What Shall We Bake Today?

Today’s offering is Pecan Browned Butter Coffee Cake! This cake takes a little bit of prep, but it is oh-so-delicious!!

Ingredients

¾ cup butter

2 cup finely chopped pecans, toasted*

2 cup packed brown sugar

2 teaspoon all-purpose flour

3 cup all-purpose flour

1 ½ teaspoon baking powder

1 ½ teaspoon baking soda

¾ teaspoon salt

3 eggs

1 teaspoon vanilla

1 ½ cup plain yogurt

Coffee Icing

5 teaspoon milk

1 teaspoon instant coffee crystals

1 cup powdered sugar

Directions

In a medium saucepan, melt butter over medium heat. Reduce heat to medium-low. Continue to cook, without stirring, for 5 to 6 minutes or until butter becomes brown and fragrant. Remove from heat; cool slightly. Transfer to a bowl. Cover and chill for 2 hours or freeze for 30 minutes or until firm.

Preheat oven to 325 degrees F. Grease and flour a 10-inch fluted tube pan; set aside.

For filling, in a bowl, combine 3/4 cup of the pecans, 1/2 cup of the brown sugar, and the 2 teaspoons flour. Add 3 tablespoons of the browned butter and work in with fingers or a fork until mixture is crumbly; set aside. In another bowl, stir together the 3 cups flour, the baking powder, baking soda, and salt; set aside.

In a mixing bowl, beat remaining browned butter with an electric mixer on medium to high speed for 30 seconds. Add remaining 1- 1/2 cups brown sugar; beat until combined, scraping bowl occasionally. Add eggs one at a time, beating after each addition until combined. Stir in vanilla. Alternately add flour mixture and yogurt to butter mixture, beating on low speed after each addition just until combined. Stir in the remaining 1-1/4 cups pecans. Spoon half of the batter into prepared pan, spreading evenly. Sprinkle evenly with filling. Spoon remaining batter over filling, spreading to cover.

Bake about 50 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack. Drizzle with Coffee Icing.

Coffee Icing:

In a bowl, stir together 4 teaspoons milk and instant coffee crystals until dissolved. Stir in powdered sugar and enough additional milk (1 to 2 teaspoons) to make a drizzling consistency.

*Toast the pecans before you finely chop them.

    1. I had everything to make it but I chopped the pecans before discovering that you’re supposed to toast them first. So i will probably make more of those delicious pecan cookies you brought the recipe for next week and then try this cake after that.

          do you ever (or have you ever) made candy that needs to be dipped in chocolate?
          I made some peanut rolled eggs yesterday to take to my mom’s this weekend,
          it’s a vanilla cream center which you dip in melted chocolate and then roll in chopped peanuts.
          I was having difficulties with the chocolate dipping part. I tried using a toothpick–the centers were too heavy. I switched to a fork but the centers wouldn’t release off the fork and got messed up.
          we tried the candy and it’s delicious and it’d be a shame to not make them again. i just have to figure out a better dipping system.

    1. Morning, Pat! Got my laundry started this morning. We were at 34 when I got up, now 35, and clear skies – looking like spring has arrived!!! It shouldn’t get that cold again and I’ll be putting my potted flowers out sometime this week, I expect. I have to decide which pots I’m putting out this year, then make a list of what flowers I still need. I’ve cut waaaay back in the last couple of years. And I’ve got to get going on clearing the old stuff from the flower beds – Lily of the Valley are coming up as are the lilies, of course. I also noticed this morning that a couple of the honeysuckle vines are showing signs of life. Blackbirds and starlings everywhere this year! I also expect no assistance from GS, in spite of his promises, but I figured that would happen. SMH – guess I should count myself lucky that he fixed my mirror for me!

        1. They are better – I met him and C at WM to give him the $60 for the mirror – and no, he hasn’t been back since the day they brought the kids and he did the mirror. I don’t expect he will unless I push him, which I will do when I’m ready to move the tree limbs to the dump.

    There is the obvious obstacle of Joe Biden being in the way, though either fate might intervene or he might get caught walking around the Rose Garden nude. Again. But the other barrier to entry is the fact that Michelle doesn’t seem to want to do this. She’s not a particularly driven woman. She’s lazy and frivolous, and she enjoys floating around the Mediterranean off Nice with adoring zillionaires on huge, environmentally unsound yachts mocking the saps who buy into the climate change hoax. Being president is a lot of work, and she doesn’t seem like somebody who really cares a lot about working. She just wants stuff, and right now she’s got stuff. Nor does Barack Obama particularly seem interested in getting back into politics. He was the one president who never seemed to like the job, and he gave the impression that he felt being president was a painful duty, proving that there’s something to like about everyone.

