What Shall We Make Today?

Easter Candy!  Peanut butter eggs to be specific.

Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter (1 stick) melted

1/2 teaspoon vanilla extract

2 cups powdered sugar

1/8 teaspoon salt optional, add if your peanut butter isn’t already salty

For Dipping:

2 cups semi-sweet chocolate chips or melting wafers (12-ounce bag)

1 tablespoon shortening, coconut oil, or vegetable oil optional, to help chocolate chips melt thinner and make dipping easier

Instructions

In a medium-sized bowl, use an electric mixer to mix peanut butter, melted butter, vanilla extract, and salt (optional) until combined. Slowly add in powdered sugar and mix until incorporated.

The consistency should be a bit like a play-doh and shouldn’t be sticky. If it is sticky, add a bit more powdered sugar. If it’s dry and not holding together when pressed, add a bit more melted butter.        

Roll into balls, flatten, then shape into eggs. You can also use a rolling pin to roll the dough 1/2″ thick, then use an egg cookie cutter or round plastic cup or lid (that “squishes” and is about 2″ in diameter) to cut out oval shapes.

Freeze shaped eggs for 20-30 minutes.

Melt chocolate chips and shortening (optional) in the microwave at 50% power in 30-second increments, stirring in between each increment. If using melting wafers, follow instructions on package.

Dip the frozen eggs in melted chocolate chips or melting wafers. It’s easiest to place them on a fork and then use another fork to scoop chocolate on top.

Tap off the excess chocolate, then place on a piece of parchment paper. Before they fully harden, it can be helpful to carefully move them to prevent the chocolate from “pooling” on the parchment (which will help you get crisp-edged eggs!).

If you have extra chocolate, use a fork to drizzle it on top of the eggs. While the eggs are still wet, you can also add fun sprinkles.

Let harden, then enjoy! You can place these in the fridge or freezer to help them harden quicker.

Recipe Notes

Storage: Store homemade peanut butter eggs in an airtight container for up to 1 week. Depending on the chocolate you used and how well it hardens, you may want to store these in the fridge so that the chocolate doesn’t get tacky and melt so quickly in your hands.

Freezing: I actually prefer these frozen, as you can grab one when a craving hits! After the chocolate is hardened, place in an airtight container (you can place a piece of wax paper or parchment in between each layer to prevent from smearing).

How do you get your chocolate chips smooth for dipping? Chocolate chips are naturally designed to hold their shape, so whenever I melt chocolate chips, I always add a heaping tablespoon of Crisco shortening before melting to smooth it out.

If you want to make these peanut butter eggs without shortening, you can instead use melting wafers (naturally designed to melt better) or just add coconut oil or vegetable oil to the chocolate chips instead (add before microwaving).

    very cold here this morning…but no snow on the deck that i can see…so that’s always good!
    One year my sister in law (and her twin toddlers) made 2 batches of these peanut butter eggs and 2 batches of coconut eggs for Easter–we had tray after tray after tray…lol
    but they freeze wonderfully!

        1. He was already in NE when he called me. He had originally planned on flying back to VA last night but they decided he would stay here, get a job and be in position to co-sign a lease with his GF before making a trip to VA sometime in June to get all his stuff.

            1. Well, that’s Piper’s room/guest room – I don’t use it for storage except a couple of boxes of pics for handy access on the closet shelf. The REAL mess is my garage! Sheesh!

              1. That’s my garage! I have big storage cabinets that contain bins of Xmas decorations – far more than I would ever use, especially since I no longer decorate. Not to mention my a-Mom’s platinum-rimmed china dinner service and her silver-plated silverware in it’s original wooden case, and some crystal, and…..sigh….Gage’s GF has 3 kids, the 2 younger ones being girls. I think I’ll see if they want the 2 bikes I’ve got in the garage. One was HB’s and another is a small kids’ bike in the same colors – they match. Both need new tires but, other than that, they are in great shape. I was hoping Piper and I…..well, you see how that worked out!

    is temporarily closing its U.S. offices this week as it prepares to inform corporate employees about its layoffs as part of a broader company restructuring, The Wall Street Journal reported on Sunday.

