What Shall We Make Today?

Today’s offering is a comfort food dish for those who do not want to make time consuming perogies—Pierogi Casserole!

Ingredients

1 large onion, diced (about 1 1/2 cup)

3 tablespoon butter

1 1/2 teaspoon kosher salt, divided

9 lasagna noodles

1 1/2 cup Small Curd 4% Cottage Cheese

3 cup prepared mashed potatoes

1 egg

1 teaspoon ground black pepper

1 teaspoon onion powder

1 1/2 cup grated cheddar cheese, divided

fresh parsley for garnish

Instructions

Preheat oven to 350°F. Coat a 9×13- inch baking dish with nonstick spray. Set aside.

Heat butter in a skillet over medium heat. Add the diced onions into the melted butter and season with 1/2 teaspoon kosher salt. Cook onions until they are soft and caramelized, stirring frequently. Remove from the heat. Set aside.

Bring a large pot of water to a boil and cook the lasagna noodles according to package directions. Drain.

While the noodles are cooking combine the cottage cheese, mashed potatoes, egg, pepper, onion powder, 1 cup of grated cheese, remaining 1 teaspoon kosher salt, and HALF of the onions. Stir to combine.

Place 3 noodles into the bottom of the prepared dish. Top with half of the cottage cheese mixture and spread to cover the noodles. Lay 3 more noodles on top of the filling and top that with the remaining filling mixture. Lay the last 3 noodles on top, sprinkle with the reserved onions and remaining 1/2 cup of cheese.

Cover pan with foil and bake for 30 minutes. Remove the foil and broil for 3 minutes.

Allow the casserole to cool for 15-20 minutes. Sprinkle with parsley and serve.

Notes

Store airtight for up to 3 days.

You can use leftover mashed potatoes or store bought prepared mashed potatoes.

You can add bacon, chicken or sausage if you prefer.

    1. Morning GA!
I prefer to make the perogies, but my daughter who loves perogies prefers to make this–much easier and less time consuming.
when I make the perogies, I will make about a hundred or so and freeze them so we have them for a few months (plus i give some to family). I don’t mind the fuss, she does, so she found this recipe.

      1. I’ve never had either. Mama used to make mashed potato patties/cakes with leftover mashed potatoes, egg and a bit of flour, salt and pepper. Fry ’em up in a skillet greased with butter. I tend to cut the skillet frying and make them with a bit of oil in the mixture, bake them in the oven on a cookie sheet sprayed with non-stick stuff.

      2. Recently, I made a chopped potato casserole with onions, eggs, cheese, chopped ham, green onions and parsley. I have individual slices in my freezer for breakfast, lunch and dinner.

          1. Sometimes I add chopped broccoli to the potato casserole. Bacon crumbles would also be good…on top with a bit of sour cream….

    1. Morning, Pat! Much cooler (69) and overcast this morning. I put water out for GT and add ice cubes thru the day to keep it cool. He was here first thing today and, for the first time, came up to eat with me kneeling in the doorway. I’ve never had perogies – we didn’t eat a lot of pasta when I was growing up – only in tuna casserole or spaghetti. Meat and potatoes, with at least one green veggie – that was our staple – and salads in the summer.

    1. Make it even better – put some peaches on it! LOL – I’m eating 2-3 every day and still have about 30 left, even after giving Lois a dozen! And I’ve discovered that the potato peeler works perfectly!

  2. There were thousands at Oliver Anthony’s concert in NC – Griff Jenkins @ Fox interviewed him – this is an excerpt. Griff: “…he brought his 3 dogs to the show and has over 27M hits on his song. He read scripture for 5 minutes at the beginning of the show, then the songs followed that message….”

Griff: “You’re not Democrat or Republican, are you?” “No, I’m not…I don’t know who I’d say was the last ‘good’ President we’ve had is….I don’t think we’ve had one in my generation, I was born in ’92. At this point, I’d say people don’t need to rely on politicians to save…like, we need to rely on our local communities: our churches, our farmers, um…yeah, our Lord, but our local communities and our local infrastructure that is going to save our communities – not the Federal government.”

          1. Considering his uber-strong religious beliefs, perhaps Trump’s early playboy/construction mogul/casino-owning days turns him off. I almost get whiffs of a “sovereign citizen” bent as well.

      1. Good Afternoon ☀️
I’m genuinely glad for the guy’s faith but will not be sharing his story. To fail to recognize DJT as even 1 great president if not THE great President, leaves Anthony in the realm of stellar pop musician but failed philosopher. He doesn’t seem to recognize the spiritual war that we’re engaged in or that it’s not hyperbole to see a viable analogy between Trump and King Cyrus of Persia. His songs are lost on the victims of [DS] violence such as former residents or the dead of Lahaina or the Jan 6ers. This is not the time for celebrating the naive when that could be exploited for advantage by our enemies.

  3. Very interesting perspective, but long – still, worth taking a few minutes, IMO! I don’t agree with some of his solutions, you can be sure of that! Not allow women to vote? Oh, that’s going to far and would never fly!!!