    The Solar Energy Industries Association, for example, admitted in a Friday statement that the United States “cannot produce enough solar panels and cells to meet demand.” The American Council on Renewable Energy similarly said Chinese tariffs “would have a devastating impact on U.S. solar deployment.” Solar energy contractor George Hershman, meanwhile, said tariffs would prompt him to lay off “thousands of people,” given the hundreds of millions of dollars in projects that his company, SOLV Energy, has fulfilled using Chinese goods. “I don’t know why anyone would support this,” Hershman told the Washington Post.

    But for many congressional Democrats and Republicans, the reasoning for renewed tariffs is clear. China has for years provided illegal subsidies to its solar energy companies, allowing them to undercut U.S. competitors. When the United States imposed tariffs on Chinese solar companies to combat those illegal practices, China got around the tariffs by shipping its products through a handful of nations in Southeast Asia, including Cambodia, Malaysia, and Vietnam. Tariffs on Chinese goods sold out of those countries, then, allow U.S. solar manufacturers to compete with “cheap, unfairly subsidized imports,” an argument that both Missouri Republican congressman Jason Smith and Ohio Democratic senator Sherrod Brown have made in recent days.

    For the Biden administration, however, the desire to transition to green energy has outweighed any appetite to combat China. Last summer, as Biden’s Commerce Department investigated whether Chinese solar companies dodged U.S. tariffs by routing their operations through Southeast Asia, Biden issued an executive order delaying tariffs on Chinese solar products sold in the region for two years. Biden held firm on that delay even as his Commerce Department determined months later that China’s solar industry indeed did dodge U.S. tariffs through its work in Southeast Asia. Ensuring a steady supply of solar panels, the White House said in a June 2022 fact sheet, was simply too important to risk.

    “We need to boost short-term solar panel supply to support construction projects in the United States right now,” read the fact sheet announcing the delay. “Grid operators around the country are relying on planned solar projects to come online to ensure there is sufficient power to meet demand.”

    The Biden administration, which did not return a request for comment, hasn’t changed its assessment as the solar tariff bill works its way through Congress. Biden said last week he would veto the bill, which the White House said would “create deep uncertainty for jobs and investments in the solar supply chain.” Still, should the tariffs receive staunch bipartisan support, they could still become law if Congress includes them in a bill that Biden does support, a possibility about which a House Democratic aide warned in an April interview with the Post.

That’s why I issued this advisory to pull back the curtain on a struggle that too many people are experiencing.”

    The declaration is intended to raise awareness around loneliness but won’t unlock federal funding or programming devoted to combatting the issue.

    To date, according to the portal, 40 people have been pulled out from under the rubble of the underground headquarters, but most of those who died under the rubble have not yet been found.

    It is not known, the portal continues, exactly how many Western citizens and how many Ukrainians were killed as a result of the “Dagger” strike. “Most of them, ” according to Pronews, “are British and Poles, but there were also Americans and representatives of private companies that support communication and data transmission. In the coming days, it will be seen to what extent this will affect the conduct of Ukrainian and Western operations and attempts to stop the final phase of the Russian offensive on Bakhmut.

    “This, ” says Pronews, “is the first such large-scale strike against the military personnel of NATO countries, and it is not known how the Western capitals will react to this, although in the event of a reaction, it would be like recognizing the active participation of military personnel in the war against Russia.”

    According to the official representative of the Russian Ministry of Defense, Lieutenant-General Igor Konashenkov, the bases of attack drones have been destroyed, the transfer of reserves and rail transportation of foreign weapons have been disrupted, and production facilities for the repair of military equipment and the production of ammunition have been disabled.

    Kahlua Sour Cream Coffee Cake

    Ingredients

    2 3/4 cups all-purpose flour, divided
    1 1/4 cups granulated sugar
    1 1/2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon sea salt
    2 1/2 cups sour cream (could use low fat)
    11 tablespoons unsalted butter, divided
    2 large eggs
    2 teaspoons vanilla extract
    1 cup chopped pecan pieces
    1/2 cup brown sugar
    1 tablespoon ground cinnamon
    1/4 cup Kahlua coffee liquor
    2/3 cup powdered sugar

