1 1/2 cup grated cheddar cheese, divided
fresh parsley for garnish
Instructions
Preheat oven to 350°F. Coat a 9×13- inch baking dish with nonstick spray. Set aside.
Heat butter in a skillet over medium heat. Add the diced onions into the melted butter and season with 1/2 teaspoon kosher salt. Cook onions until they are soft and caramelized, stirring frequently. Remove from the heat. Set aside.
Bring a large pot of water to a boil and cook the lasagna noodles according to package directions. Drain.
While the noodles are cooking combine the cottage cheese, mashed potatoes, egg, pepper, onion powder, 1 cup of grated cheese, remaining 1 teaspoon kosher salt, and HALF of the onions. Stir to combine.
Place 3 noodles into the bottom of the prepared dish. Top with half of the cottage cheese mixture and spread to cover the noodles. Lay 3 more noodles on top of the filling and top that with the remaining filling mixture. Lay the last 3 noodles on top, sprinkle with the reserved onions and remaining 1/2 cup of cheese.



Cover pan with foil and bake for 30 minutes. Remove the foil and broil for 3 minutes.
Allow the casserole to cool for 15-20 minutes. Sprinkle with parsley and serve.
Notes
Store airtight for up to 3 days.
You can use leftover mashed potatoes or store bought prepared mashed potatoes.
You can add bacon, chicken or sausage if you prefer.

I prefer to make the perogies, but my daughter who loves perogies prefers to make this–much easier and less time consuming.
when I make the perogies, I will make about a hundred or so and freeze them so we have them for a few months (plus i give some to family). I don’t mind the fuss, she does, so she found this recipe.

I’ve never had either. Mama used to make mashed potato patties/cakes with leftover mashed potatoes, egg and a bit of flour, salt and pepper. Fry ’em up in a skillet greased with butter. I tend to cut the skillet frying and make them with a bit of oil in the mixture, bake them in the oven on a cookie sheet sprayed with non-stick stuff.

Recently, I made a chopped potato casserole with onions, eggs, cheese, chopped ham, green onions and parsley. I have individual slices in my freezer for breakfast, lunch and dinner.

Sometimes I add chopped broccoli to the potato casserole. Bacon crumbles would also be good…on top with a bit of sour cream….

Morning, Pat! Much cooler (69) and overcast this morning. I put water out for GT and add ice cubes thru the day to keep it cool. He was here first thing today and, for the first time, came up to eat with me kneeling in the doorway. I’ve never had perogies – we didn’t eat a lot of pasta when I was growing up – only in tuna casserole or spaghetti. Meat and potatoes, with at least one green veggie – that was our staple – and salads in the summer.

I’m genuinely glad for the guy’s faith but will not be sharing his story. To fail to recognize DJT as even 1 great president if not THE great President, leaves Anthony in the realm of stellar pop musician but failed philosopher. He doesn’t seem to recognize the spiritual war that we’re engaged in or that it’s not hyperbole to see a viable analogy between Trump and King Cyrus of Persia. His songs are lost on the victims of [DS] violence such as former residents or the dead of Lahaina or the Jan 6ers. This is not the time for celebrating the naive when that could be exploited for advantage by our enemies.
