What Shall We Bake Today?

Today’s offering is called Wacky Cake! The instructions are a little different from what I’m used to. See what you think!

Wacky Cake

Ingredients

1 ½ cups all-purpose flour

¾ cup granulated sugar

⅓ cup unsweetened cocoa

1 teaspoon baking soda

½ teaspoon kosher salt

⅓ cup oil

1 tablespoon distilled white vinegar

2 teaspoons vanilla extract

1 cup water

Wacky Cake Frosting

¼ cup chopped toasted pecans

Directions

Preheat oven to 350°F. Sift flour, sugar, cocoa, baking soda, and salt into an ungreased 8- x 8-inch baking pan; spread mixture evenly in pan. Make 1 large well and 2 small wells in mixture in pan. Carefully pour oil into the large well, vinegar into 1 small well, and vanilla into remaining small well. Pour 1 cup water evenly over entire mixture in pan. Stir everything together using a fork until combined.

Bake in preheated oven until a wooden pick inserted in center comes out clean, 25 to 30 minutes. Transfer to a wire rack.

Pour Wacky Cake Frosting over warm cake. Sprinkle with chopped pecans. Cool completely, about 2 hours.

Wacky Cake Frosting

Ingredients

⅓ cup butter

¼ cup whole milk

3 tablespoons unsweetened cocoa

2 ¾ cups powdered sugar, sifted

1 teaspoon vanilla extract

Directions

Cook butter, milk, and cocoa in a small saucepan over medium-low, stirring often, until mixture comes to a simmer. Remove from heat; gradually whisk in powdered sugar and vanilla until completely smooth. Pour on your favorite cake.

        1. Our typical weather – we may hit 80 again today but, after that, we’ve got a couple of days with highs only in the 60’s coming up, then back up into the high 80’s into next week – I’m betting we’ll hit 90 before it starts down again.

              1. yeah he’s waiting for the tall grass to dry out a little because the tractor will sink in there–I may have to grab a shovel and try to retrieve it myself and bring it out to the path

Well that’s something I’ve never heard of, the vinegar….something I don’t quite “get:” adding sugar, yet using unsweetened cocoa powder….I guess they say kosher salt because regular salt is iodized? Hmm…what IS iodize anyway….??? And personally, I think these “mandates” need to stop!!! The government should provide the info to the people and let them decide for themselves! But, then, far too many people today are unable to do even that!!!

      Filly, you’ll often see vinegar in a baking recipe where baking soda is used…the acid activates it.
      If there is buttermilk in the recipe, the acidity of buttermilk serves the same function…

                I’m a diabetic and shouldn’t eat the good stuff either–but I compromise…i eat what i want in limited amounts and then walk about 30-35 miles a week. it helps a lot.

I have that problem sometimes – I WANT to believe people – I still think people are good overall, with good intentions for the most part, and I inevitably get caught somewhere along the line. So I’ve swung the opposite direction now, suspicious of everything – never right down the middle for me! Sometimes, this is exhausting!

    1. I understand why they are doing this but they are wrong – he SHOULD be expelled for all the lies he told and fraud he committed. So now we devolve even more so “we” can be as bad as “they” are? Oh, hell, no! Do you not see where this is headed???? Same with ballot harvesting – if it is wrong for one party, it is equally wrong for the other!!!!! Same with lawfare! If we don’t live up to our principles, then what happens to those principles over time? THEY DISAPPEAR!!!! AND I DON’T CARE IF IT’S LEGAL OR NOT!!!!

        piglosi is a lair, turtle is a liar, most are. to expel one and not the other is not fair. so if they expel schiff–who was on tv constantly lying to the american people about seeing PROOF…then we go after all the others. to equate what santos did with what schiff did is disingenuous.
        ballot harvesting is LEGAL.
        and if it is legal in a state, then BOTH sides must be able to do it.
        if you want to outlaw it, fine, but while it is LEGAL, it must be used as a tool.

I don’t care what the law says – I will continue to live according to MY principles that I know in my heart are true and moral. Since when do we allow the GOVERNMENT to decide for each of us what is moral and true???

            if your elderly aunt (made up example) was in a nursing home and wanted you to take her ballot to the election center (or drop box) because she trusted you…would you do it?
            it’s legal. you do it.
            immoral and illegal would be to take that ballot out of the envelope and insert one with a candidate YOU choose instead of her.

            1. Yes, I would because that is HER choice to make, not mine. I would, however, try to dissuade her first. That is completely different from the ballot harvesting being discussed here and you know that.