    Instructions
    Preheat the oven to 350 degrees F. In a large mixing bowl, mix 2 1/2 cups flour, granulated sugar, baking powder, baking soda, and salt. Mix in the sour cream, eggs and vanilla. Then melt 8 tablespoons (1 stick) of butter and mix into the batter. Set aside.
    In a medium bowl, mix the chopped pecans, brown sugar, and cinnamon together. Spread 1/3 of the batter in the bottom of a 9×13-inch baking dish. Then sprinkle 1/3 of the pecan mixture over the batter. Repeat with another 1/3 of the batter followed by the nut mixture. Then spread the last of the batter over the top.
    To the remaining 1/3 of the pecan mixture, add 1/4 cup flour. Cut the last 3 tablespoons of butter into cubes and mix into the nut mixture by hand, creating small chunky pebbles of dough. Sprinkle the crumble topping over the surface of the cake.
    Bake for 40-45 minutes until a toothpick inserted into the center of the cake comes out clean.
    Using a toothpick or wooden skewer, poke holes over the surface of the cake for the glaze. Whisk the Kahlua and powdered sugar together in a small bowl, then drizzle over the surface while the cake is still warm. Allow the cake to cool and the glaze to harden. Cut and serve.

    French Almond Paste Cake
    Makes one 9-inch cake

    Adapted from David Lebovitz’s Almond Cake

    Ingredients
    1 cup coconut palm sugar OR granulated white sugar (if you like a sweeter cake, increase this to 1 1/4 cups)
    14oz almond paste, cut into chunks
    1 teaspoon kosher salt
    1 cup all purpose flour, divided in half
    1 cup unsalted butter, cut into small pieces
    6 large eggs
    1 teaspoon almond extract
    1 teaspoon vanilla extract
    1 1/2 teaspoons baking powder

    1/2 cup sliced almonds, for garnish
    2 tablespoons raw sugar, for garnish

    Directions
    Preheat oven to 325 degrees. Grease a springform pan and line the bottom with a circle of parchment paper.

    In a food processor, combine sugar, almond paste, salt, and half the flour. Process until ingredients are combined and the texture of breadcrumbs or clumpy sand. Add the butter and process 2-3 minutes until creamy, then add the six eggs and both extracts, and puree for another 2-3 minutes until completely smooth (the batter will be loose). Add the remaining flour and baking powder, and pulse a few times, just until evenly combined.

    Pour into the prepared baking pan, and cover with sliced almonds and raw sugar. Bake 45 – 60 minutes, or until the cake has set in the center and risen, darkened to a golden brown, and developed a few cracks on top. You should be able to press gently on the cake and have it pop back up. Let cool in the tin for about 10 minutes, then use a knife to loosen the edges and remove the sides.

    Let cool completely before transferring to a serving plate.

    Add a bit of whipped cream and a cup of good hot coffee!!!

    FRENCH PEACH CAKE

    Ingredients

    • 2 tablespoons turbinado sugar
    • butter for greasing pan
    • 1/4 cup (1/2 stick) unsalted butter
    • 1 3/4 cups sugar
    • 1/3 cup water
    • 1/2 teaspoon ground nutmeg
    • 2 large peaches, pitted and cut into eights
    • 1 cup all purpose flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 3 large egg yolks
    • 2 large eggs
    • 2 tablespoons Amaretto liquor
    • 2 teaspoons vanilla
    • 1/2 cup (1 stick) unsalted butter, melted
    Instructions
    • Preheat oven to 350°F.
    • Butter 9-inch-diameter cake pan with 2-inch-high sides. Butter pan and coat with turbinado sugar; tap out excess.
    • Melt 1/4 cup butter in heavy large skillet over medium-high heat. Stir in 3/4 cup sugar, water and nutmeg and bring to boil.
    • Add peaches and cook until peaches are just tender, turning frequently, about 8 minutes.
    • Remove remove peaches, using slotted spoon, and arrange decoratively in bottom of pan.
    • Continue boiling liquid in skillet until thick and syrupy, about 4 minutes. Pour over peaches in pan.
    • Sift flour, baking powder and salt into small bowl.
    • Whisk remaining 1 cup sugar, egg yolks, eggs, amaretto and vanilla in large bowl to blend. Gently stir in dry ingredients. Fold in 1/2 cup melted butter.
    • Pour batter over peaches in pan.
    • Bake until toothpick inserted into center of cake comes out clean, about 45 minutes.
    • Cool cake in pan 5 minutes. Run small sharp knife around side of pan to loosen cake.
    • Turn cake out onto platter.
    • Serve warm or at room temperature with whipped topping or ice cream.

