What Shall We Bake Today?

Today is National Carrot Cake Day, so let’s make one of those.  I have tried many recipes—some use jars of carrot baby food, some used pineapple and coconut, but this is my favorite.  I’ve included the recipe for cream cheese frosting even though I personally despise it.  (I just use my regular frosting for this cake.)

Cake

1 1/2 cups granulated sugar

1 cup vegetable oil

3 eggs

2 cups Gold Medal™ All-Purpose Flour

2 teaspoons ground cinnamon

1 teaspoon baking soda

1 teaspoon vanilla

1/2 teaspoon salt

3 cups shredded carrots (5 medium)

1 cup coarsely chopped walnuts

Cream Cheese Frosting

1 package (8 oz) cream cheese, softened

1/4 cup butter or margarine, softened

2 to 3 teaspoons milk

1 teaspoon vanilla

4 cups powdered sugar

Nutmeg, if desired

Steps

Heat oven to 350°F. Grease bottom and sides of one 13×9-inch pan or two 8-inch or 9-inch round pans with shortening; lightly flour. In large bowl, beat granulated sugar, oil and eggs with electric mixer on low speed about 30 seconds or until blended. Add flour, cinnamon, baking soda, 1 teaspoon vanilla and the salt; beat on low speed 1 minute. Stir in carrots and nuts. Pour into pan(s).

Bake 13×9-inch pan 40 to 45 minutes, round pans 30 to 35 minutes, or until toothpick inserted in center comes out clean. Cool rectangle in pan on cooling rack. Cool rounds 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.

In medium bowl, beat cream cheese, butter, milk and vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable. Frost 13×9-inch cake or fill and frost round layers with frosting. Sprinkle nutmeg on frosted cake, if desired. Store in refrigerator.

    2. Anyone who has a problem with fitted sheets should work for just 1 day in a hotel laundry – that will fix it! I can fold a fitted sheet standing up, with no table or anything else around me, thanks to my job at the Ecolux Inn.

    who has had a very checkered past to begin with, was not just “doing his job” when he shot and killed Great Patriot Ashli Babbitt at point blank range. Despite trying to keep him anonymous, shielded, and protected, this MISFIT proudly showed up on NBC Fake Nightly News “bragging” about the killing. He was not a hero but a COWARD, who wanted to show how tough he was. ASHLI BABBITT WAS MURDERED!!!

    Nebraska Democratic State Sen. Megan Hunt said her amendment aims to ban people under 19 years old from attending a “religious indoctrination camp,” arguing that there is a “well-documented history” of indoctrination and sexual abuse against children by religious leaders and clergy people.

    Hunt defines “religious indoctrination camp” in her amendment as “a camp, vacation Bible study, retreat, lock-in, or convention held by a church, youth group or religious organization for the purpose of indoctrinating children with a specific set of religious beliefs.” The Democratic state lawmaker stated in her proposal that abusers within religious institutions use church youth activities to “gain unsupervised access” to children in order to commit sexual abuse.

    The text of her amendment mimics the underlying bill, LB 371, which would prohibit anyone under 19 from attending a drag performance and would prevent those under 21 from attending if alcohol is served. Hunt told Fox News Digital that while her amendment to the proposed bill “obviously won’t pass,” she will use it to make a point. “This is an amendment that I will use to make a point,” Hunt said. “This amendment obviously won’t pass, and I would withdraw it if it had the votes to pass. It’s a device to make a point, so there is no need to worry.”

    Like Hunt, the American Civil Liberties Union (ACLU) of Nebraska also criticized the Republicans’ push to ban minors from attending drag shows, saying the bill violates the First Amendment right to free speech. Jane Seu, the legal and policy counsel of ACLU of Nebraska, called the GOP bill an “unconstitutional censorship attempt” that is part of an alleged “coordinated national effort to push LGBTQ+ people out of public life.” Seu explained that drag shows have become part of LGBTQ+ culture and have become a way for the community to express and celebrate themselves.

    But Nebraska Republicans condemned Hunt’s proposal, calling the Democratic state senator a bigot. GOP State Sens. Julie Slama and Dave Murman told Fox News Digital that Hunt’s amendment is “alarming” and argued that it is an example of an attempt to “demonize Christian patriots” across the state. Earlier this month, nine Nebraska GOP state senators introduced the bill LB 371, which would make it a Class I misdemeanor to bring a minor to a drag performance. The bill would also fine businesses and organizations that host a drag show and allow people under 19 to attend.

    Businesses and organizations found violating the proposed bill would be fined $10,000, according to ABC affiliate Nebraska TV. The bill was introduced after conservative groups in the state became alarmed by drag shows welcoming children.”

      1. Julie Slama always used to be really good until she participated in a scam to oust Trump’s choice for NE governor! He endorsed Herbster (whom I intended to vote for) over Pillen (ole Pete’s choice) and then Slama lodged an accusation of sexual harassment against him after another woman made a similar claim. They were bogus claims and once Herbster was out, the claims were dropped, strangely!!! So she’s not pure as the driven snow either!!!!

          1. And it worked! I was sooooo pissed!!!! But neither of their campaigns were very responsive to me and my questions, TBH. Herbster’s was better than Pillen’s about that, but contact between us was better from Pillen. I spoke to him directly several times and he left yard signs for me to p/u at the library. Once Herbster was out, I switched to Pillen – no other choice, unfortunately.

  36. Interesting….a way to preserve fresh eggs – in some cases, for up to 2 years!!!! But you have to have farm-fresh eggs, not from the store, since the protective coating has been washed off.

    “HOW TO WATER GLASS EGGS AND PRESERVE THEM AT ROOM TEMPERATURE
    What you’ll need…

    8 oz pickling lime
    8 quarts filtered water
    Fresh unwashed eggs
    A container to store them in
    A scale
    A whisk

    We are going to use pickling lime for this, and it is known by several names (hydrated lime, slacked lime, calcium hydroxide). It can be a little confusing, but if it has one of those names, then you are good to go. They sell this same thing in those little tiny Mrs Wages pickling lime packets for super expensive. But I buy this in bulk from Azure Standard. You could probably even find it at your hardware store.

    You also need a container to store the eggs in. A plastic bucket, a pickling crock, a glass jar. I am using a food safe 5 gallon bucket with a gamma seal for mine.

    Now let’s talk about your eggs for a minute, this is really important! DO NOT DO THIS WITH STORE BOUGHT EGGS! Because they have been washed, the pores are completely exposed, so the lime will get sucked right into your eggs! We definitely don’t want that! Either they’ll go bad and rot, or just taste so nasty that you wouldn’t want to eat them! You want to use your current day’s fresh, clean, unwashed eggs. Ones that still have that natural protective coating all over them.”