    In an internal email last week to U.S. employees and some international staff, McDonald’s asked them to work from home from Monday through Wednesday so it can deliver staffing decisions virtually, the report said. It is unclear how many employees will be laid off.

    “During the week of April 3, we will communicate key decisions related to roles and staffing levels across the organization,” the Chicago-based company said in the message viewed by the Journal.

    McDonald’s also asked employees to cancel all in-person meetings with vendors and other outside parties at its headquarters, the report added.

    McDonald’s did not immediately respond to a Reuters request for comment.

    The fast-food chain said in January that it would review corporate staffing levels as part of an updated business strategy, which could lead to layoffs in some areas and expansion in others.

    McDonald’s is expected to begin announcing key decisions by Monday.

    If you experience emotional incontinence in my proximity, it’s likely to continue. Because I am done hearing about bad you’ve had it at the top of your lungs. If you’ve been discriminated against, write the EEOC, because the 7-11 clerk isn’t really in a position to do anything about it, and there is a line behind you.

    I’m not your primary care physician; I don’t want to hear about your health or lack thereof. I don’t need to know details of your complaints and ailments because I can’t do anything about it, and I don’t accept your insurance.

    I don’t care that you think you are a failure, that your parents ignored you, or that you don’t see others who share your sexual proclivities on television.

    If you are on television, a movie screen, or hold political office I definitely don’t want to hear about how pathetic you think your life is or see your tears. Once you are a member of the United States House of Representatives, you are no longer marginalized, oppressed or discriminated against… you are the oppressor.

    I’ll not be participating in the language of stupid either, my pronouns are “me” and “I” just like everyone else’s. If you can’t use the word “literally” correctly, I will use it incorrectly even more frequently than you do, just to mock you.

    Inclusive victim language isn’t something I’m going to be participating in either. I’m not going to be calling anyone a person of color, and things from the Orient are still going to be Oriental for me. So long as Asia contains Russia and Iran, I still see a general distinction between the Orient and the rest of Asia that may not be as specific as to be Korean or Vietnamese.

    I guess the above paragraph means I’m not going to be accepting the Race Card anymore either.

    What card will I accept? Why the American Success Card, of course! It has a higher interest rate for me because it dwells in possibilities! The Victim Card and the Race Card have low interest rates for me because they just dwell, and dwell, and dwell and are just so… narcissistic!

          1. I used to do the same when I was very young. I’d sneak out of the house – pull up the footstool to reach the door latch – and off I’d go, wandering the neighborhood in my bare feet and nightgown. Inevitably, I’d find a kitten somewhere. I used to dress them up in dolls clothes and put them in my doll buggy. And they stayed there, never ran away from me! I’ve been a cat-person for all my life, pretty much. Well, animals in general.

            1. i was scratched in the face by a cat while i was babysitting once. after the kids were in bed, I sat in the chair in the living room and heard a noise–when i turned, the cat was on the back of the chair and he scratched me–deep enough to bleed a little. my neighbor was horrified when she came home. I don’t know why it did that. I was petting it earlier.
              i do not like cats, but i do pet any that come to me…

  19. GS is off for the day – turns out, he had used his Dad’s truck to get to the airport in VA and didn’t leave the keys since, at that point, he was planning on flying back. He needed to go to the PO to get them in the mail; plus, he accidentally had his GF’s keys in his pocket, too, and her daughter has a doctor’s appointment this afternoon. I had him drop me off at the library to pick up some more books.

    I’m already lining up things I can use his help with, like leveling out my mailbox! LOL – and looking at stuff I can give them and get ’em out of my garage! Hmmm…wonder if she likes Xmas decorations???? Yeah, that’s the ticket!!! And the 2 matching bikes would be perfect for her girls, altho they are a bit young yet. The youngest is just being weaned from the bottle. And Gage loves, loves, loves kids!!!

    The marches, which took place across many Polish cities, were in response to a commercial TV report that claimed John Paul II had failed to act against pedophilia in the Roman Catholic Church when he was still an Archbishop in Kraków.