EXCERPT: “Women did this to themselves. Yes, yes, I know. Not all women™️. But enough of them – probably well more than a mere simple majority now – are outright radically liberal, and many more sufficiently bent to the left that they seek not equality but superiority over men by way of political power. Even most putatively “conservative” women still “want it all”. Well, fine then. They got the vote, the influence, the ability to have careers (slaving away and making profits for a man somewhere, heh), the “right” to murder their unborn children in utero, the ability to have as much sex with anybody they want, as often as they want. A truly fulfilling set of goals.

They got essentially everything they claimed they wanted, and they are fookin’ miserable for it. Congrats, now 25%+ of you are on prescription antidepressants or psych meds, alone at 40 something, and will die unhappy and childless amongst boxed wine and cats, with a faded ruth bader ginsburg sticker on your car and an as yet unwatched queue of disney wokecast movies, featuring strong, independent Mary Sue’s in them. Small wonder, that state of affairs.

Modern women are also their own worst enemies. They undercut and backstab each other constantly with particular viciousness and relish (while telling us men we are misogynistic pigs at the root of all their problems) and still heavily support stupidly destructive policies (like transfaggotry) that directly screw up their ability to benefit from their previous (perceived) gains from feminism by allowing – many fully supporting – brain damaged transvestites who lack even the commitment to undergo a proper genital mutilation, to displace them and beat them at their own game. And I’m supposed to help them?

I’ll defend women of my family (mother, sister, nieces) as they are generally sane, or still young enough children not to be steeped in leftist garbage thought. I pray that it may remain so. But for the rest of society’s women, I owe you nothing. Police yourselves and get your minds right collectively, before you expect men to be concerned with coming to your rescue. Otherwise, it is wasted effort on our part to even try, as you will stab us in the gut (again) the moment whatever your immediate crisis is has been remediated, by going right back to that which got you into the mess, as a dog returns to it’s vomit. Experience hath shewn, and all that……”
    ————–
Perhaps humanity is just a failed experiment, and should be allowed to pass into history. Unless something happens that moves us back to a baseline of normal existence, with both men and women embracing their respective natural roles and areas of expertise – and no, we are not the same, so dispense with that fiction, or expect to be dismissed as an idiot straight away – to build a functional society again, then extinction is certainly a possibility, and maybe even a deserved outcome of the stubborn insistence on attempting to remake humanity into something it isn’t, never was, and never will be. The Soviets tried this sort of social engineering writ large, and failed miserably at it. We have done much the same (in the collective west) with arguably even worse results. Denial of reality will eventually bite it’s adherents in the ass, and hard. We are now at precisely that point where the the consequences of denying reality are being dealt.”

  4. “9 Great Spots Around The House For You To Take A Nap – A Guide for Cats”
    FAMILY · Aug 19, 2023 · BabylonBee.com

“Choosing the best spot in the house for a nap can be a tough decision, especially if you’re a cat. Here are nine excellent choices for a feline looking to bed down for the afternoon:

    1. In front of TV screen during movie’s most important scene – a football game’s biggest play is also acceptable.

    2. On top of your human – Unless human starts to pet you, then run away.

    3. Right on top of keyboard while human is typing – Itt is socomfortable herre fpr some reeason.

    4. Wherever the dog wanted to nap – it just feels sweeter.

    5. On the Bible – preferably on Sunday before church.

    6. In the middle of the hall where humans are rudely trying to walk – they can be so insensitive.

    7. On the only set of car keys – a perfect place to settle in for a few hours.

    8. On the magical vibrating box the human calls a “printer” – it’s like a massage while you nap.

    9. In an Amazon box – Just make sure it isn’t marked “Return”, you might wind up in Abu Dhabi.

Go forth with this handy guide and get to cat-napping!”

  5. “Californians Hoping Hurricane Will Wash All Poop Off Sidewalks”
    U.S. · Aug 19, 2023 · BabylonBee.com

“CALIFORNIA — Citizens of California are holding out hope that flooding from Hurricane Hilary will wash off the massive amounts of poop clinging to the state’s sidewalks.

“Fingers crossed,” said Sacramento resident Kevin Ross. “Bring on the floods, baby!”

While concerned about safety, many locals believe a good, strong hurricane could be the best thing that ever happened to California. “We need a reset button,” said sanitation worker Stephen Childers. “All day we scrub poop off the sidewalk, but you can’t scrub fast enough. I don’t want anyone to get hurt by the storm, I’m not cheering for an Old Testament-level flood – but maybe half of that would be good.”

With reports coming in that the hurricane has begun to weaken, many Californians have begun work constructing dams to funnel the rainwater towards San Francisco. “The Lord is giving us a chance, now it’s up to us to take it,” said Bay Area woman Jessica Long. “Can you imagine being able to walk down the street and smell – well – nothing? Time to keep digging.”

At publishing time, cities across California were asking residents to dump all available soap onto the streets in preparation.”
