What Shall We Bake Today?

Since it will soon be time to harvest veggies from the garden, I thought I’d share my 2 favorite zucchini dessert recipes.  The first is zucchini bread—a moist, flavorful bread.

Zucchini Bread

3 eggs

2 cups sugar

1 cup oil

1 Tbsp vanilla

2 cups grated zucchini

2 cups flour

1 Tbsp cinnamon

1 tsp baking soda

1 tsp baking powder

Chopped nuts and/or raisins (optional: I use both)

Preheat oven to 350*.  Grease and flour 2 8-inch loaf pans.  Beat the eggs till frothy.  Then add the sugar, oil and vanilla.  Beat till thick and lemon colored.  Stir in the zucchini.  Mix all of the last ingredients (except the nuts or raisins) in a smaller bowl, then add to the egg mixture.  Mix well.  Stir in the nuts and raisins if desired.  Divide into the 2 loaf pans.  (I have also made this recipe using the mini loaf pans to share.)  Bake for one hour.  Enjoy!

Chocolate Zucchini Cake

2 cups flour

2 cups sugar

¾ cup cocoa

2 tsp baking soda

1 tsp baking powder

½ tsp salt

1 tsp cinnamon

4 eggs

1 ½ cups oil

3 cups grated zucchini

¾ cup chopped walnuts

Preheat oven to 350*.  Grease and flour a bundt or angel food pan.  In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon.  Add eggs and oil, and mix well.  Fold in the zucchini and nuts. Pour into the prepared pan.  Bake for 50-60 minutes.  Cool completely before frosting with your favorite frosting.  I like to dust with powdered sugar.  Enjoy!

    got back an hour or so ago, but we came home to a mess!
    when the cat’s away and all that…
    sigh, the raccoons (we’re guessing till we see the video evidence) destroyed 2 of the hummer feeders. we moved them much higher than normal, but they figured out how to get to them.
    they crapped all over the deck, knocked over my table and made a huge mess.
    and there was a dead bird by the front door…
    sigh…
    welcome home, huh?

    Lara Logan: You look around you and you know they don’t actually believe in citizenship. And now when people come across the border illegally, I have this confirmed from border patrol agents who are actually, physically doing this, they get given a Social Security number. They get assigned a Social Security number when they cross. I’m not sure how many of you are aware of that. And if you really want to know where the cheating starts, it’s long before you get to the polls. Think about it, it starts with the census. It starts with counting illegals in the census.

    The latest update from Tina Peters’ race for Secretary of State in Colorado is good news! Peters raised enough money to get a recount done in her race, where she lost by a wide margin, even though she was leading by a similarly large margin in all the polls. Peters believes the race was stolen from her by machine errors, whether intentional or otherwise. Now she has good evidence. El Paso County tested its election machines today and came up with a more than 53 percent error rate in the machine count. Peters is demanding a hand recount, so ballots will be examined by a real human being, not a machine.

  10. I am adding a short daily prayer to the board. I would invite each of you, if you wish, to also add one or maybe two of your own liking. I do not want to stifle anyone but please limit yourself to one or two religious postings. here’s one I found that I liked.