    During the marches, there were readings of great papal encyclicals and sermons he had made during his pilgrimages to the country. At the front of the march in Warsaw was the popemobile, a reconstruction of the vehicle used by the pope. Many of the participants recalled his pilgrimages and their own visits to Rome when he was still pontiff.

    One family, who came with four of their five children, said that they could not have missed the event and wanted to personally thank John Paul II for his teachings and for his gift of freedom.

    “YUTAN, Neb. (WOWT) – Nebraska National Guard Soldiers are about to head out on a one-year deployment to the U.S. European Command area of responsibility. According to the Nebraska National Guard, Gov. Jim Pillen and Nebraska National Guard Leaders gave remarks during a send-off ceremony Friday morning at the Atlas Readiness Center in Yutan.

    Thirteen Nebraska Army National Guard Soldiers of Headquarters and Headquarters Troop, 1-134th Calvary are expected to serve a yearlong deployment to the U.S. European Command area of responsibility and will be stationed at a training center in Germany.

    They’ll do company-level mentoring to Armed Forces Ukraine counterparts, focused on the planning and execution of operations in field and garrison environments.     “As the media capital of the world — and the venue for the arraignment of Donald Trump — we must change this outdated law to allow the public to witness trials,” argued state Senate Judiciary Committee Chairman Brad Hoylman-Sigal (D-Manhattan) at a Sunday press conference.

    Hoylman-Sigal is sponsoring the bill that would clear the way for the courtroom cameras. “With a first-of-its-kind trial on the horizon, there’s no time to waste in opening the doors of the courthouse to the media and the American public,” he said. The New York politician’s proposal was introduced as part of the state’s pending budget plan. It would take effect 90 days after becoming law. Trump’s trial isn’t expected to start for months and a verdict may even be delayed until after the 2024 election.

    The trial judge has ultimate say on whether or not to allow cameras in the courtroom, regardless of state law. However, legislation would conceivably bolster the chances they are allowed. As reported by CNN’s Kaitlan Collins, Trump’s legal team is arguing that the request for cameras in the courtroom should be denied “because it will create a circus-like atmosphere at the arraignment, raise unique security concerns, and is inconsistent with President Trump’s presumption of innocence,” per letter to Judge Juan Merchan.

    Merchan previously oversaw the criminal tax fraud trial against the Trump Organization that resulted in a $1.6 million fine after a conviction on 17 counts, including falsifying business records. Former Trump Organization Chief Financial Officer Allen Weisselberg was sentenced to five months in jail as part of a plea agreement with the District Attorney’s office in the case.”

Ministers are looking to force farmers to give herds additives to reduce gas from digestion in ‘compound feeds’, which contain seaweed and essential oils.

    The Government’s Net Zero Growth Plan, released this week, looked to address concerns from the High Court that existing plans to reach the climate goal before 2050 were not detailed enough. The plan said the bovine supplements could be introduced ‘at pace’ from 2025 – or as ‘soon as practically possible’ – in efforts to reduce emissions by 20 per cent by 2030, as Britain’s commitment to the Global Methane Pledge requires.

    Cows are a big contributor to climate change, with farm animals producing around 14 per cent of carbon emissions from human activity worldwide. The plans are expected to add around 33p a year to the cost of milk for the average consumer but ministers could also choose to subsidise the superfood feed. Dustin Benton, former government adviser on food strategy, told The Telegraph the suppressants could eventually be given to sheep as well as cows.

    ‘Most dairy cows are milked twice a day, and when they’re going to be milked they usually eat, so that’s a pretty good way of getting it into them.’ Mr Benton added that the suppressants were a good start but that further action would be needed to reduce the impact of livestock.

    A government source said that ‘significant’ progress had been made thanks to innovation in agricultural products and that there were ‘major benefits’ to the plans for farmers and the climate. The suppressants contain a number of additives, including seaweed, organic acids, probiotics and antimicrobials and essential oils, that reduce the amount of gas produced during digestion.

    It’s an urban myth that cows produce most of the methane by farting and it’s actually belching that is the real culprit. Livestock made up the majority of agriculture and other land-use emissions in 2021, which accounted for 11 per cent of the UK’s greenhouse gases. [DM]”
