What’s Cooking?

We’re in the kitchen today making one of my favorite side dish recipes–Vegetable Pizza. (We don’t make a hot meal for Easter; we have ham sandwiches and plenty of side dishes and this is a family staple.)

Vegetable Pizza

Preheat oven to 350*. Unroll 2 packages of Pillsbury crescent rolls and press the dough into a ungreased cookie sheet, patting the dough seams together. Bake for 10-12 minutes or until golden brown. Set aside to cool.

While the crust bakes, in a medium sized bowl, combine the following with a mixer:

8 oz softened cream cheese

1 package (dry) Hidden Valley Ranch Dressing mix

1 cup cottage cheese (small curd)

3/4 cup mayo

chopped scallions to taste (i use a dash of onion powder instead)

Mix well and refrigerate for at least an hour. Then spread on cooled crust.

In a separate bowl mix the following diced vegetables:

1 cup cauliflower

1/2 cup green pepper

1 cup broccoli

2-3 medium tomatoes

Spread the diced vegetables over the cream cheese mixture covered crust. Refrigerate. Enjoy!

EXCERPT: “Kentucky Governor Andy Beshear (D) vetoed a bill on Wednesday that would have prevented females from having to compete against biological males identifying as women from sixth grade up into college. The vetoed bill would have required athletes to compete in sports according to their gender. Beshear is not the only governor to recently veto bills intended to protect women’s sports from transgender competition. Utah Governor Spencer Cox (R) and Indiana Governor Eric Holcomb (R) also rejected similar bills.

    In the explanation for his veto, Beshear claimed the bill would harm transgender children. “Transgender children deserve public officials’ efforts to demonstrate that they are valued members of our communities through compassion, kindness and empathy, even if not understanding,” the governor said. Beshear also cited the Kentucky High School Athletic Association’s rules regarding transgender participation, which stipulate that transgender athletes must undergo hormone therapy after puberty to mitigate their physical advantages as men.

    However, as we’ve seen with UPenn transgender swimmer Lia Thomas, hormone therapy does not reduce men’s athletic advantage over women in sports.

    Lia Thomas took testosterone blockers for 2 1/2 years before joining the women’s swimming team. Despite hormone therapy and his record as a thoroughly mediocre competitor on the men’s side (462nd nationally), Thomas smashed multiple records on the women’s side and beat top-level female Olympic competitors.”

    Disney builds affordable housing

    The Walt Disney World Resort in Orlando, Florida, has set aside almost 80 acres of land to build affordable housing. The development is still in its early planning stages, Disney said Wednesday, and subject to approvals. The community would include around 1,300 units in “a variety of home choices” near the Disney World theme parks.

  3. EXCERPT: “The ringleader of the establishment Republicans, Sen. Mitch McConnell (R-KY), announced on Thursday a donation to Democrat ally Rep. Liz Cheney’s (R-WY) reelection campaign.

    Cheney, who is no longer recognized as a Republican by the Wyoming GOP, has received a campaign contribution from the Senate GOP leader, McConnell told Axios. When asked if he will hold a fundraiser or other campaign event with Cheney, McConnell redirected the conversation back to his lane of Senate business.

    McConnell and Cheney apparently believe the Wyoming member may lose her seat to Trump-endorsed Harriet Hageman, a strong threat to the establishment Republican order in Washington, DC. With Hageman catching momentum heading into the August 16 GOP primary, former President George Bush has also donated the legal maximum amount to Cheney. McConnell and Bush are joined in their support of Cheney by failed presidential candidate Mitt Romney (R-UT). In March, Romney delivered a speech at a closed fundraiser for the embattled Cheney.

    The Wyoming race has become a proxy war between the establishment and conservative Republicans. Hageman has earned the support of House Speaker Kevin McCarthy (R-CA). Party leaders typically rarely endorse against sitting members of Congress. But after Cheney deserted the Republican party by allying herself with Nancy Pelosi’s January 6 committee and reportedly “orchestrated unprecedented” Republican sabotage, McCarthy presumably believed Cheney must be ousted from her seat.”

  4. small school district in New Hampshire cuts the school board budget in HALF at regular board meeting. town finds out and screams how can they manage? but the man who proposed it had sound reasoning noting the bloated administration of school districts…

    He then cited sources showing that education expenditures don’t correlate with academic performance, making the case that “in a very real sense, it doesn’t matter what we choose to spend.” Readers were asked to step back and consider what level of funding would make sense on a per-student basis.

    To provide a baseline, he noted that the state gives charter schools less than $8,000 per student, and two nearby private schools charge less than $9,000 per student. Based on these numbers, he reasoned that $10,000 per student should be sufficient. With about 80 students enrolled, that makes for a budget of $800,000. By comparison, the original $1.7 million budget would have provided funding equivalent to $21,000 per student.

    “There are a lot of fundamental questions that never get serious consideration under the ransom-based model of school funding,” Underwood writes. “The point of putting them on a budget is to force them to find ways to use an entirely reasonable amount of money to accomplish, not what parents would like, but what all of us need.”

    Underwood’s proposal may sound reasonable or downright crazy, depending on your perspective. Suffice it to say, many of the people in attendance were convinced, and the motion passed 20 to 14.

    By Monday, the town was far from quiet.

    “The Croydon School Board got an earful Monday evening as about 75 people turned out to oppose what 20 town voters had approved days earlier,” Valley News reports. “School board members Jody Underwood, Aaron McKeon and Kevin Morris faced a withering onslaught for more than three hours as residents questioned how the school was expected to operate on less than half of its proposed budget.”

    “I’m ashamed and disgusted by this reckless budget that was proposed by your husband,” Angi Beaulieu, a former school board member, told Jody Underwood.

    In the wake of these events, a petition was created to have a new vote on the $1.7 million proposal, since the cut was done so suddenly and by so few people. The petition was successful and the new vote is scheduled for May 7. However, to even have the vote, at least half of the 565 registered voters need to show up, a high bar for local elections.