We’re talking about 2 different types of “ballot harvesting.” I see nothing wrong, for instance, for a family to choose one family member to drop off the votes for the entire family – that is a one-on-one with a known entity. What I’m talking about is what Scott is talking about – just going out and “harvesting” strangers’ ballots. That is true ballot harvesting, IMO, not a joint decision between family members or known friends/entities. No-one should give their ballot to ANYONE they don’t know well. By all means – go door-to-door or whatever method you choose to encourage people to vote – absolutely!

    Two hotels in Phoenix Az are quarantined because the illegal aliens staying there have brought in chicken pox. 180 persons in one hotel.It was on the local news yesterday, but you never heard about it..

    Chicken pox is caused by the herpes zoster virus. It is responsible for the rare ARNS disease (Acute Retinal Necrosis) which attacks the retina and can cause blindness. Herpes Zoster also causes Shingles disease. Let’s just call it the illegal Alien Disease Invasion coming to a city or town near you and your family.

    The Hungarian government will veto any further European Union aid to Ukraine or sanctions on Russia, according to the country’s foreign minister, citing Ukrainian “belligerence” towards Budapest.

  8. Oh, wow! I looked outside and it looked like it had gotten foggy. When I stepped outside, I could immediately smell smoke – that odor when something plastic is burning. There is definitely a fire somewhere – I can’t believe it is coming from the forest fires in Canada, with that plastic smell…..so much smoke that I can’t see east to the county road or south to the highway. It is much closer than Canada!

      1. IKR? I’m out in front, out in back, looking in all directions, but it’s impossible to tell where it is coming from – it is spread everywhere! Even more hazy now….we’ve got an ethanol plant just east of town, between us and Osmond….it’s not the trash transfer station over on the county road – I would see flames if that were the case. So it’s not right here in town, I do know that. Curiouser and curiouser!

    An illegal alien is accused of raping a teenage girl in Prattville, Alabama, after having been released into the United States at the southern border by President Joe Biden’s Department of Homeland Security (DHS).

    Grevi Geovani Rivera Zavala, a 29-year-old illegal alien from Honduras, was arrested and charged with the first-degree rape of a teenage girl late last week.

    According to WFSA 12 News, Zavala allegedly raped the girl in the women’s restroom of a restaurant. Police allege that the illegal alien forced the girl into a bathroom stall, held her down, and raped her in a completely random attack.

    “This rape never should have happened,” Autauga County District Attorney CJ Robinson told local media of the incident, noting that Zavala was an illegal alien who first arrived at the southern border in November 2021 using a fake name.

    Despite having a criminal record in Honduras, Zavala was apprehended, processed, and quickly released into the U.S. interior by Biden’s DHS — ending up in Prattville, Alabama, to work in the local construction industry, illegally.

    “We’re not interested in negotiating with the feds,” Robinson said of keeping Zavala in local custody. “They can take custody of his body when [Department of Corrections] is done with him. We aren’t going to negotiate for a lesser charge so the feds can deport him.”

    Zavala remains in the Autauga County Jail without bail.

    The Biden administration has welcomed millions of border crossers and illegal aliens to the U.S. under its expansive Catch and Release network.

    According to Sen. Ron Johnson (R-WI), since late January 2021, Biden has welcomed close to five million border crossers and illegal aliens into the U.S. interior — a foreign population that exceeds the populations of 28 states — which includes those who successfully crossed the border and those released directly into American communities like Zavala.

Alrighty then….Jerry came over to look at the mower – I was hoping it was something he could just fix here, as was he, but he said there is another bushing inside the gears that will probably also have to be replaced. It may be a day or two before he can pick it up – it won’t steer at all now so this will be fun getting it up the ramp onto his trailer! And I got sidetracked, as usual, pulling weeds – west bed is now cleared (I did the west lily/lily tree bed yesterday), and the sprinkling of weeds in the front garden beds are now cleared. I also took before pics of my flowers and the cantaloupe beds for comparison later. I also took a pic of the Lily of the Valley – I have GOT to thin them out – they are so packed in there, you can hardly see the blooms! Oh, they smell so nice and yes, that I can smell. The odor of plastic burning is now gone and it is still hazy but not as bad as earlier.

    I looked out earlier and saw 3 Blue Jays, a RH WP (still hitting the feeder now), a blackbird and 4 Orioles. Before that, the 3 BJ’s and a bunny scratching in the garden bed under the feeders.
