What Shall We Bake Today?

Food 2 Minutes

Every year, I try one new cookie at Christmas time.  This year’s selection is Triple Chocolate Turtle Cookies!

Triple Chocolate Turtle Cookies

Chocolate Cookies

1/2 cup unsalted butter at room temperature (1 stick)

2/3 cup granulated sugar

1/3 cup light brown sugar, packed

1 large egg

2 tablespoons milk

1 tablespoon molasses

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup cocoa powder

1/4 teaspoon salt

1/2 cup mini semi-sweet chocolate chips

1 cup pecans roughly chopped

Caramel Filling

14 soft caramel candies (like Kraft)

3 tablespoons heavy cream

Chocolate Drizzle

4 oz. semi-sweet chocolate chips or baking chocolate

1 teaspoon shortening

Instructions

In a large bowl, mix together flour, cocoa, and salt; set aside.

In a hand or stand mixer, beat butter until creamy, add sugars and beat until light and fluffy, about 2 minutes. Add egg, milk, molasses, and vanilla; mix until incorporated. Reduce speed to low and add flour mixture until just combined.

Wrap dough in plastic wrap and refrigerate for 2 hours. After 2 hours, remove dough. (Let sit for a few minutes if it’s too hard to work with.)

Preheat oven to 350F degrees. Line baking sheets with nonslip mats or parchment; set aside.

Mix together the mini chocolate chips and pecan pieces in a small bowl. Roll chilled dough into 1-inch balls, then roll in chocolate chips/pecans, pressing them firmly into the dough. Place 10 balls per baking sheet (it makes a total of 30 cookies) about 2 inches apart.

Using a 1/2 teaspoon measuring spoon, make a slight indentation in the center of each dough ball.

Bake for 10 minutes then let cool on the pan for 10 minutes before transferring to cooling rack. Once cookies are transferred to rack, gently re-press the indentations.

While cookies are cooling, prepare the caramel filling by microwaving caramels and cream together in a small bowl until smooth, stirring every 30 seconds until melted, about 1-2 minutes.

Fill each indentation with about 1/2 teaspoon of the caramel.

To make the Chocolate Drizzle, microwave chocolate in a small bowl on 50% power, stirring every 30 seconds until melted. Stir in shortening. Transfer chocolate to a Ziploc bag, snip off a small corner and drizzle over cookies.

NOTE: I haven’t made these yet. I was unable to find any caramels. but the search continues!

This is one of GA/FL’s recipes…Mama Smith’s Pecan Cookies…and I have tried these! YUM!

Mama Smith’s Pecan Refrigerator Cookies

Beat together:

1-1/2 cups butter

1 c. brown sugar

1 c. white sugar

2 eggs

Whisk together:

4 c. flour

1 tsp baking soda

1 tsp cream of tartar

1/2 tsp salt

Mix sugar/egg and flour mixtures together.

Add 2 c. chopped pecans.

Roll into logs, wrap with plastic wrap or waxed paper, refrigerate for a couple of hours or store in freezer until needed.

Slice and bake at 350 degrees until lightly browned. (mine took 7-10 minutes)

  3. Hmmmm….a little bit too much chocolate for me but the rest of it? Oh, my, yes! I’ve tried Mama Smith’s cookies in the distant past but IDR now whether they were better than other brands. Probably so.

    we’re back. we made it back up the driveway and were unloading my jeep when hubby casually mentioned that we are expecting a repeat of the same weather pattern this week…1-3 Thursday and 1-3 Friday…sheesh!

    Wednesday’s move by the Fish and Wildlife Service not only protects the 10 acres on which the plants are found in a 3-square-mile area, but also another 900 surrounding acres deemed as “critical habitat.”  

    The declaration was prompted by litigation initiated by the Center for Biological Diversity. Environmentalists aren’t done yet: They say Ioneer’s plan for protecting the plant won’t survive federal scrutiny.

  16. And the saga continues….LM was not present when I first got up but about an hour later, he showed up at the door. It was still too cold for me to go out and he left shortly thereafter. I went out a few minutes ago to replace the corn for the squirrels and, as soon as I opened the patio door, he appeared next to my neighbor’s garage and high-tailed it over here. He rubbed and rolled and purred at my feet while I put the cobs on the holder, then accompanied me back onto the patio.

    I had already prepared a small dish with the canned food so I waved it under his nose a couple of times, then put it just inside the door of the shelter on the right. The little shit stuck his head in just far enough to reach the food and gobbled it up. It’s a start – at least now he will associate the shelter with good things and, with my scent on the hoodie….crossing my fingers.

    Update: I went back outside and retrieved the dish of wet food – of course, part of it was stuck down after he licked up the rest so I scooped it out and put it on top of his dry food, then put that dish inside the shelter. He cheated again and just stuck his head in long enough to eat the wet food. Now I will move the dish of dry food further back in the shelter so he has to go inside to reach it. Cat psychology 101! Cats are more independent than dogs (probably why I like them so much) so more psychology is required. I’ll get him yet – mark my words! LOL

    He is now curled up in the chair in the sun again. Once the dry food is gone, when I fill it next time, I will put it at the back of the box – when he get’s hungry enough, he’ll go in. Jake has now learned to shut up when I pick up the spray bottle…..LOL.

      1. We’re getting there…..M said she bets he’ll be an inside cat by Xmas but that is NOT happening! Not until Jake is gone at least. There are a bunch of reasons, not the least of which is getting him gelded. And I have no idea whether he will use a cat box or not. I’ve got a dish tub that I’m going to put on the patio with litter in it to see if he will use it.

They (FBI) have been resistant and we certainly intend to pursue subpoena power.” Maria: “So, you have already then put in a request out there for documents from the FBI. Is that what you’re saying? What have you learned so far?” Turner: “Well, the FBI had, under the cover of saying that they were pursuing foreign maline influence, had really exploded into…..” never answering the question.     2. I sent out about 45. I have a “Christmas Card Book” where i keep all the addresses. there’s a space for each recipient response. closer to Christmas, I check off each card I received back and if I don’t get one back 2 years in a row, I remove them from my list. I haven’t done that yet this year, but I notice I get a lot of cards the week of Christmas. (Mine go out right after Thanksgiving…but I have ocd…LOL