      1. Amaretto is an almond flavor. Turbinado is sugar that isn’t super-refined… it’s more brown. It has a flavor between brown and white sugar. Feel free to substitute what you have on hand. If I don’t have brown sugar, I use white and maybe a tsp of molasses or cane syrup.

    1. It is hard to reconcile the two sets of videos – the peaceful respectful people walking through the capitol after being admitted by the police – and the violent videos of people storming the capitol with tear gas, etc.

      Several of the violent videos that I saw Jan 2021, looked staged. And so did this one that Tucker showed during the interview with the Capitol Police Captain:

      Watch the MAGA guy on the upper left immediately go and flamboyantly attack the guy in the corner without provocation. That really looks staged. As we have seen in Charlottesville and elsewhere, the Feds are poor actors. All that staged violence makes me think another reason Schumer and McConnell don’t want it shown – the feds and hired (Antifa?) actors will be exposed.

      A friend responded to my dilemma with this reply:

      Meanwhile, I’ve read the FBI are still arresting people who attended the Jan 6 event – and possibly confiscating this private footage, photos, phones, computers, cameras, etc.

      Please, Dear Lord, intervene and prevent the truth from being concealed and destroyed.

We know about it because it isn’t information that could take down the Deep State cabal.

    Because we found out about Operation Paperclip and it wasn’t something the Deep State cabal COULDN’T have us know, they decided to preoccupy us with it. The Hunters isn’t the only show or movie that involves the subject matter. Again, once the cat was out of the bag and they realized it couldn’t take them down, they decided to preoccupy us with it.

    An extremely small number of Americans know about Unit 731. Why is that? Is it because it is more damaging to the Deep State cabal for the world to know about it? I would argue, “yes”, as it reveals more of the evil the cabal has unleashed and are unleashing on the world. I put it in the category of, “they CAN’T allow us to know about it.”

    What is Unit 731?

    In 1931, the Japanese invaded and occupied Manchuria and later China in 1937. Unit 731 is a group of Japanese doctors and scientists that used the Manchurians and Chinese as human Guina pigs. In fact, they also did experiments on Russians and Koreans as well.

    I’m going to get graphic because it is necessary. The Japanese scientists infected these occupied prisoners with diseases to test bioweapons they could hopefully use on their enemies later on. They removed people’s organs while they were alive, with no anesthesia, to avoid the effects of decomposition or drugs on the organs. This was the type of cruelty in their experiments. These Japanese doctors and scientists cut off limbs and reattached them to the other side, to learn more about war injuries and how to best treat their own soldiers. They crushed and froze limbs to mimic real war scenarios. All in the name of science.

    I would argue the US did bring them over from Japan, and these Japanese scientists and doctors have been vital in creating mind control systems as well as biological weapons. At a minimum, their research was confiscated and furthered by the US that the Nazis brought over. Why would they bring over the Nazis but not the Japanese? It makes no sense.

Is it engagement in pedophilia by the elites? That would be my best guess. It is the one thing the world would not tolerate, even though it may seem like the world is completely void of any morals.

        With all the pedophile elites that have been arrested, convicted or suicided, the number of elites that have gone unpunished or even unrecognized is many times more, and these people are much higher up on the elite’s totem pole. The elite cabal is okay with throwing Fauci and China under the COVID bus if it means protecting the vast majority of the cabal. They understand that, occasionally, some have to be sacrificed for the others.

        The cabal didn’t want us to find out about their pedophilic ways, but when we did, they had to act. The same could be said about COVID. It wasn’t their plan for us to find out, but when we did, they had to pivot.

        I remember hearing about Epstein Island and the horrific abuses that occurred there by reading the Q drops early on. People thought I was crazy to say the elites that run the world are satanic and abuse children. Then Epstein was arrested. I said the cabal would kill him, and he died in jail. Then I said Epstein’s handler was likely Ghislaine Maxwell, and she was arrested. At this point, the people who don’t believe just don’t want to believe.

        Pedophiles and bioweapons. This is where we should likely keep our focus, these are the acts of evil that have the potential to bring down the Deep State cabal for good. Not election fraud, not corruption, not money laundering, not transgender narratives, not J6, not spy balloons, but pedophiles and bioweapons. Yes, exposing all these things will wake more people up, but none of these subjects grab the public and will force them to stand up and demand change as pedophilia and bioweapons could.

        The complete exposure of the pedophilia and bioweapons will cause everyone to unite together against the evil. Gays and straights, men and women, Blacks and Whites, Jews and Muslims, rich and poor, Americans and Iranians, conservatives and liberals … all will and must come together to extinguish the evil.

        The satanic cabal is the disease, and unity is the cure.”
